SPRING CHICKEN FRICASSEE WITH PEAS



Spring Chicken Fricassee With Peas image

This is a recipe from a Pillsbury grocery check-out cookbook. I found it to be an easy, lower fat recipe using things I usually have on hand. The tarragon gives this a nice flavor. Be sure not to over-cook the chicken or it will get tough.

4 boneless skinless chicken breasts
2 tablespoons oil
1 cup sweet onion, chopped
3/4 cup fat-free low-sodium chicken broth
3/4 cup fat-free evaporated milk
3/4 cup low sodium chicken broth
3 tablespoons flour
2 cups frozen peas
1/2 teaspoon dried tarragon leaves
salt and pepper

Steps:

  • Turn oven on 250-300 to warm.
  • Cut each large chicken breasts so they are smaller portions. I do this at an angle so they are still not too thick. Season with salt and ground pepper.
  • Heat oil in a frying pan on medium high setting. (I prefer to use my stainless steel pan instead of non-stick). Place chicken pieces in pan and cook for 10 to 12 minutes or until browned on each side. Remove from pan and place in a casserole dish in the oven to keep warm.
  • In same pan, add the onions and sautee for a few minutes on medium heat, add chicken broth to de-glaze the pan.
  • In a measuring cup, pour in the evaporated milk and then add the 3 tbs flour. Mix well.
  • Turn the heat down to low and add milk/flour to the pan and stir with broth and onions until thickened.
  • Add tarragon and frozen peas. Stir until warmed through, about 5 minutes and turn off the heat.
  • Open the oven and remove the casserole dish (be carful, it's hot). Pour the pea mixture over the chicken and serve.
  • Serve with rice or potatoes.

2 tablespoons minced shallots
1 tablespoon minced garlic
1 tablespoon minced fresh thyme leaves
1 teaspoon minced fresh oregano leaves
1 teaspoon minced parsley leaves
1 (5-pound) pork loin
Paste, recipe follows
1 cup chicken stock
Mushroom Fricassee, recipe follows
1 cup brown sugar
2 teaspoons finely chopped garlic
2 teaspoons ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon ground black pepper
1 teaspoon kosher salt
4 tablespoons (1/2 stick) butter
1/2 cup thinly sliced morel or chanterelle mushrooms
1/2 cup thinly sliced shiitake mushrooms
1/2 cup thinly sliced portobello mushrooms
1/2 cup thinly sliced domestic mushrooms
1/4 cup tomato paste
Pinch ground cinnamon
Pinch ground nutmeg
Pinch ground cloves
Salt and pepper

Steps:

  • In a small bowl, combine the shallots, garlic, thyme, oregano, and parsley. Rub the mixture all over the pork and refrigerate overnight.
  • Preheat the oven to 350 degrees F.
  • Place the pork loin in a roasting pan and bake for 30 minutes.
  • Remove pork from the oven, and when cool enough to touch, spread the paste all over the loin. Return the pork to the oven and cook until it has developed a crunchy crust on the outside and is cooked to your desired degree of doneness, about 25 to 30 more minutes. Remove the pork from the roasting pan to let the pork rest. Pour the juices from the meat into a fat separator. Add the meat juices only, not the fat, and the chicken stock to a small saucepan. Cook over medium-high heat until reduced to the consistency of a sauce. Meanwhile, start the Mushroom Fricassee.
  • To serve, cut the pork loin into slices, pour the Mushroom Fricassee and sauce over, and serve immediately.
  • Combine all ingredients in a small bowl.
  • In a large skillet, melt the butter over medium heat. Add all of the sliced mushrooms and saute until just beginning to brown. Add the tomato paste and stir to incorporate. Season, to taste, with cinnamon, nutmeg, cloves, salt, and pepper. Spoon over the pork slices.

