4 1/2 cups all-purpose flour, plus more for dusting
1 tablespoon granulated sugar
1 teaspoon kosher salt
2 sticks (8 ounces) unsalted butter, chilled
4 eggs
Nonstick cooking spray
3 cups sliced ripe peaches
2 cups fresh blueberries
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
2 tablespoons lemon juice
1 teaspoon lemon zest
1 cup quick-cooking rolled oats
1/4 cup packed brown sugar
3 tablespoons cold butter
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon

Steps:

  • For the dough: In a large bowl, mix the flour, granulated sugar and salt. Using a pastry blender or your fingers, cut in the cold butter until pea-size.
  • In a separate bowl, beat the eggs with a fork until fluffy and pale yellow. Using a fork, mix the eggs into the flour mixture until the dough just comes together. Finish combining the dough with your hands to form a ball, being careful to avoid over-working the dough.
  • Cut the ball in half, forming two smaller balls of dough. Gently press down on each to form two equal disks. Wrap each disk in plastic wrap and place in the refrigerator for at least 2 hours or up to overnight.
  • For the filling: In a bowl, add the peaches, blueberries, brown sugar, flour, lemon juice and zest. Gently mix and set aside for 5 minutes.
  • For the topping: In a bowl, add the oats, brown sugar, butter, flour and cinnamon, and mix with your fingers, pinching the butter to create pea-size pieces.
  • Preheat the oven to 375 degrees F.
  • Lightly dust a clean surface with flour. Spray a 10-inch pie pan with nonstick cooking spray. Roll out the dough to about 12 inches in diameter, then place in the pan. Pour the filling over the dough and sprinkle the crumb topping over the top. Bake for 40 to 45 minutes. Cool on a wire rack before serving.

1/4 cup quick cooking tapioca pearls, such as Minute Tapioca
1 pound frozen blueberries, thawed and drained, or 1 1/2 cups fresh blueberries
1 pound frozen peaches, thawed, or 3 large fresh peaches, pitted and thinly sliced
1/2 cup brown sugar
2 tablespoons fresh lemon juice
2 teaspoons pure vanilla extract
1 1/2 teaspoons ground cinnamon
Zest of 1 large lemon
One 9-inch unroll-and-bake refrigerated pie crust
1 egg white, lightly beaten
1/2 cup slivered almonds
1/2 cup (1 stick) butter, cut into 1/2-inch pieces, chilled
1/2 cup quick cook oats
1/2 cup almond flour
1/2 cup brown sugar

Steps:

  • Place an oven rack in the center of the oven and preheat to 375 degrees F. Butter a 9-inch ceramic or glass pie dish.
  • For the filling: Finely grind the tapioca in a food processor or spice grinder, about 1 minute. Combine the blueberries, peaches, sugar, lemon juice, vanilla, cinnamon, lemon zest and tapioca in a medium bowl.
  • Unroll the pie crust and place in the pie dish. Brush the inside with the egg white.
  • For the topping: Pulse the almonds, butter, oats, flour and sugar until small chunks form in a food processor.
  • Pour the filling into the crust. Crumble the topping over the filling and bake until the top is golden brown, about 55 minutes. If after 30 minutes of baking the edges of the crust begin to brown too quickly, cover the edges of the pie dish with strips of foil. Cool the pie for 30 to 40 minutes before slicing.

2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar

1 cup all-purpose flour
1/3 cup granulated sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • Immerse the peaches in boiling water for 30 seconds to 1 minute, until their skins peel off easily. Place them immediately in cold water. Peel the peaches, slice them into thick wedges, and place them in a large bowl. Add the lemon zest, lemon juice, granulated sugar, and flour. Toss well. Gently mix in the blueberries. Allow the mixture to sit for 5 minutes. Spoon the mixture into ramekins or custard cups.
  • For the topping, combine the flour, granulated sugar, brown sugar, salt, cinnamon, and the butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed until the butter is the size of peas. Rub the mixture with your fingertips until it's in big crumbles, then sprinkle evenly over the fruit. Place the ramekins on a sheet pan lined with parchment paper and bake for 40 to 45 minutes, until the tops are browned and crisp and the juices are bubbly. Serve warm or at room temperature.
  • If you want to make these early, store the unbaked crumbles in the refrigerator and bake before dinner.

