- Preheat oven to 350 degrees F (175 degrees C).
- Mix peaches, blackberries, 1/4 cup sugar, cinnamon, and lemon juice in a bowl.
- Pour butter into a 9x13-inch glass baking dish and evenly coat the bottom and sides. Whisk flour, 1 cup sugar, baking powder, and salt in a bowl; mix in milk, stirring just to moisten dry ingredients. Pour batter into prepared baking dish and distribute fruit mixture evenly over the batter.
- Bake in the preheated oven until cobbler is golden brown, about 45 minutes.

PEACH PINEAPPLE COBBLER
This is a quick, easy dessert that is great any time of year. It's even better when served with vanilla ice cream! I keep the ingredients on hand in case I need to make something at the last minute. Preparation note: You MUST use self-rising flour in this recipe! If you don't, the cobbler will not turn out right--trust me.

Steps:
- Preheat oven to 350. Place margarine or butter in pan and place pan in oven to melt margarine while you prepare the batter.
- Stir batter ingredients together until well-blended. Batter will be very thin.
- Remove pan from oven. Pour fruit with juice/syrup over margarine and stir together.
- Pour batter over fruit mixture, distributing evenly.
- Bake at 350 for 1 hour or until crust is golden brown. Sprinkle with sugar if desired.

PINEAPPLE PEACH COBBLER
DH said this was the best pie that I had ever made which actually made me feel a little miffed!! I just threw this together the other night, and he thought it was better than those pies that I have spent hours on--the nerve of the man! It is yummy, but not for the purists perhaps unless they are in a hurry--hee hee!!!!

Steps:
- Preheat the oven to 325 degrees.
- In a medium sized mixing bowl mix the sugar and the cornstarch together until all of the cornstarch is smoothly blended in.
- Drain the pineapple slices, reserving 1/4 cup of the juice.
- Cut the slices into 1 inch pieces.
- Add the peach pie filling, pineapple pieces and pineapple juice to the sugar and mix well.
- Place one of the pie crusts into a glass pie plate, and pour the pie filling mixture into the crust.
- Cut the second pie crust into strips and place it over the pie filling in a lattice type pattern.
- Bake at 325 degrees for 30 minutes until the pastry is golden brown.

- Preheat the oven to 350 degrees. Butter a 9-by-13-inch baking dish. Make the biscuits: Whisk the flour, granulated sugar, baking powder, nutmeg and salt in a medium bowl. Add the butter and work it in with your fingers until it is in pea-size pieces. Stir in the heavy cream until the mixture just comes together into a shaggy dough. Turn out onto a floured baking sheet and pat until 1/4 inch thick; freeze until firm, about 10 minutes.
- Make the filling: Toss the peaches, granulated sugar, cornstarch, orange zest and juice, and vanilla in a bowl until the peaches are coated. Gently stir in the berries. Transfer to the prepared baking dish.
- Cut out circles from the cold dough using 2 1/2-inch cookie cutters. Arrange the circles on the fruit mixture; brush with heavy cream and sprinkle with coarse sugar. Bake until the biscuits are golden brown and the filling is bubbling, 50 minutes to 1 hour. Transfer to a rack and let cool.
PEACH PINEAPPLE BLACKBERRY COBBLER
Adapted from a recipe in the newspaper from the Creekside Cafe & Grill in Arizona. This is my go-to cobbler/dump cake. Wonderful & so easy. Awesome served with ice cream. It also re-heats great as left-overs. You can substitute the blackberries for another berry of your choice.

- Preheat oven to 350°F.
- In 9x13 ungreased pan, spread crushed pineapple & juice.
- Add the thawed blackberries.
- Sprinkle the yellow cake mix on top of the berries.
- Add thawed peaches on top of the yellow cake mix.
- Sprinkle pecans, then sugar on top.
- Drizzle with the melted butter.
- Bake 350°F for about 35-40 minutes, or until golden brown.

PEACH AND BLUEBERRY CRUMBLES
Steps:
- Preheat the oven to 350 degrees F.
- Immerse the peaches in boiling water for 30 seconds to 1 minute, until their skins peel off easily. Place them immediately in cold water. Peel the peaches, slice them into thick wedges, and place them in a large bowl. Add the lemon zest, lemon juice, granulated sugar, and flour. Toss well. Gently mix in the blueberries. Allow the mixture to sit for 5 minutes. Spoon the mixture into ramekins or custard cups.
- For the topping, combine the flour, granulated sugar, brown sugar, salt, cinnamon, and the butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed until the butter is the size of peas. Rub the mixture with your fingertips until it's in big crumbles, then sprinkle evenly over the fruit. Place the ramekins on a sheet pan lined with parchment paper and bake for 40 to 45 minutes, until the tops are browned and crisp and the juices are bubbly. Serve warm or at room temperature.
- If you want to make these early, store the unbaked crumbles in the refrigerator and bake before dinner.

- Heat oven to 180C/160C fan/gas 4. Grease a baking dish with a little butter, then lay the drained peach slices in the base. Sprinkle with 2 tbsp of the sugar and the ground ginger and set aside.
- Tip the flour, remaining sugar, baking powder, cinnamon and a pinch of salt into a food processor. Whizz until combined, then add the cubes of butter, pulse until the mixture resembles breadcrumbs, then add the egg and continue to blitz until it comes together to make a thick dough.
- Spoon the dough in dollops on top of the peaches, creating a good covering, but leave some gaps for the dough to spread into. Sprinkle with a little caster sugar then bake for 40 mins, until golden. Serve with scoops of vanilla ice cream.

- 1. Preheat oven to 350^. Spray a 10-inch square baking dish; set aside.
- 2. Place peaches, pineapple, rum, pineapple juice and all the spices, cornstarch and sugar in a medium saucepan over medium heat and bring to a boil. Turn heat down and simmer for 8 minutes, until slightly thickened.
