Steps:
- Mix the shredded cheese together with the pimientos. Stir in the mayonnaise.
- With a metal spoon (pimientos will stain plastic or wood), stir until the mixture is well blended.
- Add salt and pepper to taste and stir again. Keep covered in the fridge until ready to use.
- Serve with corn chips or bread.

PAULA DEEN'S PIMENTO CHEESE
This Southern classic is adapted from a recipe by Paula Deen, the television chef, cookbook author and restaurateur, but pimento cheese has long been indispensable for parties, gatherings and afternoon feasts. The heat from the garlic powder and grated onion cuts through the creaminess of the cheese and mayonnaise, and the pimentos give it an unforgettable punch. Serve it with celery, or spread on your favorite crackers or sandwich bread. It's a creamy, cheesy crowd-pleaser.

- Using an electric mixer, beat cream cheese until smooth and fluffy. Add remaining ingredients and beat until well blended. Add more mayonnaise as needed to make mixture hold together. Add salt and pepper to taste (it should be quite peppery) and use as a sandwich spread or a filling for celery sticks. Can be refrigerated up to 3 days.

PAULA DEEN'S MAC AND CHEESE
There is another recipe on Recipezaar for Mac and Cheese from Paula Deen that is a bit different than this. This version has more cheese and I prefer it.

Steps:
- Preheat oven to 350 degrees.
- Lightly butter an 8x12" baking dish.
- In a pot of boiling salted water, cook the macaroni until al dente. Drain, transfer to a bowl.
- Add two cups of the cheese and toss until melted.
- In another bowl, whisk the eggs with the sour cream.
- Add the milk, butter, and 1/2 teaspoons salt.
- Stir the mixture into the macaroni and pour it into the prepared baking dish.
- Sprinkle the remaining cheese on top.
- Bake for 35 minutes, until bubbling and cheese is melted.
- Let the macaroni and cheese stand for 15 minutes before serving.
BOBBY'S PIMENTO CHEESE
Courtesy of Paula Deen. I made this and took it to a family gathering and they gobbled it right up. They ate it on sandwiches, on crackers, with fritos and even as a topping on a grilled black bean burger.

PAULA'S CHEESE BALL (BY PAULA DEEN)
This wonderful recipe was featured during Paula's recent television appearance on Oprah's show --- I made it recently but added in 2 scant teaspoons fresh minced garlic and Tabasco, I also increased the nuts for the outside of the ball, this may be made up to 24 hours in advance, try this, you will love it! :)

Steps:
- Place the cream cheese and milk in a bowl; beat until well combined.
- Add in shredded cheese, onions, pimento and HALF of each, crumbled bacon and chopped pecans; mix to combine.
- Season with salt and black pepper.
- Transfer the mixture to a large piece of plastic wrap, then form into a ball; cover tightly and chill a minimum of 2 hours.
- In a pie plate mix together the remaining chopped pecans and bacon, then mix in the parsley and poppy seeds.
- Unwrap the cheese ball then gently roll into the nut mixture.
- Wrap again in a clean piece of plastic wrap and chill up to 24 hours.