5 peaches or 5 nectarines, peeled and thinly sliced
1 cup blueberries
1/3 cup fresh orange juice
2 teaspoons fresh orange zest, minced
3/4 cup all-purpose flour
1/3-1/2 cup packed brown sugar

  • Preheat oven to 325 degrees F.
  • In a bowl, mix together peaches, blueberries, orange juice and zest.

3/4 cup yellow cornmeal
1/2 cup sugar
1/8 teaspoon salt
6 ounces neufchatel cheese, diced
4 tablespoons butter, diced
5 medium peaches, peeled, pitted and sliced (about 5 cups)
1 1/2 cups blueberries
1/3 cup sugar
3 tablespoons fresh lemon juice
2 tablespoons cornstarch
1/4 teaspoon ground cinnamon
ice cream (optional) or 2 cups sweetened whipped cream (optional)

Steps:

  • To make Cornmeal Crust:.
  • Add flour, cornmeal, sugar and salt to a food processor and pulse 2 or 3 times to combine.
  • Add cheese and butter, and blend until dough resembles coarse meal.
  • Add 3 Tbs. cold water, and pulse several times, or until dough comes together.
  • Pat into a flat disk, wrap in plastic wrap and chill 1 hour, or overnight.
  • Preheat oven to 425°F.
  • To make Peach-Blueberry Filling:.
  • Using a large bowl, toss together the peaches, blueberries, sugar, lemon juice, cornstarch and cinnamon.
  • Let stand 15 minutes, or until sugar is dissolved.
  • Place sheet of parchment paper on work surface, and sprinkle with flour. Roll dough into 12-inch round.
  • Fold in edge 1/2 inch to create sides.
  • Slide parchment and dough onto ungreased baking sheet or pizza pan.
  • Using a slotted spoon, place fruit in center of crust .
  • Discard the juice.
  • Bake 15 minutes at 425°F.
  • Reduce heat to 350°F, and bake 20 minutes more, or until crust is crisp and brown.
  • Allow tart to cool 10 minutes.
  • Slide tart from parchment onto serving plate.
  • Serve warm or at room temperature, and top with ice cream or whipped cream, if desired.

1 stick plus 3 tablespoons unsalted butter, room temperature
1/3 cup confectioners' sugar
1 2/3 cups unbleached all-purpose flour
3/4 teaspoon kosher salt
6 ounces cream cheese, room temperature
1 teaspoon grated lemon zest, plus 2 tablespoons fresh juice
1/2 cup granulated sugar
2/3 cup heavy cream
3 peaches (1 pound)
1 cup fresh blueberries
Mint leaves, for serving

Steps:

  • Preheat oven to 375°F. Beat butter with confectioners' sugar on medium speed until pale and fluffy, about 3 minutes. Reduce speed to medium-low; add flour and 1/2 teaspoon salt and beat until just combined and crumbly (do not overmix). Press evenly into bottom and up sides of a 9-inch square tart pan with a removable bottom. Dock bottom at 1-inch intervals with the tines of a fork. Freeze 15 minutes.
  • Bake until golden brown and set, 30 to 33 minutes. Let cool completely. (Crust can be kept at room temperature, wrapped in plastic, for up to 3 days.)
  • Beat together cream cheese, lemon zest, 1 tablespoon juice, and 1/4 cup granulated sugar on medium-high speed until creamy. With mixer running, slowly add cream and beat until light and fluffy, 1 to 2 minutes. (You should have about 2 cups.) Spread mixture into crust; refrigerate 1 to 2 hours.
  • Meanwhile, using a vegetable peeler, peel peaches, if desired; cut into 1/2-inch-thick wedges. Transfer to a bowl and stir in berries and remaining 1/4 cup granulated sugar, 1 tablespoon lemon juice, and 1/4 teaspoon salt.
  • Just before serving, spoon macerated fruit over tart and drizzle some of juice from bowl over it. Sprinkle with mint and serve, with any remaining fruit on the side.
