Number Of Ingredients 15

2 cups shortening
2 cups boiling water
5-1/2 to 6 cups all-purpose flour
2 teaspoons salt
FILLING:
6 medium red potatoes (about 3 pounds), peeled
2 small rutabagas (about 1-1/2 pounds), peeled
1 pound ground beef
1/2 pound ground pork
2 medium onions, chopped into 1/4-inch pieces
3 teaspoons salt
2 teaspoons pepper
2 teaspoons garlic powder
1/4 cup butter
Half-and-half cream or a lightly beaten large egg, optional

Steps:

  • In a large bowl, stir shortening and water until shortening is melted. Gradually stir in flour and salt until a very soft dough is formed; cover and refrigerate for 1-1/2 hours. , Cut potatoes and rutabagas into 1/8- or 1/4-inch cubes; do not make cubes too large or they will not cook properly. Gently combine ground beef and pork; break into small crumbles. In a large bowl, combine potatoes, rutabagas, onions, meat mixture and seasonings. , Divide dough into 12 equal portions. On a floured surface, roll out 1 portion at a time into a 8-in. circle. Mound 1-1/2 to 2 cups filling on half of each circle; dot with 1 teaspoon butter. Moisten edges with water; carefully fold dough over filling and press edges with a fork to seal. , Place on ungreased baking sheets. Cut several slits in top of pasties. If desired, brush with cream or beaten egg. Bake at 350° until golden brown, about 1 hour. Cool on wire racks. Serve hot or cold. Store in the refrigerator.

An old family recipe. This is a very plain, basic recipe of beef, potato, onion, salt & pepper in a flaky crust. My grandmother used to carry hers in her muff to keep her hands warm on the long walk to school in Iron Mountain, Michigan. Munch it plain or with brown gravy. If you must use ketchup, please don't tell me (yuk). Posted for my daughter. PS Pronounced 'pass-tee'. ('Paste-ees' are used in burlesque).

Number Of Ingredients 12

4 cups sifted flour
2 teaspoons salt
1 cup chilled shortening
1/2 cup lard or 1/2 cup chilled shortening
1/3-1/2 cup ice water
1 egg
1 tablespoon water
1 lb 90% lean ground beef, browned and drained well
3/4 cup onion, minced
3 cups raw russet potatoes, peeled, cut in 1/4-inch cubes
2 teaspoons salt
1/2 teaspoon pepper

Steps:

  • Crust:.
  • Pulse flour and salt in food processor; add shortening and lard. Pulse until it looks like coarse meal. Add 1/4 cup ice water, pulsing 10 times, then add 1 tablespoon at a time using only enough water for dough to just come together. (To make this the old-fashioned way: use 2 knives to cut shortening into flour; mix in water with a fork). OR substitute 2 packages refrigerated pie crust.
  • Pat dough into a disk, wrap in foil; refrigerate while making filling. (I don't know why foil, it's what my grandma used).
  • Filling:.
  • Cook the beef, drain and set aside. (You can substitute 1# leftover roast beef cut in 1/4" cubes, reduce seasonings).
  • Don't use food processor to cut potatoes or onions.
  • Cut the onions, place in strainer.
  • Cut the potatoes, add to onions, rinse and drain well. If you don't rinse them, the onion flavor will be too strong and the potatoes will discolor.
  • Combine filling ingredients adding salt and pepper.
  • Pre-heat oven to 450°F.
  • Break off a third of the dough, (return remaining dough to refrigeraor) shape into a ball and roll out on lightly floured surface into a 12" square.
  • Using a saucer, cut out 4 circles.
  • Brush the edges with glaze, spoon 1/3 cup of filling onto one half of the dough, avoiding the glazed edge.
  • Fold over the other half of the dough to encase the filling and make a half moon shape.
  • Dip a fork in flour and press the edges to seal.
  • Transfer to a greased baking sheet.
  • Brush with glaze.
  • Cut 3 slits in top of pastie to allow steam to escape.
  • Repeat with remaining dough circles.
  • Bake, 1 baking sheet at a time, uncovered 15 minutes at 450°F.
  • REDUCE heat to 350F and bake uncovered 30 minutes longer.
  • Repeat with remaining dough and filling.
  • Remember to increase oven temperature for next batch.
  • FOR APPETIZERS:.
  • Cut with a biscuit cutter. Fill and seal. Bake 10 minutes at 450F, then 20 minutes at 350°F.
  • TO REHEAT:.
  • Place in 350F oven 10 - 15 minutes for entree size; 5-10 minutes for appetizers.

