Number Of Ingredients 8

1 head plus 8 cloves garlic
1 pound spaghetti

FRESH TOMATO, BASIL, AND GARLIC SAUCE OVER ANGEL HAIR PASTA

Fresh Tomato, Basil, and Garlic Sauce over Angel Hair Pasta image

Provided by Food Network

Categories     main-dish

Time 48m

Yield 4 to 6 servings

Number Of Ingredients 11

2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

CARAMELIZED ONION PASTA

Caramelized Onion Pasta image

All you need for this tasty dinner is a bag of onions, garlic, some dried pasta, and cheese. Caramelizing sliced onions in a little butter and olive oil makes them become sweet and yielding, almost luscious. Pasta water and Parmesan do double duty, adding salt and depth while the creamy sauce forms.

Provided by Samantha Seneviratne

Categories     Pasta     Butter     Onion     Garlic     Parmesan     Cheese     Parsley     Kid-Friendly     Dinner     Small Plates

Yield 4 servings

Number Of Ingredients 10

2 Tbsp. extra-virgin olive oil
2 Tbsp. unsalted butter
2 lb. onions (about 3 large), thinly sliced
2 garlic cloves, thinly sliced
1/4 tsp. crushed red pepper flakes (optional)
1 1/2 tsp. kosher salt, plus more
12 oz. linguine or other long pasta
4 oz. Parmesan, finely grated (about 1 cup), divided, plus more for serving
½ cup parsley, finely chopped (optional), plus more for serving
Freshly ground black pepper

Steps:

  • Heat oil and butter in a large heavy pot or Dutch oven over medium until butter is melted. Add onions and garlic and cook, stirring occasionally, until very tender and deeply golden brown, about 30 minutes. (Stop before the onions become dry and shriveled.) Add red pepper flakes (if using) and 1 1/2 tsp. salt. Remove pot from heat.
  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Reserve 1 1/2 cups pasta cooking liquid.
  • Add pasta and 1 cup pasta cooking liquid to onion mixture and stir to combine. Add a small handful of cheese and stir until melted. Repeat with remaining cheese, adding more pasta cooking liquid as needed to create a glossy sauce that coats the pasta. Stir in parsley (if using).
  • Divide pasta among bowls. Top with Parmesan, parsley, and a few cranks of pepper.

QUICK AND AUTHENTIC PASTA POMODORO SAUCE

Quick and Authentic Pasta Pomodoro Sauce image

Light and easy to make with fresh tomatoes, this simple Southern Italian tomato sauce takes just 20 minutes to make and is a terrific base for many Italian dishes.

Provided by Heidi

Categories     Main Course

Time 20m

Number Of Ingredients 6

1 pound DeLallo dried pasta such as spaghetti or penne
1 pound medium size fresh tomatoes, such as campari or cocktail tomatoes
6 tablespoons DeLallo extra virgin olive oil (divided)
6 large fresh garlic cloves (of the same size, divided)
12-15 basil leaves
1 1/2 tablespoons kosher salt

Steps:

  • Begin cooking the pasta noodles in boiling water seasoned with 1 tablespoon kosher salt for approximately 5 minutes. *NOTE: Reserve 2 cups of the pasta water to add to the sauce later. While the pasta is cooking, start the sauce.
  • For the sauce, cut the tomatoes in half, then quarter the halves, and set aside. Heat 3 tablespoons of extra virgin olive oil in a large sauté pan over medium high heat, and add three of the garlic cloves to the oil. Tilt the pan so the garlic is immersed in the oil to flavor it as the garlic cooks. Cook until the garlic becomes fragrant and begins to color, then to avoid splatters, carefully add the tomatoes along with their juice to the flavored oil. Cook for 1-2 minutes, stirring and breaking apart the tomatoes as they cook. Pull out the garlic cloves and discard. Continue cooking the sauce for 6-8 more minutes where it will thicken and become creamy as it cooks. Tear the fresh basil leaves into pieces and add to the sauce when cooking is nearly complete.
  • As the pasta is cooking, heat the remaining olive oil in a large sauté pan over medium high heat with the remaining garlic. Cook until lightly browned and remove the garlic and discard. Carefully ladle 1 to 1/2 cups of the pasta water 1/4 cup at a time into the garlic infused oil. Transfer the noodles to the pan and continue cooking the pasta for 1-2 more minutes or until the water and oil is absorbed. Divide the noodles among four plates, and top with the sauce. Garnish with more fresh basil and finish with a drizzle of extra virgin olive oil before serving. Or, toss the noodles with the sauce and serve family style

