Fresh summer fruit stars in this easy peach and strawberry cobbler. Just a hint of spice complements the sweet flavors, while tender biscuits on top soak up the sauce.

¼ cup cornstarch
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ cup granulated sugar, plus 3 tablespoons, divided
¾ teaspoon salt, divided
2 pounds fresh strawberries, hulled and halved
2 pounds fresh peaches, peeled and sliced
1 cup all-purpose flour
1 cup whole-wheat flour
1 tablespoon baking powder
1 cup buttermilk
¼ cup unsalted butter, melted

Steps:

  • 1. Preheat oven to 350°F. Lightly coat a 9-by-13-inch baking dish with cooking spray. Whisk cornstarch, cinnamon, nutmeg, 1/2 cup sugar and 1/4 teaspoon salt in a large bowl. Add strawberries and peaches; stir until thoroughly coated. Spread the mixture in the prepared dish. Bake for 15 minutes.
  • Meanwhile, whisk all-purpose flour, whole-wheat flour, baking powder and the remaining 3 tablespoons sugar and 1/2 teaspoon salt in a medium bowl. Add buttermilk and melted butter; stir until well combined.
  • Remove the fruit mixture from the oven. Drop 12 rounded spoonfuls (about 2 tablespoons each) of batter evenly over the top. Bake until the biscuits are golden brown and the fruit mixture is bubbly, about 40 minutes. Let cool for 20 minutes before serving.

In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.

6 cups sliced strawberries (about 2 pounds)
1 cup granulated sugar
2 tablespoons cornstarch
1 lemon, zested and juiced
2 teaspoons pure vanilla extract
1 stick (8 tablespoons) cold unsalted butter, cubed, plus more for the pan
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup light brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
3/4 cup half-and-half
2 teaspoons coarse sugar, such as demerara sugar or turbinado
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 375 degrees F. Butter a large (10-inch) cast-iron skillet.
  • Stir together the strawberries, sugar, cornstarch, lemon zest, lemon juice and vanilla in a medium bowl. Set aside to allow the strawberries to macerate while making the biscuit dough.
  • Stir together the flour, granulated sugar, brown sugar, baking powder and salt in a medium bowl. Press the cubed butter into the flour with your fingers or a pastry cutter until the mixture resembles wet sand. Gradually mix in the half-and-half with a rubber spatula until a wet shaggy dough forms.
  • Pour the macerated strawberries into the prepared skillet, then drop large spoonfuls of the biscuit dough on top, leaving some space between each. Sprinkle the coarse sugar on top of the dough and place the skillet onto a rimmed baking sheet. Bake until the biscuits are golden brown and cooked through, 40 to 45 minutes. Let cool 10 to 15 minutes before serving. Serve with vanilla ice cream.

1/2 cup milk
1/4 cup butter, softened

Steps:

  • In a saucepan, combine first five ingredients. Bring to boil, stirring until thick. Add fruit and pour into a 2-qt. baking dish. For topping, combine flour, sugar, baking powder and salt in a bowl. Stir in milk and butter. Spread over fruit mixture an bake at 375° for 50 minutes or until topping is golden brown and tests done.
