Steps:
- Heat oil in a large soup pot, add the ham hock and sear on all sides for 4 minutes. Add the onion, celery, green pepper, and garlic, cook for 4 minutes. Add the black-eyed peas, stock, bay leaves, thyme, and seasonings. Bring to a boil, reduce the heat and simmer for 40 minutes, or until the peas are creamy and tender, stir occasionally. If the liquid evaporates, add more water or stock. Adjust seasonings, and garnish with green onions. Serve over rice.

Steps:
- Combine seasoning mix ingredients in a small bowl and set aside.
- Place bacon in a large ovenproof pot and cook over high heat until bacon begins to brown, about 6 minutes.
- Stir in 2 cups onions, 1 cup peppers, 1 cup celery, 2 tablespoons plus 1 teaspoon seasoning mix, bay leaves, and half the peas.
- Cover and cook, stirring occasionally, for 10 minutes.
- Stir in the garlic and 2 cups stock.
- Scrape bottom of pot.
- Bring to a boil and cook, stirring occasionally, about 20 minutes.
- Add 1 cup stock and scrape bottom of pot.
- Add sausage, 6 cups stock, remaining onions, remaining peppers, remaining celery, remaining peas, and remaining seasoning mix.
- Cover and bring to a boil over high heat.
- Reduce heat to low, cover, and simmer until peas are tender, about 1 1/4 hours.
- Preheat oven to 350°.
- Stir in rice and remaining stock.
- Bring to a boil over high heat.
- Cover pot and bake in oven 15 minutes.

This is a traditional dish in the Southern U.S. It's supposed to bring prosperity and good luck to eat it on New Year's Day. This version is based on the one in the 1975 edition of Joy of Cooking, but I've tweaked it a little bit.

Steps:
- Boil the black-eyed peas for two minutes, then remove from heat and set aside for 1 hour.
- Add the onion, garlic, black pepper, crushed red pepper, and bay leaf.
- Bring to a boil, cover, and simmer 1 hour, stirring occasionally.
- Stir in the salt pork and simmer 1 more hour, uncovered, stirring frequently.
- Meanwhile, prepare the rice as directed on the package.
- Remove the salt pork and the bay leaf from the beans.
- Stir in Tabasco sauce.
- Serve over rice.

Steps:
- Boil the peas and thyme until the peas have split.
- Drain, reserving about a quarter cup of water with the peas.
- In a heavy-bottomed pot, fry up the bacon until just crisped and remove with a slotted spoon.
- In the same pot, add the onion, garlic and chourico, cook until golden and the chourico is just browned.
- While this is going on, boil the rice in plenty of well-salted water until tender.
- Drain and keep ready.
- Drain off most of the fat. Add the peas and water, stir and cover a few minutes.
- Add the cooked rice and reserved bacon and mix well.
- Cook over lowest heat until nearly dry.
- Take care not to scorch the mixture.
- Adjust the seasoning with salt, pepper and the tabasco.
