PAULA DEEN'S ORANGE BROWNIES

Yummy brownie-textured bars with great orange flavor. And they are frosted, too, for extra orange zing!

Number Of Ingredients 12

1 1/2 cups flour
2 cups granulated sugar
1 teaspoon salt
1 cup butter, room temperature
4 eggs
2 teaspoons pure orange extract
1 teaspoon grated orange zest
1 (8 ounce) package cream cheese, room temperature
4 tablespoons softened butter
1 (1 lb) box confectioners' sugar
2 tablespoons orange zest
2 tablespoons orange juice

Steps:

  • Preheat oven to 350 degrees F. Grease a 9 x 13-inch pan.
  • To make the brownies, stir together flour, granulated sugar, and salt in a bowl. Add butter, eggs, orange extract and orange zest. Using a hand-held electric mixer, beat until well blended.
  • Pour batter into prepared pan and bake in preheated oven for 30 minutes, or until light golden brown and set.
  • Remove from oven, allow to cool and pierce entire cake with a fork. Spread the Orange Cream Cheese Frosting over completely cooled brownies. Cut into squares.
  • To make the frosting, whip the butter and cream cheese together in a large mixing bowl, using a hand-held mixed. Gradually beat in the confectioners' sugar until it is all combined and smooth. Beat in the orange zest and juice. Spread over browwnies.

These brownies have Andes mints in the middle layer of the brownie. The bottom and top layers are a fudgy delight! The combo is heaven! Got this recipe from Paula Deen's Chocolate Celebration from her special collection magazines.

1 1/2 cups butter, melted
1 cup unsweetened cocoa powder
3 cups sugar
4 large eggs
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon vanilla extract
3 (4 2/3 ounce) boxes unwrapped Andes mints candies

Steps:

  • Preheat oven to 350 degrees F. Line a 13X9 inch baking pan with heavy duty aluminum foil. Lightly grease the foil.
  • In a medium bowl, combine melted butter and cocoa, stirring well. Set aside.
  • In a large bowl, beat sugar and eggs at medium speed with and electric mixer until fluffy, about 5 minutes. Slowly beat in butter mixture.
  • Add flour, salt, and vanilla, beating until just combined. Spread half of the chocolate mixture into the prepared pan. Place mints, side by side, in an even layer over chocolate mixture. Carefully spread remaining chocolate mixture over mints, sealing edges. Bake for 35 minutes. Let cool completely. Cut into squares to serve.

Found this recipe off of the Food Network website from Paula's Home Cooking. They look and sound wonderful. Depending on what kind of brownie mix you use- adjust egg, water and oil.

1 (17 5/8 ounce) package brownie mix with walnuts
vegetable oil cooking spray
3 (6 ounce) chocolate bars with almonds and toffee (recommend Symphony brand)
1 egg
1/4 cup water
1/4 cup oil
Cool Whip (to garnish) (optional)

Steps:

  • Prepare the brownie mix according to package directions.
  • Line a 13 by 9-inch cake pan with aluminum foil and spray with vegetable oil cooking spray. Spoon in half of the brownie batter and smooth with a spatula or the back of a spoon. Place the candy bars side by side on top of the batter. Cover with the remaining batter.
  • Bake according to package directions. Let cool completely, then lift from the pan using the edges of the foil. This makes it easy to cut the brownies into squares.

4 ounces unsweetened baking chocolate
1 cup unsalted butter
4 large eggs
2 cups granulated sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup flour
1/2 cup unsalted butter, softened
2 cups sifted confectioners' sugar
4 tablespoons green creme de menthe (or use green food coloring plus a dash of peppermint extract)
6 ounces semi-sweet chocolate chips
6 tablespoons unsalted butter

Steps:

  • Preheat oven to 350 degrees.
  • Mist 9x13 baking pan with cooking spray.
  • Prepare brownies: In double boiler, melt baking chocolate and 1 cup butter over simmering water; cool slightly.
  • In medium mixing bowl, beat eggs with a whisk until blended, then add the 2 cups granulated sugar and continue whisking until mixture is light and fluffy.
  • Add cooled chocolate mixture, salt, vanilla and flour.
  • Keep whisking until thoroughly blended.
  • Pour batter into prepared pan and bake 25 minutes.
  • Remove from oven and leave brownies to cool in pan.
  • Make filling: Using an electric mixer on medium speed, beat the 1/2 cup butter and confectioners' sugar together until well blended.
  • Stir in the creme de menthe and blend well.
  • Spread over cooled brownies.
  • Refrigerate in original baking pan until filling is firm.
  • Make icing: Melt the chocolate chips and 6 T butter in the top of a double boiler, stirring until smooth. (You can do this in the microwave, just monitor closely and stir a few times.).
  • Pour the warm glaze over the filling and tilt pan to distribute the icing evenly.
  • Refrigerate until chocolate hardens.
  • To cut, allow brownies to come to room temperature in the pan so chocolate doesn't crack.

1 (14 ounce) package caramels, unwrapped
1 (5 ounce) can evaporated milk
1 cup butter
8 (1 ounce) unsweetened chocolate squares
2 cups brown sugar
1 1/4 cups sugar
5 eggs
2 cups flour
1 teaspoon vanilla extract
1 cup chopped salted peanuts
caramel sauce, for topping (optional)

Steps:

  • Preheat oven to 350 degrees. Line 9x13 pan with foil and grease.
  • Melt caramels with milk over low heat, stirring occasionally. Set aside.
  • Melt chocolate and butter over low heat, stirring occasionally. Let cool.
  • Beat sugars and eggs on medium-high speed until fluffy. Gradually beat in flour and vanilla. Stir in chocolate.
  • Pour half the batter into pan, top with melted caramels, sprinkle with chopped nuts, and pour the rest of the batter over top the nuts.
  • Bake at 350 degrees for 35-40 minutes, cool and drizzle with caramel sauce if you want to.
