SIMPLE TUNA PASTA SALAD
Some of the best recipes are the most simple. This is one of those. I prefer it just as written, but you may add any ingredients you choose such as chopped onion, scallions, chives, water chestnuts, chopped hard-boiled eggs, lemon-pepper, dill, parsley, etc. I often take this to potlucks when I need a quick and easy (and economical) dish. I've never had to take home left-overs. Tuna pasta salads can be found at many pot lucks. Albacore tuna is plentiful on the Pacific Coast, and this recipe represents the Western U.S.

- Combine the cooked and drained pasta with the drained tuna, chopped celery, peas, and mayonnaise, using only enough mayonnaise for the salad to be creamy.

- Bring a large pot of lightly salted water to a boil; cook cavatappi at a boil until tender yet firm to the bite, 9 to 10 minutes. Drain and transfer to a large bowl.
- Whisk mayonnaise, 3 tablespoons lemon juice, honey, garlic powder, salt, and pepper for dressing together in a medium bowl. Set aside.
- Stir tuna, celery, onion, peas, parsley, olives, and 1 teaspoon lemon juice into pasta. Pour dressing over salad, toss until coated, and add hard-boiled eggs on top. Serve.

LEMON BROCCOLI & TUNA PASTA SALAD
I have a favorite Zesty Lemon Broccoli recipe from childhood & was in the mood for Pasta salad with tuna -- using a similar pasta recipe which incorporates shrimp and asparagus -- the following is the result, which turned out very good indeed!

- Boil Broccoli Florets in small amount of boiling water that has been salted for approximately 10-15 minutes, covered. Rinse cooked broccoli under cold running water in sieve to drain fully, and set aside once florets are completely cooled. Next, cook pasta as directed on package (al dente is 10-12 minutes). Once pasta is cooked al dente style, remove from heat, and drain - cool completely.
- Meanwhile, mix Caesar dressing, sour cream, olive oil, lemon zest & juice. Add freshly ground black pepper to taste and mix well.
- Place cooled pasta in medium size mixing bowl, add dressing mixture, tuna (fork flake to smaller chunks), broccoli florets, cheese, and cherry tomatoes; mix lightly to incorporate dressing mixture throughout, but not to brake down tuna chunks, florets further. Serve immediately or, cover and refrigerate until ready to serve.

- Cook the pasta according to the package directions. Drain and rinse under cold water to cool the pasta. Let stand 5 minutes.
- Whisk together the mayonnaise, sour cream, lemon juice, parsley, salt, garlic powder, and pepper in a large bowl. Add the pasta, tuna, peas, celery, bell pepper, and onion. Gently fold together until well coated, making sure not to break up the tuna too much.

TUNA PASTA SALAD
This is one of those salads where I say, "The longer it sits, the better it gets." You'll often find this cool and creamy pasta salad at my family's get-togethers.

- Cook the pasta in boiling salted water according to the package directions. Drain and run under cold water to cool, then drain again. Transfer to a serving bowl.
- While the pasta cooks, pulse the celery, bell pepper and red onion in a food processor until finely minced. Add to the serving bowl along with the tuna and eggs.
- Stir together the mayonnaise, mustard, vinegar, House Seasoning and relish in a small bowl. Pour over the pasta salad and toss gently to combine. Season with salt and pepper. Garnish with chopped fresh parsley before serving, if desired.
- Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container.
TUNA SPAGHETTI SALAD
This is an excellent change from the traditional creamy tuna pasta salad. Makes a great main course for a light dinner or lunch, and is also great on a bbq buffet or to take to a potluck. Note that you can prepare the sauce while the pasta is cooking, making this quick too. While it keeps well for a day or two, you can also cut it in half to feed two.

- Put on a large pot of salted water to boil; cook spaghetti until al dente stage; drain well and set aside.
- Meanwhile, in a large bowl, whisk together oil, garlic, hot pepper flakes and salt and pepper until well combined.
- Stir in tomatoes, roasted peppers (you can substitute raw red bell peppers if you wish, but the taste will be a little different; still good, just different), tuna and olives (I use greek kalamata olives).
- Next, stir in parsley and basil (do not substitute dried) and green onions.
- Add the well-drained spaghetti to bowl and thoroughly combine with sauce.
- Taste; add more salt and pepper if you wish.
- This is best served either warm or at room temperature; if you wish to make it ahead of time, cover well and refrigerate, but bring it back to room temp before you serve it.

TUNA PASTA SALAD
My own recipe for a delicious, cold salad made with multicolored rotini, canned tuna, onions, celery and carrots. It's wonderful in the summer as a light dinner served with blueberry or pineapple muffins. The secret is to used canned tuna in vegetable oil rather than water--it makes a more moist, delicate salad overall.

- In a large 3 qt pot, mix can of chicken broth with enough water to cook pasta. Add 2 t. salt to pot. Put in package of rotini and follow package directions for MINIMUM cook time. Drain pasta immediately and flush with cold water until all pasta is cool and has stopped cooking entirely. Set aside.
- In a large mixing bowl, combine mayonnaise with dill, pepper, and lemon juice.
- Add pasta to mayonnaise mixture.
- Drain can of tuna completely and add to pasta.
- Add chopped onions, celery, and carrots.
- Stir well until everything is combined.
- Refrigerate for at least two hours; add salt to taste and stir.
