Time 45m

Yield 4

Number Of Ingredients 9

8 medium slices sweet onion (such as Vidalia®)
1 tablespoon balsamic vinegar
1 pound extra-lean ground beef
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 serving cooking spray
8 (1 ounce) slices rye bread
3 tablespoons Dijon-mayonnaise blend (such as Hellman's® Dijonnaise™)
1 cup shredded reduced-fat Jarlsberg cheese

Steps:

  • Arrange onion slices on a plate and drizzle vinegar over top. Divide beef into 4 equal portions, shaping each into a 1/2-inch thick patty. Season patties with salt and pepper.
  • Heat a large grill pan over medium heat. Coat the pan with cooking spray and add onion. Cover and cook for 6 minutes, flipping halfway. Remove from pan, cover, and keep warm.
  • Heat the grill pan over medium-high heat. Coat with more cooking spray and add patties. Cook until no longer pink in the centers, about 3 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Remove patties to a plate, drain and discard any grease, and wipe the pan clean with a paper towel.
  • Spread Dijon-mayonnaise blend evenly over all bread slices. Layer 4 of the slices with 2 tablespoons Jarlsberg cheese, 1 beef patty, 2 onion slices, and 2 tablespoons Jarlsberg. Place remaining bread slices mustard-side down on top of the sandwiches.
  • Heat the grill pan over medium heat and coat with cooking spray. Add sandwiches to the pan and place a cast iron or other heavy skillet on top, pressing gently to flatten sandwiches. Cook until bread is toasted, about 3 minutes per side, leaving the skillet on top as they cook.

PATTY MELTS

Patty Melts image

As great dinner sandwiches go, it is hard to beat patty melts: ground beef, Swiss cheese and caramelized onions griddled on rye bread until they become crisp, oozing packages of salty-sweet delight. This recipe for them, which riffs on the ones served at Tiny Naylor's drive-in restaurant in Los Angeles in the 1950s, is about as traditional as you can get - luscious enough that they don't require condiments. Between the butter and the onions and the cheese, the sandwiches makes their own. Undercook the burger patties slightly before assembly, so they finish while you're griddling the sandwiches at the end.

Provided by Sam Sifton

Categories     sandwiches

Time 1h

Yield 4 servings

Number Of Ingredients 6

4 to 6 tablespoons unsalted butter
2 large onions, peeled and thinly sliced
Kosher salt and freshly ground black pepper to taste
1 1/2 pounds ground beef, at least 20 percent fat
8 slices seeded rye bread
8 slices Swiss cheese, approximately 1/2 pound

Steps:

  • Caramelize onions. Melt 2 tablespoons of the butter in a large skillet set over high heat. When it foams, add the onions and sprinkle with salt. Do not stir immediately. Wait 1 minute, then begin to stir frequently over high heat for 5 minutes or so, or until the onions have released some liquid and started to become translucent.
  • Reduce the heat to medium, and cook, stirring often, for what will seem like a very long time, until the onions are fully melted and dark golden brown, approximately 30 to 40 minutes. Remove onions, and set them and the skillet aside. (You can caramelize the onions a day ahead of time and reheat slowly when you're ready to cook.)
  • Cook the burgers. Add the remaining butter to the skillet in which you cooked the onions, and place it over medium heat. Gently divide the ground beef into 4 small piles, and then lightly form these into patties that are like flattened meatballs, roughly the shape of a slice of rye bread. Season aggressively with salt and pepper.
  • Increase the heat under skillet to high. Put the patties into the skillet with plenty of distance between them, and allow them to cook, without moving, for approximately 2 minutes. Use a spatula to turn the patties over, and continue to cook for another 2 to 2 1/2 minutes, then remove the patties from the skillet, and allow them to rest. (They will at this point be rare inside.)
  • Decrease the heat below the skillet to medium, and put four pieces of rye bread into the butter and fat that remains from cooking the patties. Top each piece with a slice of cheese, then a patty, then some of the caramelized onions, and finally another slice of cheese and another slice of rye. Use the spatula to press down on the packages, and after about a minute or so, carefully turn over each patty to begin to brown the other side. (You may need to add the additional butter.) Cook until the cheese is fully melted and the bread is golden brown and crisp on both sides. Slice in half before serving.

DINER-STYLE PATTY MELT

Diner-Style Patty Melt image

This classic diner mash-up of a grilled cheese sandwich and a hamburger is stuffed with thick, sweet rings of pan-seared onion.

Provided by Anna Stockwell

Categories     Sandwich     Dinner     Hamburger     Onion     Cheese     Cheddar     Sauté     Lunch     Cook Like a Diner     Sugar Conscious     Peanut Free     Tree Nut Free     Soy Free

Yield 4 servings

Number Of Ingredients 8

1 pound ground beef chuck (20% fat), or 4 vegetarian patties such as Lightlife Plant-Based Burgers
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
8 slices rye bread
2 tablespoons vegetable oil, divided
1 large onion, sliced into 1/4" rounds
8 thin slices cheddar, American, or Swiss cheese
8 teaspoons mayonnaise, divided

Steps:

