Enjoy a fresher, seasonal version of mushy peas. If you prefer them very soft, you can purée them. They make an ideal side dish to homemade fish and chips

Number Of Ingredients 5

25g butter
1 shallot, peeled and roughly chopped
200ml vegetable or chicken stock
400g frozen peas
small handful of mint leaves, chopped

Steps:

  • Melt the butter in a small saucepan over a medium heat and sizzle the shallot for 5 mins until soft. Add the stock and peas, and bring to a simmer. Cook gently for 10 mins until the peas are soft.
  • Roughly mash the pea mixture with a potato masher, or, if you prefer a smoother texture, purée with a hand blender. (It's best to leave some of the peas whole or roughly crushed for texture.) Season to taste and stir through the mint leaves just before serving.

1 tablespoon unsalted butter
2 bags (10 ounces each) frozen peas, thawed
1/3 cup lightly packed fresh mint leaves, coarsely chopped
Coarse salt and ground pepper

Steps:

  • In a large skillet, melt butter over medium-high. Add peas and cook, stirring constantly, until warmed through, about 5 minutes. Transfer to a food processor and pulse until coarsely pureed. Stir in mint and season with salt and pepper. Serve warm.

This is a fantastic recipe that is so quick and so simple and uses our reliable friends the frozen peas, which work really well here. Great with fish, meat or even as a vegetarian dish with a big dollop of butter on top.

2 tablespoons olive oil
1 bunch spring onions, chopped
1 handful fresh mint, leaves picked
1 pound (500 grams) frozen peas
2 large knobs butter
Sea salt and freshly ground black pepper

Steps:

  • Heat the oil in a pan and add the chopped onions, mint, and peas. Cover and leave for a few minutes to steam. Mash with a potato masher. You can do this with a food processor as well, just pulse it until smooth. Whether mashing or pulsing, when it's done add the butter and season very carefully, to taste.

This recipe for versatile and delicious British fresh mint pea purée is so easy to make and is a great side dish for meat, fish, and plain on toast.

2 cups water
10 1/4 ounces/300 grams garden peas (fresh or frozen)
1/4 cup fresh mint leaves
Salt (to taste)
Black pepper (to taste)
Optional: 1 tablespoon butter
Optional: fresh mint leaves (chopped)

Steps:

  • Gather the ingredients.
  • Add the water to a medium pot and bring to a boil. Add the peas, fresh mint, and a pinch of salt and bring to a boil. Reduce the heat and simmer until the peas are tender, about 5 minutes.
  • Drain the peas and mint in a colander.
  • Using an immersion blender , quickly purée the peas and mint to create a smooth paste. If you don't have an immersion blender, use a food processor instead or mash the peas well with a potato masher or fork. Taste for seasoning and add salt and pepper to taste.
  • You can use the peas in rough purée form, but if you want a very fine, smooth purée, push the mixture through a fine sieve.
  • Stir in the butter and chopped mint leaves (if using) until all the butter has melted and is incorporated into the purée.
  • Serve minted pea purée warm alongside your favorite meat or fish dish.

This mint green dip can be whipped up within minutes. It's perfect with lightly salted potato chips.

1 cup frozen peas, thawed
1 tablespoon fresh mint (about 6 leaves; chopped if mashing by hand)
1/2 cup canned or cooked cannellini beans, drained and rinsed
1/4 cup extra-virgin olive oil
Juice of 1/2 lemon (about 1 tablespoon)
Pinch of flaky sea salt
Lightly salted potato chips, for serving

Steps:

  • Blitz all the ingredients together in a food processor so there is still a little texture to the dip, about 15 seconds, or longer if you prefer a smoother dip. (Alternatively, place the ingredients in a bowl and mash with a potato masher.)
  • Spoon the dip into a serving bowl. Serve with potato chips.

Pea mash & mint vinaigrette to serve with fish image

4 spring onions
knob of butter
1 head Little Gem lettuce , leaves shredded
250g frozen peas
large bunch of mint
½ glass white wine
5-6 tbsp double cream
3 tbsp white wine or cider vinegar
100ml light olive oil

Steps:

  • Shred the spring onions and soften in a pan with the butter. Add the lettuce leaves, peas, half the mint, white wine and a little salt and pepper. Cover and cook gently for 10 mins.
  • Stir in the cream, then purée until smooth. Return to a pan to keep warm.
  • Finely chop remaining mint leaves. Add vinegar, then whisk in the oil in a steady trickle. Season.
  • Cook the fish to your liking and serve on the pea mash with a trickle of mint vinaigrette.

2 tablespoons olive oil
1 (16 ounce) package frozen peas
1 bunch fresh mint leaves
1 bunch green onions, chopped
2 tablespoons butter
2 tablespoons brown sugar
salt and pepper to taste

Steps:

  • Heat the olive oil in a skillet, and cook and stir the frozen peas, mint leaves, and green onions until the peas are hot and tender but still bright green, 7 to 10 minutes. Pour the peas into a bowl, and mash until the peas are thoroughly crushed but still slightly chunky. Stir in the butter, brown sugar, and salt and pepper, and mix until the sugar has dissolved. Serve warm or cold.

1/2 cup milk or 1/2 cup cream
1 cup frozen peas
1/3 cup of fresh mint, chopped
4 tablespoons butter
salt and pepper

Steps:

  • Boil potatoes in salted water until tender when pierced.
  • Drain, return them to the pot, cover and let dry a few minutes.
  • In a little saucepan, heat the milk with peas and mint.
  • Mash the potatoes then add the mixture of peas and butter, to obtain a creamy consistency. Add salt and pepper if you want. And serve.
