This is my favourite side dish to pair with my Chili Pork Steak (recipe #175837). The sauce from the meat just goes perfectly with this.

Number Of Ingredients 10

3 cups water
1 1/2 cups long grain rice
3/4 teaspoon salt
1 1/2 tablespoons margarine
1/3 cup finely chopped onion
1 1/2 cups grated cheddar cheese
1 1/2 teaspoons parsley flakes
1 1/2 cups sour cream
1 1/2 cups grated cheddar cheese
3 tablespoons almonds (slivered or sliced) (optional)

Steps:

  • Combine water, rice and salt in saucepan. Bring to a boil and simmer covered about 15 minutes until rice is cooked and water is absorbed.
  • Meanwhile, melt butter in a small frying pan. Add onion and saute until soft, then stir into rice.
  • Add first amount of cheddar cheese, parsley and sour cream to rice mixture. Turn into a greased 2 1/2 quart (3 L) casserole dish.
  • Sprinkle with remaining cheese and almonds, if using. Bake uncovered at 350F for about 30 minutes, or until heated through and browned a little on top.
  • Freezes well.

Number Of Ingredients 4

1 1/2 cups long grain rice
3 cups water
4 tablespoons butter
1 tablespoon dried parsley

Steps:

  • Rinse Rice under the faucet to remove excess starch.
  • Bring Rice and Water to a rapid boil in a 2 quart saucepan.
  • Cover Rice and reduce heat to low.
  • Cook on Low 20 minutes.
  • Cut Butter into 4 pieces.
  • When Rice had doubled in volume, Add the Butter and replace lid.
  • Once Butter has melted, sprinkle Parsley even over ther the Rice.
  • Stir to fully mix Rice, Butter and Parsley.
  • Serve with any meat dish. Pairs up exceptionally with Chicken Breasts.

1/4 cup chopped onion
2 garlic cloves, minced
1/4 cup butter, cubed
3 cups cooked long grain rice
2 cups shredded cheddar cheese
1 cup minced fresh parsley
1 cup whole milk
4 large eggs, lightly beaten
2 teaspoons Worcestershire sauce
1 teaspoon salt

Steps:

  • In a large saucepan, saute onion and garlic in butter until tender. Add remaining ingredients; mix well. Transfer to a greased shallow 1-qt. baking dish. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean.

I know that there are several green rice recipes on here- but If you are from the K.C. metro area and are looking for a "green rice" recipe -this is probably what you are looking for. The unique greeny- lemony flavor mixed with the slightly creamy texture is deliciously unique- your taste buds will thank you!

3 cups cooked rice
1 cup chopped parsley
1/2 cup shredded cheddar cheese
1/3 cup chopped onion
1/4 cup chopped green pepper

14 1/2 ounces evaporated milk
2 eggs, beaten
1/2 cup vegetable oil
1 tablespoon salt
1/4 teaspoon Accent seasoning (this is MSG- you can skip)
1 lemon, juice of, and grated
paprika

Steps:

  • Combine the rice, parsley, cheese, green pepper and garlic in a greased casserole dish.
  • Blend together the remaining ingredients and add to the rice mixture.
  • Bake at 350°F for 45 minutes or until it is like a custard.
  • It can be garnished with paprika before baking if you wish.

3 cups cooked rice
1 cup minced fresh parsley
1/2 cup shredded cheddar cheese, divided
1/3 cup chopped onion
1/4 cup chopped green pepper
1 garlic clove, minced
2 large eggs, lightly beaten
1 can (12 ounces) evaporated milk
1/2 cup canola oil
3 tablespoons lemon juice
1 tablespoon grated lemon zest
1 teaspoon salt
1/2 teaspoon seasoned salt
1/2 teaspoon pepper

Steps:

  • In a large bowl, combine the rice, parsley, 1/3 cup cheese, onion, green pepper and garlic. In another bowl, combine the eggs, milk, oil, lemon juice and zest, salt, seasoned salt and pepper. Stir into the rice mixture. , Transfer to a greased 2-qt. baking dish; sprinkle with remaining cheese. Bake, uncovered, at 350° for 40-45 minutes or until golden brown.

I don't remember where I got this recipe. I think I cut it out of the local newspaper years ago. It's really easy and I think it could be modified easily to meet your tastes. I often use boil-a-bag rice for easy preparation, and have often used dried parsley (still using 1/2 cup) and it always turns out great.

1 egg, beaten
1 cup milk
1 cup uncooked white rice (measure uncooked rice, then cook per package directions)
1/2 cup fresh parsley, chopped
1 small onion, finely chopped
1/2 cup parmesan cheese, grated
salt and pepper
2 teaspoons olive oil
1 bulb of garlic, minced

Steps:

  • Preheat oven to 325 degrees.
  • Mix together all ingredients except olive oil and garlic.
  • Place olive oil in the bottom of a casserole dish or square glass baking dish. Rub the dish with one bulb of chopped garlic and leave the garlic in the dish.
  • Pour mixture into baking dish and bake for 30-40 minutes at 325 degrees.
