Peach-Rosemary Jam image

Sweet, bright, and herbaceous, this jam is delicious on toast or as part of a cheese board. Make sure your peaches are the yellow variety-white peaches don't have the acidity necessary for canning.

Yield 4 half-pints

Number Of Ingredients 4

2 lb. yellow peaches, pitted, peeled, and coarsely chopped (about 6 cups)
2 cups sugar
1-1/2 tsp. minced fresh rosemary
1 Tbs. fresh lemon juice

Steps:

  • Prepare a canning pot water bath and four half-pint jars. Place the peaches in a large nonreactive skillet. Stir in the sugar and rosemary. Let sit, stirring once or twice, until the sugar begins to dissolve, 5 to 10 minutes. Bring the mixture to a boil over high heat. Reduce the heat to medium high, and cook, stirring frequently, until the peaches start to break down, the liquid begins to evaporate, and the mixture begins to thicken, 8 to 10 minutes. Stir in the lemon juice. If you find that the chunks of fruit are too big for your liking, use a potato masher to help break them down. Continue to cook until the jam has thickened, 3 to 4 minutes more; it is done when you can pull a spatula through the jam and the space you clear stays open for 2 or 3 seconds. The mixture will continue to thicken as it cools, so make sure to stop a little shy of your desired thickness. Use a funnel to pour the jam into the prepared jars, leaving 1/2-inch headspace. Wipe the rims, apply the lids and rings, and process in a boiling water bath canner for 10 minutes. Remove the jars, and put them on a folded kitchen towel to cool. When the jars have cooled enough that you can comfortably handle them, check the seals. Sealed jars can be stored at room temperature for up to a year. Any unsealed jars should be refrigerated and used promptly.

Peach Rosemary Jam is a savory jam recipe that is perfect served with meat or on a cheese platter. It tastes glorious with cream cheese and crackers.

2 1/2 lbs fresh peaches (5-7 large)
1 teaspoon lime zest
6 tablespoons Ball Classic Pectin
1/4 cup fresh lime juice
2 sprigs four inch long fresh rosemary sprigs
5 cups granulated sugar

Steps:

  • Wash, peel and chop the peaches into a large bowl. Using a potato masher or the bottom of a wide glass mash the peaches and measure 4 cups.
  • Place the mashed peaches into a large stainless steel pot.
  • To the pot of peaches add the lime zest, pectin, lime juice and the rosemary. Stir well and heat until a full boil is reached.
  • Boil while stirring constantly for 1 minute.
  • Add the sugar to the pot and mix well until dissolved.
  • Return to a full rolling boil and boil for exactly one minute.
  • Remove the pot from the stove and carefully skim any foam that settles on the top.
  • Ladle the hot jam into canning hot jars, leaving a 1/4 inch headspace. Remove bubbles and wipe the jar rim clean with a damp paper towel.
  • Place a flat lid on top of the jar and screw on a band just to fingertip tight. Repeat with remaining jam filling each jar and setting aside.
  • Once jars are fill process for 10 minutes in a hot water bath canner.

3 pounds yellow peaches, peeled
1/3 cup fresh lemon juice
4 3/4 cups sugar
4 large sprigs fresh rosemary

Steps:

  • Halve and pit peaches, then cut into 1/2-inch-thick wedges. Transfer to a large bowl. Add lemon juice; toss. Add sugar and rosemary; toss. Cover; let stand, tossing every hour, for 4 hours (sugar should be completely dissolved).
  • Put peach mixture into a large, wide pot. Bring to a boil over medium-high heat. Cook until liquid is syrupy, 12 to 13 minutes. Crush lightly with a potato masher, leaving one-quarter of the wedges intact. Skim foam from surface. Discard rosemary sprigs.
  • Seal and process: Fill hot, sterilized 4-ounce jars with hot jam, leaving 1/4 inch space in each jar's neck. Wipe rims with a clean, damp cloth; cover tightly with sterilized lids and screw rings. Transfer jars, using tongs or a jar clamp, to the rack of a large canning pot filled with hot water, keeping jars upright; cover with water by 2 inches. (Jars should be spaced 1 inch apart and should not touch sides of pot.) Cover; bring to a boil. Process jars in gently boiling water 5 minutes. Transfer to a rack; let cool 24 hours. If lids pop back when pressed, they are not sealed; refrigerate immediately, and use within 1 month.

