CREAMY MASHED POTATO

Recipe video above. This is my essential mashed potato recipe I make 362 days of the year*. It's a must-have at holiday gatherings and Sunday Suppers, and it's the mash you've seen smothered by sauces and gravies in hundreds of recipes on my website! Easy, creamy, buttery, rich but not insanely so (we have Paris Mash for that). Serve with everything. (*The other 3 days of the year I make Paris Mash, KFC Potato and Gravy, and Creamy Cauliflower Mash)

1.5 kg / 3 lb potatoes, peeled and cut into 2.5cm/1" cubes ((Preferably Sebago, Russet or Maris Piper, Note 1))
1 tbsp salt ((for cooking))
60g / 4 tbsp unsalted butter (, chopped)
1/3 cup milk (, preferably warmed)
1/2 tsp salt
Extra melted butter
Chives or parsley (, chopped)

Steps:

  • Place in a large pot with 1 tbsp salt. Add water so it's 10cm / 4" above potatoes.
  • Bring to a boil over high heat then reduce heat so it's simmering rapidly. Cook 15 minutes or until potatoes are very soft (jab with fork to test, they should fall apart).
  • Drain well, return into pot. Leave for 1 minute, shaking pot every now and then, to encourage evaporation of water.
  • Add Flavourings then mash well, using milk to make it looser if desired.
  • DO NOT use: a beater, stick blender, food processor or blender. You can pulse with a stand mixer or handheld mixer but be cautious, stop as soon as it's creamy (potatoes will quickly go from perfect to gluey using appliances).
  • Transfer to serving bowl, make pretty swirls across the top and drizzle over butter. Sprinkle with chives then serve!

2 pounds Yukon gold potatoes (about 5 cups), diced unpeeled
1/2 cup low-fat buttermilk
1/2 cup skim milk
4 tablespoons grated Parmesan
Salt
1 tablespoon unsalted butter

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil, reduce heat and cook until tender, about 10 minutes.
  • While potatoes are cooking place buttermilk and milk into a small saucepan and cook over a very low heat until just warm. Be careful not to boil or milk will curdle.
  • Drain the potatoes, add the warmed milk and mash together to desired consistency. Stir in cheese and salt. Top with the butter and let it melt.

PARMESAN-CRUSTED POTATOES

Tender roasted potatoes get an extra boost of flavor and crunch, thanks to a crispy layer of golden Parmesan. We added a simple stir-together paprika aioli for dipping, but these flavorful little nuggets are equally delicious on their own. Serve them as a fun appetizer or as a side dish.

2 1/2 pounds small Yukon gold potatoes, halved crosswise
4 sprigs fresh thyme
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
Nonstick cooking spray
3/4 cup finely grated Parmesan
1/2 cup mayonnaise
1 tablespoon freshly squeezed lemon juice
1 teaspoon Dijon mustard
1 teaspoon smoked paprika
1 small clove garlic, finely grated
Kosher salt and freshly ground black pepper

Steps:

  • Line a rimmed baking sheet with aluminum foil and place on the center rack of the oven. Preheat the oven to 425 degrees F (see Cook's Note).
  • For the Parmesan potatoes: Toss the potatoes, thyme sprigs, olive oil, 1 teaspoon salt and several grinds of black pepper in a large bowl until combined. Carefully remove the hot baking sheet from the oven and spray with nonstick cooking spray. Lay the potatoes cut-side-down in an even layer. Bake until tender and golden brown, about 35 minutes.
  • For the smoked paprika aioli: Meanwhile, whisk together the mayonnaise, lemon juice, Dijon, paprika, garlic, a pinch of salt and a couple grinds of black pepper in a small bowl until smooth. Cover with plastic wrap and refrigerate until ready to serve.
  • Remove the baking sheet from the oven and push the potatoes to one side of the pan (try to give yourself as much empty surface area as possible). Lightly spray the foil with more cooking spray, then sprinkle the Parmesan in an even layer over the empty space on the baking sheet, making sure to go all the way to the edges to create a roughly 14-by-12-inch rectangle. Place the potatoes on top of the Parmesan layer, cut-side down, so that all the potatoes are sitting on the cheese.
  • Return the baking sheet to the oven and bake until all the Parmesan is golden brown and crisp, 8 to 10 minutes more. Cool slightly, about 5 minutes, then use a spatula to lift the crispy, cheesy potatoes off the pan (some potatoes will come off individually while others will come off in pairs). Serve with the smoked paprika aioli on the side.

2 yellow onions
3 tablespoons good olive oil
2 tablespoons whole-grain mustard
Kosher salt
1 teaspoon freshly ground black pepper
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 425 degrees.
  • Cut the potatoes in halves or quarters, depending on their size, and place them on a sheet pan. Remove the ends of the onions, peel them, and cut them in half. Slice them crosswise in 1/4-inch-thick slices to make half-rounds. Toss the onions and potatoes together on the sheet pan. Add the olive oil, mustard, 2 teaspoons salt, and the pepper and toss them together. Bake for 50 minutes to 1 hour, until the potatoes are lightly browned on the outside and tender on the inside. Toss the potatoes from time to time with a metal spatula so they brown evenly.
  • Serve hot sprinkled with chopped parsley and a little extra salt.

