- Preheat the oven to 350 degrees F. Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Meanwhile, make the filling: Heat the olive oil in a large skillet over medium-high heat. Add the meat and cook, breaking it up with a wooden spoon, until browned, about 5 minutes. Add the onion and cinnamon and cook until the onion is soft, about 5 more minutes. Add the Worcestershire sauce and wine and cook until the wine starts to evaporate, about 2 more minutes. Add the tomato sauce, 2 cups water, 1 teaspoon salt and 1/4 teaspoon pepper and bring to a simmer. Stir in the parsley and cook, stirring occasionally, until slightly thickened, about 20 minutes. Stir in 1 tablespoon breadcrumbs and remove from the heat.
- When the pasta is done, drain and return to the pot off the heat; stir in the butter, then the beaten eggs and 1 cup cheese until the pasta is coated.
- Brush the bottom and sides of a 9-by-13-inch baking dish with olive oil. Spread half of the pasta in the dish, then top with the meat filling and the remaining pasta.
- Make the bechamel: Melt the butter in a medium saucepan over low heat. Whisk in the flour and cook, whisking, 1 minute. (Do not let the flour brown.) Whisk in the yogurt and 3/4 cup water and gently simmer, whisking, until slightly thickened, about 5 more minutes. (Do not let the mixture boil.) Remove from the heat and whisk in the eggs, nutmeg and 1/4 teaspoon salt.
- Pour the bechamel evenly over the pasta in the baking dish. Sprinkle with the remaining 1 cup cheese and 1 tablespoon breadcrumbs and bake until golden, 40 to 45 minutes. Let rest 10 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add ziti and cook until tender yet firm to the bite, 8 to 10 minutes.
- Melt butter until golden brown and pour over ziti, add Parmesan cheese, nutmeg, salt, and pepper. Toss well. Cool briefly. Add eggs and toss again; set aside.
- To make meat sauce: Gently fry onion and garlic in butter in a skillet until onion is soft, 3 to 5 minutes. Increase heat and add ground beef; stir well. Cook until meat begins to brown, about 5 minutes. Add tomato paste, wine, broth, parsley, salt, and pepper. Cover and simmer over low heat for 20 minutes.
- To make cream sauce: Melt butter in saucepan, stir in flour and cook gently for 2 minutes. Pour in milk all at once and bring to a boil, stirring constantly. Boil gently for 1 minute. Add nutmeg, salt, and pepper. Cool slightly before stirring in beaten egg. Transfer 1/2 cup of this sauce to the meat sauce.
- To assemble pastitsio: Grease a 9x13-inch baking dish. Spoon half of the prepared ziti evenly in the bottom and top with meat sauce. Top with remaining ziti. Pour on cream sauce and spread to completely cover ziti. Sprinkle Parmesan cheese on top.
- Bake in a preheated oven for 50 minutes or until golden brown. Let stand 10 minutes before cutting into squares.

- Parboil the pasta. Drain and put in the baking pan. You should toss it around in some butter, oil, or margarine to keep it from sticking. Then add a generous amount of grated cheese and toss. You also have the option of placing half the pasta in the dish, filling the middle layer with meat sauce, and adding more pasta on top. You also have another option of tossing the pasta and the meat sauce together and leaving it like that. Do whatever your heart desires. You may also toss in some egg whites. Beat them a bit with a fork, and then toss them around with your hands into the pasta mixture. They just do this so they don't waste the eggs. It really doesn't make it tastier or anything.
- For the meat sauce in a large pot, sauté the onion, garlic, and parsley in the oil until the onions turn translucent. Then add tomato paste (optional) and stir for a few seconds. Season with salt and pepper.
- Add chopped meat. Stir, let it release some juice. You could, at this point, add a splash of red wine for change in taste but it's really not necessary.
- Add the chopped tomatoes, cloves, and cinnamon, and let the tomatoes release some juice. Stir.
- Add the tomato sauce or crushed tomatoes and stir. Taste for salt.
- Add a cup or two of water, bring to a boil, reduce heat, and simmer on low for an hour and a half or until there is no water left in the pot.
- Now, as I said before, you have the option of layering the meat sauce, or mixing it in with the pasta.
- For the béchamel, in a saucepan on low heat, melt one stick and a half of butter.
- Gradually add flour and whisk until the roux forms a gunky ball and you can't stir anymore.
- Gradually add 6 cups of milk and the bouillon (if you want it). I'd say even 5 and 1/2, because I like my sauce really thick. Stir occasionally and make sure you whisk away the flour caught around the edges with a rubber spatula and whisk again. Once the sauce thickens, remove from heat. Add grated cheese, the egg yolks (slowly so they don't curdle while whisking very fast), the nutmeg. Add a pinch of salt (if necessary)and pepper. If you like creamy sauce, make it with the full six cups of milk.
- Make sure your pasta and meat sauce are at an even level in the pan, and then pour in the béchamel on top. Even it out with a spatula.
- You may top with more grated cheese, nutmeg, cinnamon, or even breadcrumbs.
- Bake in a 350 degree oven for about 40 minutes or until the top turns golden brown.
- Lastly and most importantly, let the pastitsio rest for an hour or two before eating. The béchamel has to set and solidify a little bit. If you don't wait, the sauce will gush out.

