½ cup honey
½ cup coconut oil
2 cups old-fashioned oats
1 ¼ cups dark chocolate chips
½ cup chopped mixed nuts
1 teaspoon vanilla extract
1 cup chopped mixed dried fruit

Steps:

  • Stir peanut butter, honey, and coconut oil in a saucepan over medium-low heat in a saucepan, cooking and stirring until the peanut butter melts and the mixture is smooth, about 5 minutes; remove from heat.
  • Stir oats, chocolate chips, mixed nuts, and vanilla into the peanut butter mixture; stir until the chocolate melts completely. Fold fruit into the mixture.
  • Grease a 13x9-inch baking dish. Pour the mixture into the prepared dish and spread into an even layer.
  • Cover baking dish with plastic wrap and refrigerate until hard, at least 1 hour. Cut into bars and store in the refrigerator.

  • In a large bowl combine the peanut butter, honey/maple syrup, and vanilla. Microwave for about 15 seconds, until the peanut butter is melty. Add the nut and oat mixture from the food processor into the large bowl with the peanut butter, and stir to combine. Fold in the dates and golden raisins.
  • Using wet hands, roll the mixture into 12 balls (slightly smaller than the size of a golf ball) and place on a large plate or cutting board. Make sure to pack the mixture tightly. Place the trail mix bites in the fridge for at least one hour to harden, then enjoy. They should last for about one week in the fridge.
