2-1/2 cups herb-seasoned stuffing mix
1 medium onion, finely chopped
3 eggs, beaten
1/4 cup grated Parmesan cheese
6 tablespoons butter, melted
1/2 teaspoon garlic salt
1/4 teaspoon pepper

Steps:

  • Cook spinach according to package directions; drain well, squeezing out excess liquid. Combine spinach with remaining ingredients in a large bowl. Shape into 1-in. balls; place on an ungreased baking sheet. Bake at 350° for 10 minutes or until very lightly browned. Balls can be made ahead and refrigerated overnight before baking.

  • Preheat oven to 350 degrees F (175 degrees C).

I got this recipe from my mother-in-law, who says these were my veggie-hating husband's favorite childhood snack. They are a great way to get kids to eat spinach!! Prep time includes chill time. This can be a little salty depending on the butter, cheese and bread crumbs you use, if you are concerned about saltiness use unsalted butter and garlic powder in place of the garlic salt. I have also made these with only 1/2 cup of melted butter (1 stick) and they are just as good but you need to spray the cookie sheet because they will stick.

(2) 10 oz. packages frozen chopped spinach, (thawed and squeezed dry)
1 1/2 cups (about 3.5 ounces or 3 1/2 cups whole) corn chex cereal, ( crushed)
1 1/4 cup freshly grated parmesan
1/2 cup butter, (melted)
4 eggs
4 green onions, (sliced)
3/4 teaspoon dried sage
1/2 teaspoon onion powder
1/4 teaspoon italian seasoning
1/2 teaspoon salt
1/2 cup dry mustard, (such as Coleman's)
1/2 cup white vinegar
1/2 cup sugar
1 egg

Steps:

  • In a small bowl mix together dry mustard and vinegar. Let sit for at least 2 hours. This is crucial for developing the "heat" in the mustard.
  • After a couple hours combine mustard mixture, egg, and sugar in a small saucepan over low heat. Cook, stirring constantly, until mustard is thickened, about 5-10 minutes. Set aside to cool. If using later, store in airtight container in refrigerator.
  • Preheat oven to 375ºF.
  • Lightly beat eggs in a large bowl and then combine with the rest of the ingredients until well mixed.
  • Roll into 1 inch balls and place on ungreased baking sheet. Bake for 15 minutes until golden and hot. If frozen, add about 10 minutes to time.

1 large bunch broccoli trimmed
4 slices gluten-free bread*
1/2 tsp. garlic powder (oregano, and basil)
4 ounces parmesan cheese shredded (about 1 cup)
4 cloves garlic finely chopped
1/2 cup onion finely chopped
handful of spinach leaves chopped (about 1 cup)
4 eggs beaten

Steps:

  • Preheat oven 350 degrees
  • Trim broccoli and steam until slightly wilted but still a little crunchy. Remove from heat and set aside to slightly cool.
  • Meanwhile lightly toast bread for crumbs. Put bread in food processor to make crumbs. Add garlic powder, oregano, and basil to bread crumbs.
  • Chop steamed broccoli into small pieces and put into medium mixing bowl. Add bread crumbs, garlic, onion, parmesan cheese, beaten eggs and chopped spinach.
  • Mix and form into balls. Place on baking sheet and bake in preheated oven about 30 minutes

  • In a small skillet, melt butter over medium heat. Add the onion and sauté for 5-7 minutes or until soft and translucent. Add garlic and sauté for another minute. Remove from heat to cool.
  • In a medium mixing bowl, combine, dry spinach, pork rind crumbs, cooled onion and garlic and the next 8 ingredients. Mix well to combine and let mixture rest in the fridge for 5-10 minutes.
  • Using a small scoop, divide out the mixture into 16 portions and use your hands form each portion into a ball. Place balls on the lined cookie sheet about an inch apart and bake for 15-20 minutes or until golden. Remove from the sheet pan and place on paper towels to cool. Serve warm or at room temperature.
