PATSY'S CAULIFLOWER SALAD
A very delicious, mayonnaise-based cauliflower salad. Mom's been making it for over 30 years. It wows everyone who tastes it. Don't bring it to your next potluck unless you plan on bringing it every time.

- Combine cauliflower, green onions, and radishes in a large bowl. Whisk mayonnaise, sour cream, Parmesan cheese, and garlic powder in another bowl; fold mayonnaise mixture into vegetables. Refrigerate until chilled.

CAULIFLOWER "POTATO" SALAD

Steps:
- Bring a pot of salted water to a boil. Add the cauliflower florets to the boiling water and cook until tender, 5 to 7 minutes. Drain well and cool to room temperature.
- Add the mayonnaise, mustard, vinegar, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large mixing bowl and whisk to combine. Then add the cooled cauliflower, pickles, dill, eggs, celery and shallot. Mix until thoroughly combined. Serve at room temperature or cover and store in the refrigerator until ready to serve.

Steps:
- Wash the cauliflower and place in a two quart saucepan.
- Season and cover.
- Heat the pan over medium flame for 5 minutes.
- Reduce heat to low and cook for 15 minutes.
- Cool.
- Add the apple, celery and scallions to the cauliflower.
- Add the salad dressing and chill before serving.

Steps:
- In skillet over medium heat, toast bread crumbs in melted butter until golden brown.
- Remove from skillet and place on paper towel to drain& cool.
- Place lettuce in large salad bowl.
- Combine mayonnaise, Parmesan cheese, lemon juice and garlic and mix well.
- Pour dressing over lettuce and toss well to coat lettuce.
- Grate or finely chop Cauliflower and sprinkle it on top of the lettuce, and add salt and freshly ground black pepper to taste.
- Sprinkle toasted bread crumbs on top of salad.
- Serve immediately -- if you are making this salad ahead of time do not add the bread crumbs until ready to serve as they may get soggy.
