1 cup yogurt
3 cups iced water
Salt and pepper to taste
1/2 cup yogurt
2 1/2 tablespoons sugar
2 cups iced soda
1 cup pureed mango

Steps:

  • Salted Version: Beat yogurt until smooth and gradually stir in iced water. Season with salt and pepper.
  • Sweet Version: Beat yogurt with sugar until smooth and gradually beat in iced soda and pureed mango. (Drink will froth up like a milk shake.)

P'at Lassi (Indo-Korean Yogurt Drink) image

P'at is the Korean name for the azuki bean, the source of the "sweet red bean paste" often used in Asian desserts. They have a delicious rich flavor which I find matches well with the creaminess of an Indian-style lassi. You should be able to find canned sweetened azuki beans at any Asian supermarket. "Plain" yogurt in Korea always has sweeteners added, if using the more natural type, you may wish to add a touch more sugar to this, depending on the sweetness of the azuki beans.

1/2 cup canned sweetened azuki beans (paste is OK, use a bit less)
1/2 teaspoon cinnamon
400 g sweetened plain yogurt
1 cup soymilk or 1 cup skim milk
water (optional)

Steps:

  • Pour all ingredients into a blender, starting with the beans at the bottom.
  • Blend thoroughly, making sure beans are chopped up and well incorporated.
  • If the mixture is too thick, blend in small amounts of water until desired thickness is reached.

Lassi or yogurt drink is an authentic drink from the State 'Punjab' in India. The people there welcome guests with a large glassful of lassi. Lassi is a healthy drink and is useful for digestion. I am providing two recipes here - one sweet and the other salted lassi. It's super simple to prepare.

2 c plain yogurt or plain curd
2 Tbsp sugar
1 tsp salt
1 tsp roasted cumin
1/2 c water, cold

Steps:

  • 1. For the sweet lassi, whip in a mixer grinder, 1 cup yogurt, sugar and 1/4th cup water till a nice froth surfaces. You can also add ice if you would like it really cold before whipping [as we do it here in Delhi].
  • 2. Pour in a glass and enjoy the sweet lassi with a dash of lemon.
  • 3. For the salted lassi, whip in a mixer grinder, 1 cup yogurt, salt and 1/4th cup water till a nice froth surfaces. You can also add ice if you would like it really cold before whipping [as we do it here in Delhi].
  • 4. Pour in a glass and garnish with roasted and pounded cumin seeds.

A recipe I came across while searching for recipes of India and it is from "whats4eats.com". Here is what is stated: "Lassi is a cooling yogurt beverage originally from the northern part of India. Traditionally lassi is unsweetened and has a pinch of salt and some spices mixed in. More recently, sweetened fruit lassis have become very popular drinks, both in India and around the world."

1 1/2 cups yogurt
3 tablespoons cream (optional)
1 tablespoon rose water (optional)
1/2-1 cup fruit, of your choice chopped
5 -6 tablespoons sugar
9 -10 ice cubes

Steps:

  • 1.Place all ingredients except the ice cubes in a blender and blend until smooth.
  • 2.One by one, add the ice cubes and blend further until they are broken down into a slush.
  • 3.Serve in a tall, cold glass on a hot, hot day.
  • Variations.
  • •Plain Lassi: eliminate the sugar, fruit and rosewater. Substitute a pinch of salt and some toasted cumin seeds.
  • •Bhang Lassi: a traditional lassi with cannabis extract and ground almonds. Used in the religious festival of Holi.
  • •Good fruit choices are mangoes, papayas, strawberries and melons. Or try using lemon or lime juice. You can use anything you like really.
  • •Add a pinch of ground cardamom, a few strands of saffron or some chopped mint if you like.
