CREAMY CHICKEN AND ROASTED RED PEPPER PASTA RECIPE

This creamy, hearty pasta is ready in less than 30 minutes. With grilled chicken, roasted red peppers, and mozzarella cheese it's a dish everyone will love.

1 (16 ounce) package bowtie pasta
4 Tablespoons butter
1 onion (diced)
3 cloves garlic (minced or crushed)
1 cup half and half (slightly warmed)
1 cup chicken broth
1 teaspoon seasoned salt
1 cup shredded Mozzarella
3 boneless skinless chicken breasts (cooked and cubed)
1 (12 ounce) jar roasted red peppers (sliced)
1 Tablespoon chopped parsley - optional topping

Steps:

  • Cook the pasta according to the package directions. While it cooks, melt butter in a skillet over medium heat and cook the onion and garlic till soft. Whisk in half and half and chicken broth. Stir in seasoned salt and mozzarella. Lower the heat to keep the sauce from boiling.
  • Add the chicken and red pepper slices to the sauce. Stir frequently and keep and eye on the heat so it doesn't boil. Drain the cooked pasta and stir it together with the sauce.
  • Add chopped parsley before serving.

Easy Creamy Chicken Pasta With Bell Peppers image

This creamy chicken pasta with bell peppers is rich, filling, and so easy to make. It's a quick dinner that everyone will love.

12 ounces rotini pasta
1 pound (about 2 small) boneless skinless chicken breasts (cut into 1-inch cubes)
1 small green bell pepper (diced small)
1 small red bell pepper (diced small)
2 cups half and half*
1/2 cup (4oz) butter
3/4 cup (3oz) shredded Parmesan cheese (plus more for topping)
1 teaspoon chives or green onions (minced, optional)
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon salt

Steps:

  • In a large pot, boil water for pasta. Salt lightly and add rotini. Cook according to package instructions. Drain and set aside.
  • While pasta cooks, grease a large pan with cooking spray or a drizzle of olive oil, and over medium heat, cook chicken and peppers together until chicken is cooked through and peppers are tender. If you prefer crunchier peppers, add them to your chicken after 2 to 3 minutes. Transfer chicken and veggies to a bowl and set aside.
  • In the same pan, melt butter over medium heat and add the half and half. Bring to a low simmer and allow to cook until it has reduced down and thickened just slightly, about 5 to 8 min. Remove from heat and add Parmesan, chives or green onions, oregano, basil, and salt.
  • Add chicken back to the pan with the sauce, pour in the drained noodles, stir and serve. Top with more Parmesan if desired.

1 (9 ounce) package of refrigerated fettuccine pasta or 1 (9 ounce) package pasta, of your choice
1 (7 1/4 ounce) jar roasted red peppers, drained
1 (10 ounce) container refrigerated alfredo sauce
1 (6 ounce) package ready-to-eat cooked chicken breasts, strips,cut into bite-sized pieces
grated parmesan cheese (optional)

Steps:

  • Cook pasta and drain.
  • Use a food processor or blender to chop red peppers to 1/4 inch in size.
  • In a large skillet, heat alfredo sauce, red peppers, and chicken over medium-low heat.
  • Do not allow sauce to boil; you're just trying to heat it through.
  • Add pasta to sauce mixture and mix well.
  • (Optional) Serve with parmesan cheese.
