PASTA E FAGIOLI WITH CRUSTY GARLIC TOAST
This is such a warm and comforting dish. It is also a dish that you can tailor to your own personal taste and with what you have in your pantry and refrigerator. You can add fried bacon, guanciale or Italian sausage for a meaty and hearty dish. For richness, you can add a Parmesan rind. Or go vegetarian and use vegetable or mushroom broth instead of chicken. You can also tear the country loaf into pieces and fry them in olive oil and garlic for rustic croutons. However you make this dish, you are going to love it!

Steps:
- Place the tomatoes in a medium bowl and poke small holes in them with a fork or paring knife. (This will prevent them from exploding and shooting seeds everywhere when you crush them.) Crush the tomatoes with your hands, a potato masher or a fork, and break them up into small pieces. Set aside.
- Stir 1/4 cup plus 2 tablespoons oil and half of the garlic in a small bowl and let sit until ready to use.
- Heat the remaining 3 tablespoons oil in a heavy-bottomed large pot over medium-high heat. Add the carrots, celery, onions, remaining garlic, oregano, red pepper flakes, bay leaves, 1 tablespoon plus 2 teaspoons salt and 1/2 teaspoon ground black pepper. Cook, stirring occasionally, until the vegetables are tender and just begin to brown, 8 to 10 minutes.
- Add the reserved tomatoes and any accumulated juices and cook until the liquid evaporates, about 3 minutes. Add the chicken broth, cover and bring to a boil. Cook until the vegetables are just cooked through, about 5 minutes. Add the beans, kale and pasta and cook, stirring occasionally, until the pasta and kale are tender, about 9 minutes.
- Meanwhile, make the garlic toast. Brush the top of each slice of bread with the reserved garlic oil, pushing the garlic into the crumb of the bread. Heat a large skillet over medium heat and melt 1 tablespoon butter. Add half of the bread, oiled-side up, and cook until deep golden brown, 2 to 3 minutes.
- Flip and cook until golden brown, 2 to 3 minutes. (You want this side slightly less toasted so that the garlic doesn't burn and taste bitter.) Transfer to a platter and repeat with the remaining 1 tablespoon butter and bread.
- Stir the parsley into the soup and season with salt, if necessary. Divide among bowls and top with a drizzle of olive oil, some shaved Parmesan and cracked black pepper. Serve with the garlic toast.

Steps:
- Heat oil in 4-quart Dutch oven over medium heat until hot. Add onion and garlic and cook for 5 minutes or until onion is tender.
- Add undrained tomatoes, undrained cannellini beans, chicken broth, parsley, basil and pepper to Dutch oven and bring to a boil over high heat, stirring occasionally. Let boil for approximately 1 minute and then let simmer for 10 minutes, covered.
- Add pasta to Dutch oven and simmer approximately 10 to 12 minutes or until pasta is tender. Serve immediately and enjoy.

- In a large pot, heat up the extra-virgin olive oil and saute the garlic, onion, carrot, celery, and pancetta for 5 minutes. Add the fresh sage and rosemary, allowing the olive oil to absorb the flavors of the herbs. Season with salt and pepper to taste.
- Add the beans and cook for a few minutes. With the back of a fork, mash up a quarter of the beans and add 1 cup water. Break the uncooked spaghetti into thirds using your hands and add into pot. Stir for about a minute. Add the remaining 3 1/2 cups water and bring to a boil. Cook for about 15 minutes, allowing the water to reduce until it becomes a thick consistency.
- Let rest for 10 minutes off the heat. Add the freshly grated Parmigiano cheese, parsley, and finish with a drizzle of extra-virgin olive oil. Serve warm.
QUICK PASTA FAGIOLI
This a wonderful comfort food! My Italian husband and relatives love it. They can't believe I don't spend the whole day at the stove to make it. Serve with good Italian bread and a salad and your all set! I have included the microwave instructions, but I have never made it this way so...it's your choice. Try it you'll love it. If it's a little thick the next day for left-overs, just thin with a little Red Wine and Chicken broth. YUMMY!!!

