3 cups fresh baby carrots
1/3 cup peach preserves
2 teaspoons butter

Steps:

  • Place the carrots in a shallow microwave-safe dish.
  • Cover and microwave on high for 10-12 minutes or until crisp-tender; drain.
  • Add preserves and butter; cover and microwave for 30-60 seconds or until melted.
  • Stir to coat.

1 1/4 cups sugar
3/4 cup butter or 3/4 cup margarine
2 eggs
1 1/2 cups finely shredded carrots
1 3/4 cups flour
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups sliced fresh peaches
1/2 cup chopped nuts
peachy frosting
1 (3 ounce) package cream cheese, softened
1 tablespoon pureed peach
3 cups sifted confectioners' sugar

Steps:

  • Cream sugar and butter.
  • Blend in eggs and carrots.
  • Combine dry ingredients; add to creamed mixture alternately with peaches.
  • Stir in nuts.
  • Bake in a greased 9-inch square pan at 325 degrees for 40 minutes or u ntil done.
  • Cool.
  • Frost with peachy frosting.
  • Frosting:.
  • Blend cream cheese with peach puree. (To make puree, place 1 medium peach in blender. Whirl on high speed for 20 seconds or until peach is smooth) Gradually add sugar.

2 cups coarsely grated or julienned carrots
1 Scotch bonnet or habanero pepper, finely diced
1 serrano pepper, thinly sliced
1/2 white onion, chopped (about 1 cup)
2 teaspoons kosher salt
1 teaspoon Vietnamese fish sauce, such as Red Boat
1/2 cup brown sugar
1/2 cup cider vinegar
1/2 cup rice vinegar

Steps:

  • In a large metal bowl, combine the carrots, peppers, onion, salt and fish sauce. Toss well to combine.
  • Place the sugar and vinegars in a small pot and bring to a boil over high heat, stirring to dissolve. Once the mixture is at a rapid boil, pour it over the seasoned carrots. Let cool to room temperature before using. Store in the refrigerator for up to 3 weeks.

Folks who like horseradish will enjoy the tangy-sweet combination. "It tastes too good to be so quick and easy," Dawn Assures. "I use baby carrots to save time, but regular carrots can be sliced into sticks instead," she adds.

3-1/2 cups fresh baby carrots
2 tablespoons butter
2 tablespoons sugar
1 tablespoon prepared horseradish
1 teaspoon dried parsley flakes
Salt and pepper to taste

Steps:

  • Place carrots in a saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain and keep warm. , In the same pan, melt butter; stir in the sugar, horseradish and parsley. Add the carrots, salt and pepper; stir gently to coat.