3/4 cup unseasoned Panko breadcrumbs
1/4 teaspoon garlic powder
1 pound Mostaccioli

  • Cook the pasta according to package directions and drain thoroughly. Add the pasta to the meat sauce and stir to combine evenly.
  • : Add half of the pasta mixture evenly into the bottom of a 9×13 baking dish. Spread the ricotta cheese mixture evenly on top. Spread the remaining pasta on top. Sprinkle the buttered breadcrumbs evenly on top.
  • Cover the pan with foil and bake for 35 minutes. Remove the foil and bake for an additional 5 - 10 minutes until the breadcrumbs are golden brown.

ONE POT CREAMY GARLIC NOODLES

One Pot Creamy Garlic Noodles image

These One Pot Creamy Garlic Noodles are as easy as they are delicious! No creams or large amounts of butter, making this meal a winner all-around!

Provided by Erica Walker

Categories     Dinner     Main Course

Time 30m

Number Of Ingredients 10

4 Tbsp. butter (divided)
4-5 cloves garlic (minced)
28 oz chicken broth ((3 3/4 cups))
2 1/2 c. milk (add more if needed)
1 lb. linguini
kosher salt and black pepper (to taste)
1 tsp. basil
2/3 c. Parmesan cheese
4 c. broccoli (optional)
2 chicken breasts

Steps:

  • In a large, 5-6 quart skillet, heat 2 Tbsp. butter over medium heat. If you don't have a large skillet, a stock-pot works well, too. Add garlic and cook for about a minute.
  • Add chicken broth, milk, remaining 2 Tbsp. butter, pasta noodles, salt and pepper, and basil. Bring to a boil, stirring occasionally.
  • Once boiling, reduce heat to a simmer stirring occasionally for 16-20 minutes or until noodles have cooked through. If you are wanting to add broccoli, add it after about 10 minutes into the simmering process.
  • Stir in Parmesan when noodles are finished cooking and add a little milk if necessary if necessary to reach your desired consistency.

  • Pasta Alla Norma. Pasta Alla Norma is a typical dish from the Sicilian city of Catania incorporating traditional Mediterranean produce, namely eggplant/aubergine.
  • Bucatini all’Amatriciana. This most famous Roman dish was so named after originating in the town of Amatrice in the Lazio region. The original recipe was called Gricia (which is still prepared in central Italy), was not tomato-based as tomatoes had not been introduced into Italy at that stage.
  • Tagliatelle al Ragù Alla Bolognese/Lasagna. Spaghetti Bolognaise is probably the most popular pasta dish outside Italy. However, in Bologna, Ragù Alla Bolognese is always served with egg tagliatelle, which is better for holding the heavy meat sauce.
  • Spaghetti/Rigatoni Alla Carbonara. There are many hypotheses for the origins of this well-loved dish. The ingredients’ simplicity could mean that it was an easy dish for the charcoal makers “Carbonari” who spent long periods of time in the woods during the year.
  • Ragù Napoletano. Most Italian pasta sauces are ingenious in their simplicity; however, this cannot be said for Ragù Napoletano. This creamy, meaty sauce takes hours to cook, and many Neopolitan women cook it overnight, getting up regularly to stir it if they want to achieve the desired result.
  • Orecchiette ai Cime di Rapa. Orecchiette (little ears) is a homemade pasta most commonly found in Puglia, a Southern Italy region. The name indicates the pasta’s shape, small, domed, white disks with one smooth side and one rough to hold the sauce.
  • Pesto alla Genovese. There are many types of pesto in Italy, depending on the region you visit and the produce available locally. However, the pesto we all know and love is alla Genovese (from Genoa).
  • Vermicelli Alla Puttanesca. Due to the name, Puttanesca, many believe this sauce has some connection to prostitutes as “Puttana” means just that in Italian.
  • Ravioli di Ricotta e Spinaci al Burro e Salvia. Merchants in Venice and Tuscany are credited with the earliest mentions of ravioli as far back as the 14th century.
  • Spaghetti Aglio, Olio e Peperoncino. Considered to traditionally come from the Abruzzo region, this cheap and cheerful dish is now popular in the length and breadth of the boot.