  • Season beef with salt and pepper; divide into 4 patties. Form each patty into a thin oval that is slightly larger than a slice of bread you're using.
  • Heat 1 Tbsp. oil in a large skillet or griddle, preferably cast iron, over medium-high. Cook onion slices in a single layer, being careful not to let rings separate, until softened and charred, about 4 minutes per side. Transfer to a plate and divide into individual rings.
  • Add remaining 1 Tbsp. oil to skillet. Working in batches if needed, cook patties, pressing flat with a spatula, until browned but still pink in the center, about 1 1/2 minutes per side. Transfer to a plate.
  • Wipe out skillet and reduce heat to medium-low. Top each slice of bread with 1 cheese slice, 1 patty, one-quarter of the onions, another slice of cheese, then a second slice of bread. Spread tops of each sandwich with 1 tsp. mayonnaise. Working in batches if needed, cook sandwiches, mayo side down, spreading the top of each sandwich with 1 tsp. mayonnaise, until golden brown, about 3 minutes. Flip and continue to cook until bread is golden brown and cheese is melted, about 3 minutes.

Time 30m

Yield 2

Number Of Ingredients 6

2 thick slices raw yellow onion
1/2 teaspoon vegetable oil
2/3 pound freshly ground beef
Kosher salt and freshly ground black pepper
4 slices rye bread
4 slices American or Swiss cheese

Steps:

  • Light a large chimney 2/3 full of coals and burn until coals are covered in gray ash. Spread evenly over 1/2 of coal grate. Place cooking grate above, cover grill, and preheat for 5 minutes. Scrape grill grates clean with a brush. Rub onion evenly with oil. Form beef into two even patties about 5 inches wide and 1/2-inch thick. Season onions and beef on all sides with salt and pepper.
  • Grill onions and beef over hot side of grill until well-charred on first side, about 2 minutes. Flip and cook until charred on second side, about 2 minutes longer. Center of burger patties should register around 110°F on an instant-read thermometer. Transfer to cool side of grill.
  • Place bread slices along center of grill and cook, turning occasionally, until lightly toasted on first side, about 2 minutes. Flip bread slices so toasted side is up and place 1 slice of cheese each on two of them. Place burger patty on top of cheese. Top with onion, another slice of cheese, and remaining slices of bread, toasted side facing in.
  • Cover and cook, opening cover every minute or so to turn sandwiches until well-toasted on both sides and center of beef registers 130 to 140°F. Remove from grill, allow to rest for five minutes, then serve.

PATTY MELTS

Patty Melts image

Really good with fries and slaw. ETA: I really like the finished sandwich fried like a grilled cheese. When I make them that way I toast my rye on the bagel setting, assembling the sandwich "toasted side in". I also add Thousand Island Dressing on top of the onions. Then butter the bread and fry "like a grilled cheese sandwich". Nirvana!

Yield Serves 6

Number Of Ingredients 7

1 lb (500 g) ground chuck
1 lb (500 g) ground sirloin
Kosher salt and freshly ground pepper
12 slices rye bread
6 tablespoons (3 oz/90 g) unsalted butter, melted
2 sweet onions, thickly sliced
6 slices good-quality Swiss cheese such as Gruyère or Comté

Steps:

  • 1. Prepare a charcoal or gas grill for direct grilling over high heat. Brush and oil the grill grate.
  • 2. In a large bowl, using a spoon, not your hands, gently mix together the chuck and sirloin. Run your hands under cold water and divide the mixture into 6 equal portions. Shape each portion into a patty about the size and shape of a slice of bread, being careful not to compact the meat too much. Season on both sides with salt and pepper. Make a depression in the center of each patty with your thumb. Refrigerate the patties until the grill is ready.
  • 3. Brush both sides of each bread slice with the butter.
  • 4. Place the patties, indent side up, and onion slices on the grill directly over the fire. Cook, turning once, until both the patties and the onions are nicely charred on both sides and the burgers are cooked to your liking, 4-5 minutes per side for medium. During the last 2 minutes of cooking, top each patty with a slice of cheese and put the bread slices along the edge of the grill, then cover the grill. Grill, turning the bread slices once, until the cheese is melted and the bread is lightly toasted.
  • 5. Place each burger on a slice of toasted rye. Toss the onion slices to break up the rings, and divide evenly among the burgers. Top each burger with a second slice of toasted bread and serve at once.

  • Oven preparation: Preheat oven to 350°F. Line a large baking sheet with parchment paper. Arrange the bacon on the baking sheet, without overlapping. Cook the bacon for approximately 25-30 minutes, or until it’s cooked and crispy. Remove the bacon from the oven, transfer to a pan or plate lined with a paper towel.
  • Add 1 tbsp. butter to a large, non-stick skillet. Heat the butter over medium heat. When the butter is melted and foamy, add the onions. Cook the onions gently for 10-15 minutes, depending on how you like them. Stir the onions only occasionally at first, but as they get going, stir them frequently to prevent burning. Remove the onions from the heat.
  • In a large bowl combine the ground beef, salt, Worcestershire sauce, onion powder and black pepper. Mix the ground beef with your hands just enough to combine well. Try not to overwork the meat to avoid tough, dry patties.
  • Grill the patties over moderate-high heat, flipping occasionally. How long to grill will depend on how you like your burgers. For medium it will take approximately 7-10 minutes. Remember that the internal temperature will rise a little bit as they rest.