1-1/2 cups crushed raspberries
3 cups sugar
1-1/2 teaspoons lemon juice

Steps:

  • In a Dutch oven, combine all ingredients. Cook over low heat, stirring occasionally, until sugar has dissolved and mixture is bubbly, about 10 minutes. Bring to a full rolling boil; boil for 15 minutes, stirring constantly. Remove from the heat; skim off foam. , Carefully ladle hot mixture into hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles, wipe rims and adjust lids. Process for 15 minutes in a boiling-water canner.

Grill tender, juicy pork with these rosemary-rubbed country-style ribs glazed with warm peach preserves.

1 ½ to 2-pounds country-style pork ribs, boneless, individually cut
2 tablespoons canola oil
1 tablespoon fresh rosemary, chopped, or 2 teaspoons dried rosemary, crumbled
1 ½ teaspoons coarse salt
1 teaspoon coarsely ground black pepper
½ cup peach preserves, warmed until softened

Steps:

  • Brush the ribs with the oil. In small bowl, combine rosemary, salt and pepper. Season ribs all over with the rosemary mixture. Let stand for 30 minutes.
  • Prepare medium-hot fire in grill. Place ribs on grill over indirect heat (not directly over heat) and close lid. Grill for 35 to 45 minutes, or until ribs are tender. Occasionally baste ribs on all sides with warmed preserves during last 15 minutes of grilling. Remove from grill and let rest 3 minutes.

4 cups finely chopped peeled fresh peaches (about 6 medium)
1-1/2 cups packed brown sugar
1 cup sugar
1 tablespoon lemon juice
3 tablespoons bourbon or 3 teaspoons vanilla or bourbon extract

Steps:

  • In a large saucepan, combine peaches, sugars and lemon juice; bring to a boil. Reduce heat; simmer, uncovered, until mixture is thick and a thermometer reads 220°, about 60 minutes. Remove from heat; skim off foam. Stir in bourbon., Ladle hot mixture into 3 hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars in canner, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

2 ¼ lb crushed ripe peaches, 7 medium peaches
⅓ cup water
2 tablespoons lemon juice, bottled
1 cup sugar
3 tablespoons Ball® RealFruit™ Low or No-Sugar Needed Pectin

Steps:

  • Prepare boiling water canner. Heat jars in simmering water until ready to use. Do not boil. Wash lids in warm soapy water and set aside with bands.
  • Combine crushed peaches, water, lemon juice, and sugar in a medium saucepan. Gradually stir in Ball® RealFruit™ Low or No-Sugar Needed Pectin. Bring mixture to a full rolling boil that cannot be stirred down. Boil hard for 1 minute, stirring constantly. Remove from heat. Skim foam if necessary.
  • Ladle hot jam into a hot jar leaving a ¼-inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band. Adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
  • Process jars 10 minutes, adjusting for altitude. Turn off heat, remove lid, then let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal. They should not flex when center is pressed.

Steps:

  • Combine the peaches, bananas, cherries, lemon juice, and fruit pectin in a large Dutch oven; stir well. Place over high heat and bring to a boil stirring frequently; quickly stir in sugar.
  • Once it comes back to a boil, boil for 1 minute or until mixture reaches 220°F on a candy thermometer, stirring constantly. Remove from heat and skim off surface with a metal spoon.
  • Quickly ladle into hot sterilized jars, leaving 1/8-inch head space. Cover at once with the lids and screw on bands tight.
