Steps:
- Add fruit and sweetened condensed milk to food processor or blender and combine until creamy.
- Serve immediately as soft-serve
- You can also freeze for an 'ice cream' like consistency. Place sherbet in an air tight container, such as a Tovolo Ice Cream Tub, and freeze for at least 3-4 hours to harden. Scoop onto a cone or into a bowl and enjoy!!

- Pour nectar into a shallow container like an ice cube tray and place in freezer.
- When firm, place in a food processor and process until fluffy.
- Refreeze until firm.

- Peel and slice peaches, then freeze until firm. Blend with condensed milk (in batches, if necessary) until creamy and smooth. Eat immediately soft-serve-style, or freeze in a loaf pan up to 3 days.
PEACH SORBET
You can peel or not peel the peaches. Without the peel, the texture will be smooth and pure yellow. With the peel, the sorbet will have more texture and tiny flecks of pink.

Steps:
- In a small saucepan, combine the sugar, water, and corn syrup.
- Place pan over medium heat and stir until the sugar dissolves.
- Boil without stirring for 1 minute.
- Remove form heat and cool to room temperature.
- Place the peaches in a blender or food processor with the lemon juices, salt, and cool sugar syrup.
- Process until the mixture is smooth.
- If the puree is too thick to blend properly, add water, 1 tablespoon at a time until mixture blends easily.
- Freeze immediately in an ice cream maker according to the manufacturer's directions.
- When finished, the sorbet will be soft but ready to serve.
- For firmer sorbet, transfer to a freezer safe container and freeze several hours.

- Cut the peaches in half and discard the pits. Cut the fruit in wedges and place in a medium bowl with the sugar and stir well. Cover with plastic wrap and refrigerate overnight.
- Sprinkle the gelatine over ½ cup of cold water and stir to combine, setting it aside for 5 minutes. Stir in ½ cup boiling water and stir to combine. With a wooden spoon and a sieve set over a bowl, press the pulp through the sieve, scraping the fruit to remove the skins and pulp and pressing to extract as much liquid as possible. Discard the pulp. Stir in the gelatine mixture and 2 cups of ice water.
- Transfer to an ice cream maker and freeze according to the manufacturer’s instructions. Transfer to a container, cover, and freeze for about 4 hours, or until the sherbet is firm. Scoop and serve frozen.