- Saute onion and beef together in a skillet. Drain excess fat after the beef is browned.
- Add the tomato sauce, salt, pepper, oregano, allspice and cinnamon into the meat and onions. Set aside to cool.
- Beat together one egg and milk, and stir into the uncooked macaroni, along with 1/4 cup of the Parmesan cheese.
- Place the macaroni mix into a greased 5 qt slow cooker.
- Whisk one egg into the tomato-meat sauce. Pour it over the macaroni in the slow cooker.
- Combine the two remaining eggs, flour and half and half in a bowl and whisk together well, Add the remaining 3/4 cup Parmesan cheese and whisk again.
- Gently pour the half-and-half mixture over the tomato sauce layer, trying not to disturb it if possible. Sprinkle with nutmeg.
- Cover and cook on Low for 4 to 5 hours, until macaroni is soft and sauce is bubbling around the edges. (Not sure how to check the macaroni when it's the bottom, but that's what she wrote!).

Steps:
- For the sauce, heat the olive oil over medium-high heat in a large pot. Add the onion and saute for 5 minutes. Add the beef and lamb, and saute over medium heat for 8 to 10 minutes, until it's no longer pink, crumbling it with the back of wooden spoon. Drain off any excess liquid, add the wine, and cook for 2 more minutes. Add the garlic, cinnamon, oregano, thyme, and cayenne, and continue cooking over medium heat for 5 minutes. Add the tomatoes, 2 teaspoons salt, and 1 teaspoon pepper and simmer, stirring occasionally, for 40 to 45 minutes. Set aside.
- Preheat the oven to 350 degrees F.
- For the bechamel, heat the milk and cream together in a small saucepan over medium-low heat until simmering. In a medium saucepan, melt the butter. Add the flour and cook over medium heat, whisking constantly for 2 minutes. Pour the warm milk and cream mixture into the butter and flour mixture, whisking constantly. Continue cooking, stirring occasionally, over medium heat for 5 to 7 minutes, until smooth and thick. Add the nutmeg, 1 teaspoon salt, and 1 teaspoon of pepper. Stir in 3/4 cup of Parmesan cheese, 1/2 cup of the tomato and meat sauce, and allow to cool for 10 minutes. Stir in the eggs and yogurt and set aside.
- Meanwhile, cook the pasta in a large pot of boiling water until al dente. Don't over-cook because the pasta will later be baked. Drain and set aside.
- Add the pasta to the meat and tomato sauce, and pour the mixture into a baking dish. Spread the bechamel evenly to cover the pasta and sprinkle with the remaining 3/4 cup Parmesan cheese. Bake for 1 hour, until golden brown and bubbly. Set aside for 10 minutes and serve hot.

- Melt 1 tablespoon of butter in a large skillet over medium-high heat. Stir in onion and cook until it begins to soften, about 3 minutes. Stir in the ground beef, and cook until crumbly and no longer pink. Pour in the water and tomato paste. Season with salt, pepper, allspice, nutmeg, and cinnamon; cover, and simmer for 5 minutes. Remove from heat, adjust salt to taste, then refrigerate until cold. Once cold, remove any congealed fat, and thoroughly mix with 2 beaten eggs, and set aside.
- Preheat oven to 400 degrees F (200 degrees C).
- Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain, and rinse under cold water to cool. Mix the macaroni in 2 beaten eggs until well coated.
- Evenly spread half of the macaroni mixture into a 11x14x2 inch baking pan, sprinkle with 1/2 cup of the grated parmesan cheese, and drizzle with 1/2 cup of melted butter. Spread the meat mixture overtop, then finish with the remaining macaroni. Sprinkle the macaroni with another 1/2 cup of Parmesan cheese, and drizzle with 1/2 cup of melted butter.
- Whisk together 4 beaten eggs with the half-and-half, 1 cup of Parmesan cheese, flour, and salt; whisk until well blended. Pour the cream mixture evenly over top of the pastitsio, and sprinkle with nutmeg.
- Cover the pan with foil, and bake in the preheated oven for 15 minutes. Remove the foil, and bake until the top has turned golden brown, about 30 minutes. Remove from oven, and allow to stand for 15 minutes before serving.

