Easy Gluten Free Peach Cobbler image

This easy Gluten Free Peach Cobbler is made using fresh, juicy peaches covered with a soft biscuit topping, and a sprinkle of sugar for a nice crispy top.

6 large peaches, cut into chunks (about 6 cups)
3 Tablespoons granulated sugar
1 Tablespoon cornstarch
1 Tablespoon lemon juice
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
pinch salt
1 1/4 cups brown rice flour
1/4 cup tapioca starch
1 Tablespoon granulated sugar
2 teaspoons baking powder
1 teaspoon xanthan gum
1/2 teaspoon baking soda
1/2 teaspoon salt
6 Tablespoons cold unsalted butter, cut into cubes
1/2 cup sour cream or plain yogurt
2 Tablespoons raw or coarse sugar (for sprinkling)

Steps:

  • Preheat oven to 350 degrees F, and grease a 8x11 inch baking dish (a 9x9 inch pan would work as well).
  • To save yourself another bowl to wash, you can stir together the peaches, 3 Tablespoons sugar, cornstarch, lemon juice, vanilla, cinnamon, and a pinch of salt right in the baking dish. Spread the fruit in an even layer.
  • In a food process, or mixing bowl, combine the brown rice flour, tapioca starch, 1 Tablespoon sugar, baking powder, xanthan gum, baking soda and salt. Pulse or stir to blend the ingredients.
  • Cut in the cold cubes of butter. If using a food processor, a few pulses should work. Otherwise, you can use a pastry cutter or two knives to cut the butter into small, pea-sized pieces.
  • Add the sour cream and pulse or stir until the dough comes together, and has an even texture.
  • Distribute the topping evenly over the peaches in the baking dish.
  • Sprinkle the topping with the 2 Tablespoons of raw or coarse sugar.
  • Place in preheated oven and bake for 30-40 minutes, or until the peach filling is bubbling, and the topping is browned.
  • Let sit for a few minutes before serving with a scoop of vanilla ice cream or whipped cream.

2 tablespoons white sugar
2 tablespoons gluten-free all-purpose baking flour
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ cup butter
1 cup gluten-free all-purpose baking flour
¾ cup white sugar
¾ cup soy milk
1 teaspoon gluten-free baking powder
1 teaspoon xanthan gum
¼ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