3 quarts peeled and diced potatoes
1 1/2 quarts diced carrots
1 quart diced rutabaga
1 quart diced onions
1/4 cup very finely diced garlic
1 1/2 teaspoons seasoned salt
1 1/2 teaspoons salt
1 1/2 teaspoons ground black pepper
2 1/2 pounds ground grass-fed beef
2 1/2 pounds your favorite ground Italian sausage
3 1/2 quarts all-purpose flour (recommended: finely ground organic)
2 tablespoons salt
1 1/2 pounds butter flavored shortening
1 1/2 pounds white shortening
6 eggs
2 cups ice cold water
1/3 cup white vinegar
3 eggs, beaten
Flour, as needed

Steps:

  • For the filling: Add all ingredients for the filling into a large mixing bowl. Push the veggies into the meat until everything is mixed well. All of the veggies should bind together with the meat. If you have any loose veggies hanging out keep mixing and binding. Set aside until ready to build pasties.
  • For the crust: In a separate large mixing bowl, add the flour and salt. Combine together, and then add the 2 types of shortening. Break up the shortening while working it in with the flour. You want to have small, pea size pieces of shortening and flour combined yet not over mixed. In a separate bowl, blend the eggs, water, and vinegar. Add to the flour and mix and fold the contents together, gently pushing the flour and liquid mixture until they are together in a large dough consistency. Pick up the mix and continue to turn it over on top of the liquid and just push it down into the liquid not to over mix the dough. Cover the dough and chill it before rolling.
  • Preheat the oven to 325 degrees F.
  • Take a portion of the dough and lay on a floured counter. Roll out the dough to no more than 1/4- inch thickness. Roll out as big of a sheet as you are comfortable with; we use an 8-inch plate and cut out crusts for each pastie. After cutting the crust, work the scraps back into the next sheets. Do this as many times as it takes to use up all the dough. With a consistent thickness you should get about 25 crusts.
  • Once you have your crusts rolled out you can begin filling. Lay out your crusts and egg wash half of the inside crust. Lay 1 cup of filling in the center of each crust. Fold in half gently, careful not to tear the dough. After folding, use a fork to crimp the crusts. Place pasties on a lined baking sheet, poke fork holes on top to create air pockets, egg wash the top, and place in the oven. Bake until the crust is golden brown and an internal temperature is reached of 160 degrees F.

Made with leftover Savoury Mince, these delicious Beef Pasties are a quick and easy dinner the whole family will love.

1 tablespoon Olive Oil
1 Brown / Yellow Onion, diced
1 Carrot, peeled & diced
2 Celery Stalks, diced
2 Garlic Cloves, minced
500g / 1 lbs Beef Mince / Ground Beef
1 tablespoon All Purpose / Plain Flour
1 Potato, peeled & diced
1.5 cups Beef Stock
2 tablespoon Worcestershire Sauce
2 tablespoon Tomato Paste
1/4 cup Frozen Peas
3 sheets Frozen Puff Pastry
1 egg, lightly whisked

Steps:

  • Cook Savoury Mince following the instructions in this post.
  • Preheat the oven to 180C / 350F and a line two baking trays with baking paper or silicone mats.
  • Remove puff pastry sheets from the freezer, seperate and allow to thaw partially.
  • Use a round cookie cutter or a wide mouth mug to cut 4 rounds into each pastry sheet.
  • Spoon a tablespoon or so of savoury mince into the middle of each pastry round, brush the edges with the egg wash then bring the edges together to form a semi-circle. Crimp the edges together with your fingers to seal the filling inside.
  • Place pasties upright on the baking trays, and bake in the oven for 20 minutes, or until golden, puffy and cooked through.

PASTIES were a must years ago when men worked the mines in northern Michigan. The housewives made them in the morning and wrapped them tightly in newspaper so they would stay warm until lunch break. 3 cups cubed peeled potatoes
1 cup chopped carrots
1 medium onion, chopped
3/4 teaspoon salt
1/4 teaspoon pepper
1/2 pound ground beef
1/4 pound ground pork
1 tablespoon butter, melted
PASTRY:
4 cups all-purpose flour
1-1/4 teaspoons salt
1 cup shortening
3/4 cup cold water

Steps:

  • In a large bowl, combine the potatoes, carrots, onion, salt and pepper. Crumble beef and pork over potato mixture and mix well. Add butter and toss to coat; set aside. , For pastry, in a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Gradually add water, tossing with a fork until a ball forms. , Divide dough into five portions; roll each into a 10-in. circle. Place 1 cup of filling in the center of each circle. Fold pastry over filling and seal edges tightly with a fork; cut slits in the top of each. , Place on a greased baking sheet. Bake at 375° for 50-60 minutes or until golden brown.