Steps:

  • Preheat the oven to 400 degrees F. Coat a 13 by 9 by 2-inch baking dish with 1 tablespoon of butter and set aside.
  • Cook the potatoes in a large pot of boiling salted water until they are very tender, about 15 minutes. Drain; return the potatoes to the same pot and mash well. Mix in the milk and melted butter. Mix in the mozzarella and 3/4 cup of the Parmesan. Season, to taste, with salt and pepper. Transfer the potatoes to the prepared baking dish. 1 tablespoon kosher salt, plus 2 teaspoons
1 1/2 cups half and half
1/4 pound unsalted unsalted butter
1/2 cup sour cream
1/2 cup freshly grated Parmesan
1/2 teaspoon ground black pepper

Steps:

  • Place the potatoes and 1 tablespoon of salt in a 4-quart saucepan and add cold water to cover. Bring to a boil, lower the heat and simmer covered for 25 to 35 minutes, until completely tender. Drain.
  • In a small saucepan, heat the half-and-half and butter.Put the potatoes into the bowl of an electric mixer fitted with a paddle attachment and mix the potatoes for a few seconds on low speed, to break them up. Slowly add the hot cream and butter to the potatoes, mixing on the lowest speed (the last quarter of the cream should be folded in by hand). Fold in the sour cream, Parmesan cheese, the remaining salt, and pepper; taste for seasoning and serve immediately. If the potatoes are too thick, add more hot cream and butter.

1 head garlic
1/4 cup extra-virgin olive oil, plus more for drizzling
1 1/4 cups grated parmesan cheese (about 4 ounces)
1 sprig rosemary, plus 1 teaspoon chopped leaves
2 1/2 pounds russet potatoes (4 to 5 medium), peeled and cut into large chunks
Kosher salt
1/2 cup milk
1 stick salted butter, cut into pieces, at room temperature
1/2 cup mascarpone cheese

Steps:

  • Preheat the oven to 375 degrees F. Slice off about ¼ inch from the top of the garlic. Place on a sheet of foil and drizzle with olive oil. Wrap in the foil, place on a baking sheet and roast until the garlic is soft, 50 to 60 minutes. Meanwhile, spread 1 cup parmesan in a thin layer on a baking sheet (use a silicone mat if you have one); sprinkle with the chopped rosemary. Bake until golden and bubbling, 5 to 6 minutes. Let cool on the baking sheet.
  • Meanwhile, rinse the potatoes well with cold water to get rid of any excess starch. Transfer the potatoes to a saucepan; cover with cold water by 1 inch, season generously with salt and bring to a boil. Reduce the heat to medium low and simmer, uncovered, until the potatoes are very tender but not falling apart, about 30 minutes.
  • Let the garlic cool slightly, then unwrap and squeeze the cloves out of the skins into a small saucepan. Add the milk and rosemary sprig. Heat over medium heat, stirring occasionally, until hot but not boiling. Reduce the heat to low and keep warm.
  • Drain the potatoes and return to the pot over low heat; cook until any excess water evaporates, about 2 minutes. Strain the milk mixture into the pot with the potatoes, pressing on the solids. Add the butter, olive oil and 2 teaspoons salt and mash well with a potato masher. Fold in the mascarpone and the remaining 1/4 cup parmesan.
  • Transfer the potatoes to a bowl; crumble the crispy parmesan on top before serving.

1 1/4 cups whole milk or 1 1/4 cups 2% milk
1/4 cup low-fat sour cream

2 tablespoons dijon grainy mustard, divided
1/2 teaspoon salt
1/4 teaspoon white pepper
1 1/2 cups grated padano cheese or 1 1/2 cups white cheddar cheese

Steps:

  • If using red potatoes, scrub skins off: DO NOT PEEL; then cut potatoes into quarters.
  • If using Yukon Gold potatoes, peel and cut into chunks.
  • Place potatoes in a large saucepan or cooking pot, cover with water and bring to boil on high-heat.
  • Reduce heat to medium-low and boil gently, partially covered, until fork-tender; 15 to 20 minutes.
  • Meanwhile, pour 1 1/4 cups of milk into a 4 cup microwave safe measuring cup.
  • Add sour cream, garlic, 1 tablespoon of mustard, salt and pepper.
  • Whisk until mustard is well blended.
  • Microwave on HIGH (full power) until hot, about 2 to 3 minutes, stirring half way through.
  • Drain water from cooked potatoes and discard.
  • Return the potatoes to the saucepan and place on the hot burner and stir potatoes until the liquid evaporates.
  • Turn burner off and mash potatoes using a potato masher.
  • Stir in enough hot milk mixture to make potatoes creamy.
  • Stir in cheese and mix well until melted and blended.
  • Add remaining 1 tablespoon of Dijon mustard and mix well to incorporate.
  • Adust seasonings to taste.
  • Serve hot when ready.
  • NOTE: Padano cheese is the next best to Parmigiano Reggiano cheese, less expensive and is almost as good.
  • This recipe doubles well.

  • Drain and return to pot.
  • Heat half-and-half and butter in a small sauce pan until butter is melted.
  • Add warm mixture to potatoes, and mash with potato masher until smooth- (mine are never perfectly smooth) Fold in sour cream, Parmesan and mix well.
  • Add salt and pepper to taste.
  • If the potatoes seem thick, you may add a bit more cream and/or butter until the texture suits your taste.

5 red potatoes, scrubbed and halved
2 tablespoons butter
¼ cup milk
salt and pepper to taste
¼ cup whole grain mustard

Steps:

  • Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash potatoes in a large bowl with the butter and milk, and season with salt and pepper.