- Heat the oven to 190C/170C fan/gas 5. Put the onions and oil in a large saucepan with the bouillon, bay leaves, the vinegar, garlic, oregano and cinnamon. Add a mug of water (about 250ml), then cover and simmer for 10 mins until soft. Uncover and cook for 10 mins more, stirring frequently. The water should evaporate after this time and the onions should be soft.
- Meanwhile, cook the pasta in a large pan of boiling water following pack instructions, or for 10 mins until al dente. Drain and set aside.
- Stir the tomatoes, tomato purée and the lentils, along with their liquid, into the onions. Stir well, then cover and simmer for 5 mins. Remove the bay leaves.
- To make the white sauce, pour the milk and 200ml water into a pan with the flour, whisk well to stop lumps forming and keep stirring until thickened, for about 8-10 mins.
- Stir the egg white into the pasta and spoon over the base of a baking dish. Top with the lentil mixture. Stir the egg yolk into the white sauce, then spoon on top of the lentils, scatter over the feta and oregano, then bake in the oven for 40 mins until bubbling.
- Serve half with the tomato and onion salad, and chill the rest for another day. Will keep chilled for up to two days. Reheat in the microwave on plates until piping hot.

- MEAT LAYER: Preheat oven to 350°F Melt butter in a large skillet over moderate heat. Add onion and garlic and saute' for 2-3 minutes. Add beef and seasonings. When meat is cooked thru, drain off fat, return to pan and add the olives, tomatoes, and white wine. Simmer uncovered about 15 minutes. Set aside to cool.
- PASTA: Cook pasta according to package directions. Mix remaining pasta ingredients and place in a large bowl. When pasta is cooked, drain and immediately stir into the large bowl, mixing well.
- BECHAMEL SAUCE: In a medium saucepan over moderate heat, melt butter. Add flour, salt, black pepper, and dry ground mustard. Stir for about 1 minute. Slowly wisk in half and half and chicken stock to incorporate. Stir constantly till thickened (about 5 minutes).
- Remove from heat. Add a little of the bechamel to the egg to temper it, then wisk egg mixture back into pot and add the parmesan cheese. Stir until well blended.
- ASSEMBLY: To a large loaf pan or a deep oven-proof casserole pan (10"), place half the pasta mixture. Pour 1 cup of the bechamel sauce over top. then place meat layer over top of that. Top that with another cup of the bechamel.
- Place remaining pasta over that, then the remaining bechamel. Sprinkle with paprika and parsley. Bake for 35-40 minutes. Allow to set for 10 minutes before slicing and serving.

- Preheat oven to 350°F.
- Melt 1 oz of butter in large skillet and saute onion til soft and transparent. Add the meat, cook until browned.
- Mix tomato paste with wine and add to meat. Continue cooking, adding nutmeg, salt, pepper, and cinnamon.
- Cook about 15 minutes, take off heat, cool and mix in half the breadcrumbs and half the grated cheese. Set aside. Do not allow meat to "bulk", keep it separated.
- Cook the macaroni in boiling water with oil til soft. Drain and set aside. Make crema: melt butter, add flour, cook briefly stirring constantly.
- Gradually add milk stirring constantly until it starts to boil and thickens slightly.
- Add seasonings.
- In a separate bowl, beat eggs.
- Add about 1 cup of the hot sauce to the eggs, stirring constantly.
- Add the egg mixture back into the saucepan, stirring constantly.
- Stir in 1/4 cup cheese. To Assemble: Grease a baking dish (LIKE A LASAGNA PAN) and sprinkle it with breadcrumbs.
- Spread half the cooked pasta over the bottom of the dish and sprinkle it with 1/4 cup reserved cheese. Spread all of the meat over the pasta.
- Pour half the sauce over the meat and spread the rest of the pasta over it. Sprinkle it with 2 tablespoons of cheese.
- Pour the rest of the sauce on top and smooth with a spatula.
- Sprinkle with the rest of the cheese and breadcrumbs and bake in the preheated oven 50-60 minutes.
- Let stand 10 minutes before cutting into squares.

- Preheat oven to 350°F In a large pot, heat oil over medium heat until shimmering. Add onion and saute until soft, 5 minutes. Add meats and saute until no longer pink, about 10 minutes, breaking it up into small pieces with the edge of a spoon. Add wine and cook 2 minutes to boil off some of the alcohol. Add garlic, cinnamon, oregano and thyme; cook 5 minutes. Add tomatoes (with their juices), salt and pepper; bring to a boil, reduce to a simmer and cook, uncovered, 45 minutes, stirring occasionally.
- In a medium saucepan, combine milk and cream. Heat to a bare simmer over medium-low heat.
- In another saucepan, melt butter. Whisk in flour and cook until pasty flavor is gone but roux is still pale, 2-3 minutes. Whisking constantly, add hot milk/cream. Cook 5 minutes, still whisking constantly, until thick and smooth. Remove from heat and add nutmeg, salt, white pepper, half the Parmesan, and 1/2 cup of meat sauce. Set aside to cool 10 minutes. Beat eggs lightly, then whisk yogurt into eggs. Whisk this mixture into cooled white sauce.
- Cook and drain pasta according to package directions.
- Combine pasta with meat sauce and pour into a large casserole dish. Pour white sauce evenly over the top, then sprinkle evenly with remaining Parmesan. Bake, uncovered, in preheated oven for 1 hour. Cool 10 minutes before serving. (Tastes even better the second day when the flavors have time to meld; reheat from room temperature in 350F oven for 15-20 minutes.).
