½ cup pareve margarine
8 ounces semisweet chocolate, chopped
5 eggs, separated
¾ cup white sugar
1 cup ground almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line bottom and sides of a 9 inch springform pan with foil. Grease foil.
  • Melt margarine and chocolate over low heat. Stir until smooth and let cool.
  • In a medium-size mixing bowl, beat whites until stiff; about 2 minutes. In a separate bowl, beat together yolks and sugar until thick and pale; about 1 minute. Blend in chocolate mixture and stir in almonds. Fold in beaten whites, 1/3 at a time, into chocolate until no streaks of white remain. Scrape into prepared pan.
  • Place an 8 inch baking pan with 1 inch of water in it on the bottom rack of the oven (to make the torte more moist).
  • Bake torte on center rack at 350 degrees F (175 degrees C) for 45 to 50 minutes, or until sides begin to pull away from pan and top is set in center. Cover the torte loosely with foil for the last 20 minutes of baking. Note: Don't worry if the cake cracks because the top will be on the bottom later.
  • Cool on wire rack for 10 minutes and then carefully remove sides of pan. Invert onto a serving plate and cool completely.

¾ cup potato starch (115 grams)
½ cup cocoa powder (50 grams)
2 teaspoons baking powder
½ teaspoon salt
4 eggs
½ cup oil (120 milliliters)
½ cup black coffee or water (120 milliliters)

Steps:

  • Preheat oven to 350°F or 175°C.
  • Whisk together sugar, potato starch, cocoa powder, baking powder, and salt in a large mixing bowl.
  • Add eggs, oil, and black coffee or water. Mix until well combined. It will seem very liquidy but it's fine.
  • Use a rubber spatula to pour batter into a 9x13 inch baking pan.
  • Bake for 45 to 50 minutes or until a toothpick comes out clean when poked through the middle.
  • Remove and let cool completely before cutting.

I have seen this online, attributed to more than one author, under the name of "Viennese Chocolate Torte." I definitely did not create it, nor have I tried it, but someone should!

8 eggs, separated
1 cup sugar
2 ounces semisweet chocolate, melted and cooled
1/4 cup fresh orange juice
1 tablespoon grated orange rind
2 cups ground walnuts
1/3 cup matzo cake meal
1/3 cup potato starch
2 oranges, peeled, sectioned and de-membraned
10 ounces apricot preserves
1 orange, peeled, sectioned and de-membraned
1/2 cup orange juice
6 ounces semisweet chocolate, broken

Steps:

  • Preheat oven to 250°F Have ready an ungreased 10 inch tube pan (4 1/2 inches deep).
  • Beat egg yolks with 1/2 cup sugar until very thick.
  • Add chocolate, orange juice and rind; beat to combine.
  • In a small bowl, combine 1 cup of the ground walnuts, cake meal and potato starch. Fold into yolk mixture.
  • In a separate bowl with clean, dry beaters, beat whites until foamy. Gradually beat in remaining 1/2 cup sugar until stiff peaks form.
  • Gently fold in chocolate mixture into beaten whites.
  • Scrape into pan and bake 55 to 60 minutes, until cake tests done. Invert pan over a bottle neck and let cake cool completely (cake will be upside down).
  • Prepare the filling:.
  • Melt preserves; stir in orange sections.
  • Cool for 5 minutes.
  • Prepare the chocolate glaze:.
  • Heat orange juice until warm. Remove from heat, add chocolate, stirring until melted and smooth. Cool for 5 minutes.
  • Run a knife around edge of pan; remove cake from pan.
  • Slice cake in half horizontally.
  • Spread orange filling over bottom half of cake. Replace top layer of cake. Coat cake with glaze. Garnish with remaining 1 cup nuts and the orange sections.

1/2 cup margarine

6 eggs, separated
1 cup sugar
1 cup walnuts, chopped coarsely
2 cups unsweetened dried shredded coconut
1/2 cup fresh orange juice
1/4 cup orange liqueur
1 bittersweet chocolate square (to garnish)

Steps:

  • Preheat the oven to 325°F
  • In the bowl of an electric mixer, beat the egg whites with 1/2 cup sugar until the mixture holds stiff peaks.
  • Without washing the beaters, beat the eggs yolk in a small bowl with the rest of the sugar until light and fluffy.
  • Add the yolks to the whites but do not stir.
  • Add the walnuts and gently fold the ingredients together.
  • Do the same with the coconut, one cup at a time.
  • Pour the cake batter into a greased 9-inch spring form pan, and bake for 45 minutes until lightly brown on top.
  • Remove from the oven and allow to cool.
  • Mix together the orange juice and orange liqueur. Pour over the cake while it is still in the pan.
  • When the cake has cooled, place it in the refrigerator until it is time to serve.
  • Just before serving (add whipped cream here, if desired) garnish with bittersweet chocolate shavings.
  • Store in the refrigerator.

