SPINACH PIE

Steps:
- Preheat the oven to 375 degrees. In a medium saute pan on medium heat, saute the onions with the olive oil until translucent and slightly browned, 10 to 15 minutes. Add the salt and pepper and allow to cool slightly. Squeeze out and discard as much of the liquid from the spinach as possible. Put the spinach into a bowl and then gently mix in the onions, eggs, nutmeg, Parmesan cheese, bread crumbs, feta, and pignoli. Butter an ovenproof, nonstick, 8-inch saute pan and line it with 6 stacked sheets of phyllo dough, brushing each with melted butter and letting the edges hang over the pan. Pour the spinach mixture into the middle of the phyllo and neatly fold the edges up and over the top to seal in the filling. Brush the top well with melted butter. Bake for 1 hour, until the top is golden brown and the filling is set. Remove from the oven and allow to cool completely. Serve at room temperature.

Steps:
- Preheat the oven to 350 degrees.
- Place the bottom crust in your pie plate.
- Cook the spinach, drain it, and chop it finely.
- Saute the chopped onion in a little cooking spray.
- Mix together the spinach, the onion, and the rest of the ingredients.
- Pour the mixture into the pie crust.
- Add the top crust and seal.
- Bake for 30-40 minutes.
ESPINACA
I got the idea for this from Abuelo's Restaurant. It's super simple and the only way the kids will eat spinach. It's great served with steak. (I just guessed on the actual amounts. I always just eye it.)

- In a large skillet: Reduce down the spinach in the butter, add the corn, and stir in cheese (I will sometimes add a little milk to melt in the cheese if necessary)
- Add the seasoning to taste. Voila!

- Poner la espinaca limpia en un bol y cocinar en el microondas a máxima potencia por 3 minutos, hasta que se marchite. Dejar enfriar y escurrir con las manos casi todo su líquido. Dejar algo de su líquido hará que la tarta no salga muy seca. Picar la espinaca un poco y reservar.
- En una sartén calentar un poco de aceite y agregar la cebolla, una pizca de sal y el ajo picado. Cocinar hasta que la cebolla este bien tierna, unos 10-15 minutos. Agregar pimienta negra, caldo de pollo en polvo y mezclar bien. Agregar la espinaca previamente picada, mezclar todo y dejar enfriar.
- En una tartera de 25 cm de diámetro, con fondo removible, poner una hoja de masa quebrada en el fondo. Presionar un poco contra los lados. Poner encima papel de horno y algunas alubias o garbanzos para hacer peso. Hornear a 200ºC por 8 minutos o hasta que la masa este casi cocida. Sacar del horno y quitar las alubias o garbanzos y el papel de horno.
