HASH BROWN BREAKFAST CASSEROLE

This is an awesome breakfast casserole that is prepared ahead. It is easy and different. I found it in the December 2003 Southern Living magazine. We have had it for Christmas morning breakfast two years running. It's a hit at our house!

Provided by Sheri in Georgia

Categories     Breakfast

Time 1h15m

Yield 8 serving(s)

Number Of Ingredients 9

1 lb ground sausage ("hot" or "sage" flavored)
1/4 cup chopped onion
2 1/2 cups frozen cubed hash brown potatoes
5 large eggs, lightly beaten
8 ounces shredded sharp cheddar cheese (2 cups)
1 3/4 cups milk
1 cup baking mix
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook sausage and onion in large frying pan over medium-high heat for 5 minutes or until meat crumbles.

  • You can also keep the casserole warm until you are ready to eat by covering it with foil and putting it in a 200 degree oven.
  • Optional toppings: sour cream, favorite sauce of your choice (picante, hot sauce) You can also garnish it with parsley.

PAULA'S FABULOUS POTATO SALAD

Paula's Fabulous Potato Salad image

I have been making this recipe for many years. We originally got it from the owner of a German Deli. It called for 20 pounds of potatoes and served 60. The most important part is the marinade. I usually let it soak overnight. I add chives, fresh dill, celery seed depending on my mood.

Provided by Prrs4me

Categories     Low Protein

Time 20m

Yield 8 serving(s)

Number Of Ingredients 11

3 lbs potatoes
1/2 onion, finely chopped
1/4 cup sugar
1/2 teaspoon salt
1/4 cup white vinegar
3/8 cup water
2 stalks celery, chopped
1 pinch dill weed, fresh
1 cup mayonnaise
1/4 cup Dijon mustard
salt and pepper, to taste

Steps:

  • Slice potatoes thin and boil until almost tender.
  • While potatoes are boiling combine sugar, salt, white vinegar and water in saucepan. Bring to a boil stirring occasionally. As soon as potatoes are done, drain and put into large bowl. Immediately pour hot marinade over potatoes. Sprinkle with salt and pepper. Let potatoes marinate several hours or over night turning frequently.
  • Drain and add celery, dill, onion. Add Mayo and Dijon mustard until desired consistency. You may not have to use all the mayo or you might need more.
  • For German potato salad do not add Mayo, add cooked and crumbled bacon.
  • For egg potato salad add quartered eggs before adding mayo. Save one egg to slice for the top.
