DINNER PARTY NIBBLES
Makes 3 different types- salmon, mushroom, and tuna. I would not normally use a recipe for these, but if my husband wants to help or I want to have it as part of a menu, it's good to have it on hand. You don't have to use crustini, bruscetta or sliced bread or crackers or whatever you like is fine. From Alive and Cooking.

Steps:
- Mix together the cream cheese with the finely diced cornichon and place onto crustini and top with smoked salmon.
- Slice the mushrooms as thin as you can, finely chop the dill and mix together with the Parmesan oil and white balsamic vinegar. Place the mushrooms in this mix and allow to sit for 15 minutes then fry quickly in hot oil and place on top of crustini.
- Finely dice the Spanish onion and half the cherry tomatoes, chop the coriander then mix all together with the tuna, balsamic, olive oil and salt and pepper. Allow to sit for 20 minutes so that flavour really infuses, then place onto crustini.

PARMESAN NIBBLES
I had these at a Ladies Luncheon this summer and my friend, Marge, was kind enough to share the recipe for these tasty treats. They are incredibly yummy- like mini grilled Parmesan cheese sandwiches.The recipe is easily halved and I like the fact that they can be frozen and as many as needed pulled out and baked. I'll be making and freezing these for our Thanksgiving and Christmas pre-dinner appys.

Steps:
- Beat eggs with cream cheese and garlic powder until well combined.
- Trim crusts of bread and divide into 3 equal stacks ( 8 slices each).
- Soak center stack in egg/cream cheese mixture.
- Place soaked slices between 2 plain slices of bread and cut into 8 triangles.
- Dip each triangle into melted butter then in parmesan cheese.
- Place on cookie sheet and freeze. When frozen, you may remove them and store in a zip-loc bag or airtight container.
- Bake frozen at 375 degrees for about 10 minutes, or until lightly browned (you may want to flip them over mid way through baking).
- Serve warm or at room temperature.

Steps:
- Pre heat the oven to 210c. beat the egg and glaze the pastry, sprinkle the cheese evenly over the pastry, then the Italian herbs, followed by a good sprinkling of the roasted sesame seeds.
- Cut into finger lengths and place on a cookie tray and bake in the oven 7-10 minutes until puffed up and golden.
- Note: You can roast the sesame seeds yourself by using a medium saucepan, and heating it and covering the base with the sesame seeds, constantly shake and stir as they wil brown very quickly, tip onto a kitchen towel and spread out to cool.
