Two 15-ounce cans sliced peaches in syrup
1/2 cup (1 stick) butter
1 cup self-rising flour
1 cup sugar
1 cup milk
Homemade Whipped Cream, recipe follows
2 cups whipping cream, chilled in the fridge
4 tablespoons sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • Drain 1 can of peaches; reserve the syrup from the other. Place the butter in a 9- by 12-inch ovenproof baking dish. Heat the butter on the stove or in the oven until it's melted. In a medium bowl, mix the flour and sugar. Stir in the milk and the reserved syrup. Pour the batter over the melted butter in the baking dish. Arrange the peaches over the batter. Bake for 1 hour. The cobbler is done when the batter rises around the peaches and the crust is thick and golden brown. Serve warm with fresh whipped cream
  • Chill a large metal mixing bowl and the wire beater attachment in the freezer for about 20 minutes. Pour the chilled cream and sugar into the cold mixing bowl and beat until it forms soft peaks, about 5 minutes. The mixture should hold its shape when dropped from a spoon. Don't overbeat or you'll have sweetened butter!

4 cups fresh peaches
1 tablespoon lemon juice (optional)
1 cup flour
1 cup sugar
1/2 teaspoon salt
1 egg, beaten
6 tablespoons butter, melted

Steps:

  • Place peaches in bottom of 9x9 pan or casserole.
  • Sprinkle lemon juice over peaches
  • Sift dry ingredients.
  • Beat egg slightly and add to dry ingredients. Toss with fork until crumbly.
  • Sprinkle over peaches.
  • Drizzle butter over top.
  • Bake at 375 degrees for 35-40 minutes.

3 teaspoons baking powder
1 pinch salt
1 cup milk
4 cups peaches, peeled pitted, and thinly sliced (about 5 to 6 medium peaches)
1 tablespoon fresh lemon juice
3 dashes ground cinnamon (optional) or 3 dashes ground nutmeg (optional)

Steps:

  • Preheat the oven to 375°F degrees.
  • Pour the melted butter in a 13 x 9 x 2-inch baking dish.
  • In medium bowl, combine the flour, 1 cup of sugar, baking powder, and salt; mix well.
  • Stir in the milk and stir until just combined.
  • Pour the batter over the butter. DO NOT mix together.
  • In a small saucepan, combine the peaches, lemon juice, and the remaining cup of sugar; bring to a boil over high heat, stirring constantly.
  • Pour the peaches over the batter, but do not stir in; sprinkle with cinnamon and nutmeg.

2 - 1 pound(s) bags, frozen peaches or use 6 fresh peaches - pitted, peeled and sliced
1/3 - 1 cup(s) sugar
1/2 teaspoon(s) cinnamon
1 tablespoon(s) cornstarch
2 teaspoon(s) fresh lemon juice
TOPPING
3 tablespoon(s) softened, butter
1 cup(s) flour
2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1/2 cup(s) milk or cream

Steps:

  • Preheat oven to 375 degree F. In a large saucepan or dutch oven - toss peaches with the cinnamon, sugar, lemon juice and corn starch.
  • Over medium heat bring to a slow boil stirring until slightly thickened. Pour into an 8 inch square oven proof baking dish.
  • Next, In a medium bowl, mix together the flour, salt, 1 tbsp sugar and baking powder. I use a whisk and blend the softened butter into the flour, until a loose crumb forms.
  • Stir in the milk, just until it all comes together as a thick batter. Drop batter by tablespoonful, evenly.
  • Place in preheated oven and bake for 20 - 25 minutes or until bubbly and starting to brown a little. When taken from the oven I sprinkle with some sugar. Serve warm with ice cream or whipped cream. My son eats his in a bowl with milk. No matter how you serve it, it's delicious. Enjoy!

2 x 410g cans sliced peaches , drained
120g golden caster sugar , plus extra for sprinkling
1 tsp ground ginger
150g plain flour
1 tsp baking powder
½ tsp ground cinnamon
150g butter , chilled and cubed, plus extra for greasing
1 small egg
vanilla ice cream , to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a baking dish with a little butter, then lay the drained peach slices in the base. Sprinkle with 2 tbsp of the sugar and the ground ginger and set aside.
  • Tip the flour, remaining sugar, baking powder, cinnamon and a pinch of salt into a food processor. Whizz until combined, then add the cubes of butter, pulse until the mixture resembles breadcrumbs, then add the egg and continue to blitz until it comes together to make a thick dough.
  • Spoon the dough in dollops on top of the peaches, creating a good covering, but leave some gaps for the dough to spread into. Sprinkle with a little caster sugar then bake for 40 mins, until golden. Serve with scoops of vanilla ice cream.