Steps:

  • Preheat oven to 350°F. Brush bottom of 10-inch-diameter springform pan generously with margarine. Blend almonds and 1/4 cup sugar in processor until almonds are finely ground. Add chocolate; blend until chocolate is finely ground, scraping sides and bottom of bowl occasionally.

1 1/3 cups whole hazelnuts
3/4 cup margarine, melted, plus more for pan
3/4 cup cocoa powder, plus more for pan
1/3 cup matzo cake meal
6 large eggs, separated
1/2 cup packed light-brown sugar
Passover Fudge Glaze
Pinch of salt
1/2 cup superfine sugar

Steps:

  • Heat oven to 350 degrees. Line a baking pan with parchment, and spread hazelnuts on top. Bake until fragrant and toasted, about 10 minutes. Place nuts in a clean kitchen towel, and rub to remove loose skins. Place 1/3 cup nuts in bowl of food processor, and pulse until finely ground; reserve. Roughly chop remaining 1 cup nuts, and set aside.
  • Grease a 9-inch round cake pan with margarine; dust with cocoa powder. Whisk together remaining 3/4 cup cocoa powder, ground hazelnuts, and matzo meal; set aside.
  • In a bowl of an electric mixer fitted with the whisk attachment, beat yolks and brown sugar on medium-high speed until mixture holds a ribbonlike trail for 3 seconds when you raise the whisk, about 45 seconds. Fold in 1 cup nut puree from fudge glaze recipe. Transfer to a large bowl; wash and dry mixer bowl and attachment. Place egg whites and salt in mixer bowl; beat with whisk attachment on medium-high speed until soft peaks form, about 1 minute. With mixer running, slowly add superfine sugar; beat until stiff and glossy. Fold egg whites and ground-hazelnut mixture into egg-yolk mixture. Fold in melted margarine. Transfer batter to prepared pan; smooth top with an offset spatula.
  • Transfer to oven; bake until a wooden skewer inserted in the middle of the cake comes out clean, 35 to 40 minutes. Transfer to a wire rack to cool, about 1 1/2 hours.
  • Invert pan, and remove cake. Using a serrated knife, slice cake into two layers. Place a 9-inch cake round on a wire rack set on a baking sheet. Place bottom layer of cake on round; spread 1/2 cup fudge glaze on top. Place second layer on bottom layer. Pour remaining glaze over cake, using the offset spatula to cover sides. Refrigerate 30 minutes.
  • When ready to serve, press chopped hazelnuts onto sides.

8 large egg yolks
1 cup plus 1/3 cup sugar
5 large egg whites
Paper doily
Fresh raspberries (optional)
Raspberry Sauce

Steps:

  • Preheat oven to 350°F. Line bottom of 9-inch-diameter springform pan with 2 3/4-inch-high sides with parchment paper. Stir chocolate and margarine in heavy medium saucepan over low heat until melted and smooth. Remove from heat. Cool until lukewarm.
  • Using electric mixer, beat yolks and 3/4 cup sugar in large bowl until pale and very thick, about 4 minutes. Add chocolate mixture in 2 additions and beat until well blended. Using clean dry beaters, beat egg whites in another large bowl until foamy. Gradually add 1/4 cup sugar and beat until whites are stiff but not dry. Fold 1/3 of whites into chocolate mixture. Fold in remaining whites in 2 additions. Transfer batter to prepared pan.
  • Bake torte until crust forms on top and tester inserted into center comes out with some moist batter and some moist crumbs still attached, about 55 minutes (top may crack). Run small sharp knife around torte to loosen. Cool in pan on rack (torte will fall and crack). Remove pan sides. Invert torte onto platter. (Can be prepared 1 day ahead. Cover with cake dome and store at room temperature.)
  • Grind 1/3 cup sugar in blender until fine powder forms. Place doily atop torte. Sift ground sugar over doily; gently remove doily. Garnish torte with raspberries, if desired. Serve with Raspberry Sauce.

