PEA SALAD

Pea Salad image

It's Easter week, so here's a recipe for a fantastic salad you can serve during the holiday (and all of your spring occasions!). We'll show you how to make the salad right here.

Categories     Easter     spring     comfort food     salad     side dish

Time 15m

Yield 12 servings

Number Of Ingredients 9

1/3 c. sour cream
1 tbsp. mayonnaise
Salt and pepper
1 tbsp. white vinegar
4 c. frozen green peas, almost totally thawed
8 slices bacon, cooked until crisp and chopped
1/2 small red onion, halved and sliced very thin
6 oz. cheddar or American cheese, cut into small cubes
3 tbsp. minced fresh parsley

Steps:

  • Mix the sour cream, mayonnaise, salt, pepper, and vinegar together to make the dressing. Add more salt and pepper to taste.
  • Stir 2/3 of the dressing into the peas until the peas are coated. Gently stir in the bacon, onion, cheese, and parsley until all combined. Taste and adjust seasonings. Cover with plastic wrap and refrigerate 2 to 4 hours before serving. (Pop the extra dressing in the fridge, too.)
  • Remove from the fridge and stir in the rest of the dressing to your liking. Sprinkle with more parsley before serving.

This is a copycat recipe for Schilling Salad Supreme. Use the entire recipe if making Mysterygirl's Linguini Salad in place of the 1/2 a jar that is called for in the recipe. It would be good mixed with italian dressing on vegetables too.

PEAS SUPREME

Peas Supreme image

This recipe is so special I only served it for holidays or special occasions, and then I realized any day is special. This can be made ahead and kept warm in a 250 degree F (120 degree C) oven.

Provided by BOJIBLUE

Categories     Side Dish     Vegetables     Green Peas

Time 45m

Yield 6

Number Of Ingredients 9

1 (16 ounce) package frozen green peas, thawed
4 strips bacon, cut into bite-size pieces
½ cup chopped red onion
1 cup heavy whipping cream
2 teaspoons cooking sherry
1 pinch monosodium glutamate (such as Ac'cent®), or to taste
1 pinch salt and ground black pepper to taste
1 dash Worcestershire sauce, or to taste
1 (4 ounce) package sliced fresh mushrooms

Steps:

  • Pour peas in a saucepan and cover with water. Bring water to a boil, reduce heat to medium-low, and simmer until peas are hot and tender, 5 to 7 minutes; drain.
  • Cook and stir bacon in a large skillet over medium-high heat until the fat renders and the bacon is crisp, 7 to 10 minutes. Stir onion into the bacon dripping; cook and stir with the bacon until tender, 5 to 7 minutes.
  • Pour cream over the bacon mixture; cook and stir until the cream thickens, about 5 minutes. Season thickened cream with monosodium glutamate, salt, and pepper. Pour sherry into the thickened cream. Add drained peas and mushrooms to the skillet; gently stir to coat.

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 16

1/4 cup chardonnay vinegar
2 tablespoons Dijon mustard
2 tablespoons extra-virgin olive oil
2 tablespoons hazelnut oil
1/4 teaspoon finely ground black pepper
1 shallot, finely minced
Kosher salt
Kosher salt
1 cup shucked English peas
1/2 pound snap peas
3 tablespoons extra-virgin olive oil
8 slices Jamon Serrano
2 cups pea shoots
1 cup snow peas, julienned lengthwise
1/4 cup grated Manchego
1/4 cup toasted hazelnuts, crushed

Steps:

  • Make the dressing: Whisk together the vinegar, mustard, olive oil, hazelnut oil, pepper, shallot and salt to taste in a small bowl. Adjust the seasonings. Set aside.
  • Make the salad: Bring a large pot of water to a boil. Season with salt until the water tastes slightly of salted broth. Prepare an ice bath.
  • Blanch the English peas and snap peas separately, for about 10 seconds each. Shock in the ice water and drain on paper towels. Cut the snap peas into thirds.
  • In a medium skillet, heat the olive oil over low heat. Tear the Jamon Serrano slices into bite-sized pieces and add to the oil in the skillet. Cook until crispy on both sides, 2 to 3 minutes total. Remove to a paper towel-lined plate to drain.
  • Assemble the salad: Toss the English peas, snap peas, pea shoots and snow peas with the vinaigrette to taste. Plate the salad and top with the Manchego, toasted hazelnuts and crispy jamon.

WES' SUPER AWESOME PEA SALAD

Wes' Super Awesome Pea Salad image

I got this recipe from my buddy Wes which was a dish that his grandmother always made. People are sometimes afraid to try this 'cause the ingredients may seem strange, but I'm telling you, it's AWESOME! And once they try it they can't get enough. Also, don't be afraid of the canned peas, they really do work better than fresh or frozen. This recipe can easily be doubled or tripled for larger groups. I hope you enjoy!

Provided by KLBoyle

Categories     Vegetable

Time 10m

Yield 4 serving(s)

Number Of Ingredients 6

1 (15 ounce) can peas, chilled
1/3 cup red onion, finely diced
1/3 cup English cucumber, finely diced
3 tablespoons mayonnaise
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)

Steps:

  • Place cans of peas in fridge to chill for a couple of hours, this will help them to set up and not turn to mush when mixing.
  • Dice red onion and cucumber about the same size as the peas.
  • Mix all ingredients together in a bowl. You may want to taste it to make sure there is a good amount of salt and pepper.
  • This can be served right away or left to sit for a couple hours. It tends to get runny if left to sit too long though.