Steps:
- Saute garlic in oil in 10" Skillet or Dutch oven with at least 2 Qt capacity, until garlic is lightly browned.
- Remove garlic and discard.
- (I prefer to use chopped garlic and leave it in after browning).
- Add chopped carrot, onion and celery; saute until they begin to color, 3 to 5 minutes.
- Add rosemary and tomato paste.
- Add beans with their liquid, chicken broth and water.
- Simmer uncovered, 2 minutes.
- Add pasta, stirring to distribute ingredients evenly.
- Cover and simmer, stirring occasionally, for 8 minutes or until pasta is al dente firm, but tender.
- (*With the 8 to 10 oz. of pasta, I cook for about 16 minutes).
- Remove pan from heat.
- Let stand, covered 10 minutes.
- Add salt, if necessary.
- Combine cheese and parsley in small serving bowl.
- Stir vinegar into soup, and ladle into warmed soup bowls.
- Serve with cheese-parsley mixture.
- *Note-I chop the vegetables in my blender, I prefer them more finely chopped and not too coarse.
- Plus it's a real time-saver!
- MICROWAVE DIRECTIONS: Reduce rosemary to 1/2 Tsp Combine garlic and oil in 4 Qt casserole.
- Microwave, uncovered, at full power for 2 minutes.
- Remove garlic, add carrot, onion and celery.
- Microwave, uncovered, for 3 minutes.
- Add rosemary, tomato paste, undrained beans, chicken broth and water.
- Cover.
- Microwave at full power for 14 to 16 minutes or until boiling.
- Stir in pasta.
- Cover.
- Microwave at half power for 12 minutes.
- Stir in vinegar.
- Add salt, if necessary.
- Let stand, covered, 10 minutes.
- Serve with the cheese and parsley mixture.
BAKED PASTA E FAGIOLI
Got this from my friend Gina at work, from a 2/2007 Good Housekeeping magazine. She has a reputation for being a terrible housekeeper but she made this and brought it in for us for lunch and we were all pleased:D Great one dish meal for vegetarians or people not obsessed with meat. Use tomatoes in puree, pre-chopped if possible. I recommend using 1 can navy and 1 can garbanzos or small white beans. Serve with hot sauce on the side.

- Preheat oven to 400. Heat large covered saucepot of water to boiling. Add pasta and cook 2 minutes less than label directions. Drain and reserve 1/4 cup cooking water. Return pasta to saucepot.
- Meanwhile, drain tomatoes, reserving puree. Coarsely chop tomatoes. (Or use chopped tomatoes in puree).
- In 4-quart saucepan, heat oil over medium heat until hot. Add onion and celery and cook 9-10 minutes or until tender, stirring occasionally. Add garlic and cook 1 minute.
- Stir in tomatoes with puree, beans, broth and 1/4 teaspoon pepper. Heat to boiling over high heat. Reduce heat to medium and stir in spinach.
- Add bean mixture, pasta cooking water and 1/4 cup Romano to pasta in saucepot and toss until well mixed. Transfer pasta mixture to 3-quart glass or ceramic baking dish. Sprinkle with remaining Romano and bake 15 minutes or until center is hot and top is golden.

- Heat 1 tablespoon olive oil and butter in a heavy large saucepan over medium heat. Add the onion, bacon, and garlic and saute until the onion is tender, about 3 minutes.
- Add the broth, beans, and herbs (thyme, bay leaves, rosemary) . Cover and bring to a boil over high heat, then decrease the heat to medium and simmer until the vegetables are very tender, about 10 minutes.
- Puree 1 cup of the bean mixture in a blender until smooth*. Before putting the puree back into the soup, add the macaroni and boil with the lid on until it is tender but still firm to the bite, about 8 minutes. You can also add sausage or ham at this time as well.
- Return the puree to the remaining soup in the saucepan and stir well. Season the soup with ground black pepper and red pepper flakes.
- Ladle the soup into bowls. Sprinkle with some Parmesan and drizzle with extra-virgin olive oil just before serving.
- *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

- Heat the oil in a Dutch oven over moderate heat.
- Add in the sausage and cook, breaking it up and browning it, until it loses all its pink color, 10-12 minutes.
- Remove all but 2 tablespoons of fat from the pan; add in the onion, garlic, celery, carrots, and rosemary; saute for 4-5 minutes, until the vegetables begin to soften.
- Add in the wine, salt, and pepper; boil until the wine is reduced to about 2 tablespoons (this shouldn't take long).
- Add in the tomatoes; bring the mixture to a boil, stirring well.
- Pour in the broth and add the cheese rind and beans.
- Simmer the mixture, uncovered, for 25 minutes, until it thickens a bit.
- Add in the pasta and simmer for another 10 minutes, until the liquid has thickened.
- Sprinkle the cheese on top; transfer to a 350° preheated oven and bake for 20 minutes or so, until the sauce is bubbling and the cheese is golden; serve hot in soup bowls.
- OAMC: Make as directed through step 8; cool, then cover and refrigerate for up to 2 days or freeze for up to 2 months.
- Defrost the casserole in the refrigerator overnight (if frozen); preheat oven to 350°; let casserole come to room temperature for 30-40 minutes.
- Sprinkle cheese over the top; bake for 20-25 minutes until the sauce is bubbling and the cheese is golden; serve in soup bowls.

- Sauté whole garlic, fresh rosemary shallot and carrot in some olive oil until soft.
- Then add tomato sauce, mix and add half of the cooked beans. Now add vegetable stock and bring to a boil.
- Add your pasta and make sure it's submerged. Add more if it absorbs too much. Cook for 10-12 minutes (check the package). When the pasta is al dente. turn the heat on high so some of the water evaporates (it should not be too much like a soup, but it should be creamy).
- At this point add the blended beans and mix to combine. Remove whole garlic and rosemary. Season to taste with salt and pepper.
- Serve.

- Drain the beans and bring to the boil in a pan of salted water. Cook for 10 mins, drain, rinse and put in a slow cooker with the onions, carrots and celery.