PASSOVER ORANGE WALNUT TORTE

In the early 1990's Gourmet Magazine did a series of Passover cakes which I now cannot find on epicurious.com. I had copied some of them and am posting them here. Note re powdered sugar: If kosher-for-Passover powdered sugar is unavailable, you can pulverize granulated sugar in a blender.

6 large eggs, separated, at room temperature
1 1/3 cups granulated sugar
1/4 cup fresh orange juice
3 tablespoons fresh lemon juice
2 teaspoons grated orange rind
1/2 cup matzo cake meal
1/2 cup potato starch
1 cup finely chopped walnuts
1 pinch salt
powdered sugar, for sprinkling on top of torte

Steps:

  • Set oven rack at middle of oven; preheat oven to 325 degrees F.
  • In a large bowl with an electric mixer, beat egg yolks until thick and pale, add sugar gradually, beating. Beat until very thick.
  • Beat in orange juice, lemon juice and rind. Add matzo cake meal and potato starch gradually, beating. Beat until combined well. Fold in walnuts gently.
  • In a separate bowl with clean beaters, beat egg whites with a pinch of salt until they just hold stiff peaks.
  • Stir 1 cup of the beaten egg whites into the orange mixture. Fold in remaining egg whites gently but thoroughly.
  • Pour into an ungreased 9 inch tube pan (3 ½ inches deep) with a removable bottom. Bake about 55 to 60 minutes or until cake tester comes out clean.
  • Invert pan over the neck of a bottle, let it cool upside down.
  • Run a knife around edge of pan; remove side of pan. Run a knife under bottom of torte to release it.
  • Transfer carefully with two spatulas to a serving plate. Sprinkle with sifted powdered sugar.

Orange syrup:
1 cup sugar
1 cup water
Peel of 1 large orange, removed in strips with vegetable peeler
Almond macaroons:
Nonstick vegetable oil spray
2 1/2 cups slivered almonds
1 cup plus 3 tablespoons sugar
2 large pinches of coarse kosher salt
2 vanilla beans, split lengthwise
6 large egg whites
Frosting and compote:
20 ounces bittersweet chocolate (do not exceed 61% cacao), chopped
1 cup sliced almonds, toasted
2 large oranges, all peel and white pith cut off

Steps:

  • For orange syrup:
  • Combine sugar, 1 cup water, and orange peel strips in medium saucepan. Stir over medium heat until sugar dissolves and syrup comes to boil. Reduce heat to medium-low and simmer 1 minute. DO AHEAD: Can be made 2 days ahead. Cover and chill syrup with peel strips.
  • For almond macaroons:
  • Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 325°F. Draw two 12 x 4-inch rectangles, spacing 2 inches apart, on each of 2 sheets of parchment paper (4 rectangles total). Turn over each parchment sheet onto large rimmed baking sheet (rectangles will show through). Spray parchment with nonstick spray.
  • Place slivered almonds, 1 cup sugar, and coarse salt in processor. Scrape in seeds from vanilla bean halves. Blend until nuts are finely ground. Using electric mixer, beat egg whites in large bowl until soft peaks form. Add remaining 3 tablespoons sugar, 1 tablespoon at a time, and beat until stiff but not dry. Fold nut mixture into egg whites. Spread 1/4 of macaroon batter evenly within each rectangle, filling completely.
  • Bake macaroon layers until golden and almost firm to touch in center, reversing sheets after 20 minutes, 35 to 40 minutes total. Cool on sheets.
  • For frosting and compote:
  • Place 10 tablespoons orange syrup in large saucepan and bring to simmer over medium-low heat (reserve remaining syrup). Add chocolate to saucepan and stir until chocolate is melted and smooth. Remove from heat. Cool until frosting begins to thicken, stirring often, 20 to 30 minutes.
  • Place 1 macaroon layer on long platter. Spread 1/2 cup frosting evenly over. Top with another macaroon layer. Spread 1/2 cup frosting evenly over. Repeat 1 more time. Top with last macaroon layer, flat side up. Spread remaining frosting over top and sides of torte. Press sliced almonds onto sides of torte. DO AHEAD: Can be made 1 day ahead.