Pan-fried sea trout, peas & chorizo fricassée image

Sea trout has a subtle flavour that goes well with robust ingredients like smoky chorizo

2 fillets of sea trout about 150g each (or use salmon)
25g butter
1 lemon , halved
1 tbsp olive oil
100g cured chorizo , about 1 small sausage, diced
350g waxy potatoes , such as Charlotte, peeled and cut into small cubes
large pinch sweet smoked paprika
125ml fresh chicken stock
150g cooked peas
3 tbsp olive oil
2 tbsp small capers , drained
1 red onion , finely chopped
1 tbsp red wine vinegar
small bunch tarragon , chopped

Steps:

  • First make the dressing. Heat 1 tbsp of the olive oil in a small saucepan. Add the capers and the onion and cook for 3 mins until softened. Splash in the red wine vinegar and bubble down, then remove the pan from the heat. Add the rest of the oil and the tarragon, then leave to infuse.
  • For the fricassée, heat the oil in a sauté pan, add the chorizo and fry for 2 mins until it starts to crisp and render out red oil. Throw the potatoes and paprika in the pan and cook for 5 mins, tossing occasionally, until they start to brown on the edges.
  • Pour in the chicken stock, turn up the heat and boil the stock for 8-10 mins until it has nearly all evaporated and the potatoes are tender. Stir the peas into the potatoes and cook for 2 mins more until heated through, then set aside.
  • Using a sharp knife, score the skin of the trout fillet at close intervals, then season generously with sea salt and black pepper.
  • Heat the butter in a non-stick frying pan. When it starts to sizzle, carefully lay the fish in the pan, skin-side down. Gently fry for about 8 mins until the skin is crisp and golden and most of the flesh has changed colour with just the top still raw.
  • Carefully turn the fish fillets over, then squeeze over the juice from one half of the lemon. Cook for 1 min more, basting fish with the lemony pan juices. Turn off the heat and leave the fish in the pan. You are now ready to plate up - you can serve the other lemon half on the side if you like.
  • Spoon a pile of the fricassée into the centre of each plate. Place another spoonful of the mixture on top to create a small heap. Gently sit the fish fillet on top, skin-side up. Spoon the caper dressing around the outside of the plate and serve.

2 tablespoons olive oil
1 1/2 lbs boneless skinless chicken thighs
salt, to taste
fresh ground black pepper
1 medium onion, sliced
2 garlic cloves, minced
1/2 cup dry white wine
1 cup low sodium chicken broth
1 lb asparagus, trimmed and cut into 1 1/2 " lengths
1 cup fresh peas, shelled
4 cooked red potatoes, quartered

Steps:

  • Heat the olive oil in a large skillet over medium-high heat.
  • While the oil heats, season the chicken with salt and pepper.
  • Add the chicken to the pan and brown on all sides.
  • As the chicken pieces finish browning, remove them to a plate and set aside.
  • Turn the heat down to medium and add the onion.
  • Cook, stirring occasionally, until the onion begins to wilt, about 5 minutes.
  • Add the garlic and cook for 2 more minutes.
  • Return the chicken to the skillet.
  • Add the wine, let it boil rapidly for a minute and stir with a wooden spoon to remove any bits that may be stuck to the pan.
  • Add the chicken broth, turn down the heat so that the mixture simmers slowly and place a lid, slightly ajar, over the skillet.
  • Cook until the chicken is completely tender, about 20 minutes.
  • Meanwhile, bring a small pot of salted water to a boil.
  • Add the asparagus and cook until it is crisp-tender, about 2 to 3 minutes, then drain.
  • Add the asparagus and peas to the chicken, and cook for 3 to 4 minutes to heat through.
  • To serve, heat the cooked potatoes and divide them among 4 bowls.
  • Add chicken, asparagus and peas to each bowl and spoon some of the sauce over the top.
  • Enjoy!

  • Cut the rack of lamb in 1/2, just to the right of the 4th bone. Remove the outer layer of fat and the bones from the right sided rack so that when you are finished you just have the eye.
