PARMESAN GARLIC BREAD
This is a recipe I came up with myself. It is great with most Italian dishes. It can be doubled as needed.

Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- In a small bowl, mix butter, garlic salt, rosemary, basil, thyme, garlic powder and Parmesan cheese.
- Spread each half of the French bread with equal portions of the butter mixture. Sprinkle with additional Parmesan cheese, if desired.
- Place bread halves, crusts down, on a medium baking sheet. Bake in the preheated oven 10 to 12 minutes, or until the edges are very lightly browned.

BRIE WITH SUNDRIED TOMATOES
Brie with Sundried Tomatoes can be made for any occasion as an appetizer. Brie Cheese has a buttery flavor and creamy texture, which is perfect for this recipe. The brie looks pretty on a Christmas plate, and the red and green of the sundried tomatoes and parsley really accentuate the holiday theme.

Steps:
- Remove the rind from the Brie with a sharp knife and put the Brie on a serving plate
- In a small bowl combine the parsley, the Parmesan, the sun-dried tomatoes, the garlic, and the basil, and add the reserved oil, and combine the mixture well
- Spread the mixture over the Brie and let the Brie stand for 1 hour before serving
- Serve the Brie with the crackers or Parmesan Toasts

- Heat oil in a large saute pan over medium-high heat until it starts to shimmer (but not smoke), about 2 minutes. Add corn, and cook, stirring occasionally, until soft and slightly browned, 7 to 8 minutes. Season with salt and pepper.
- Add cream and stock, and cook, stirring constantly, until thickened slightly, 2 to 3 minutes.
- Remove pan from heat, and stir in Parmesan. Transfer to a serving dish, and sprinkle with more Parmesan if desired.
PARMESAN - COATED BRIE

- Combine egg and water in a shallow dish and set aside. Combine bread crumbs and cheese in a shallow dish and set aside. Dip Brie in egg mixture, turning to coat all sides. Place in breadcrumb mixture, turning to coat all sides. Repite procedure. Chill at least 1 hour. Cook Brie in hot oil in a heavy skillet over medium heat 2 minutes on each side or until golden brown. Garnish if desired. Serve with sliced bread (french) or crackers.

- Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off bulb. Brush with 1-1/2 teaspoons oil; sprinkle with rosemary. Wrap in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. , Meanwhile, cut the top fourth off the loaf of bread; carefully hollow out enough of the bottom of the bread so cheese will fit. Cube removed bread; set aside. Place cheese in bread. , Cool garlic for 10-15 minutes. Reduce heat to 375°. Squeeze softened garlic into a bowl and mash with a fork; spread over cheese. Replace bread top; brush outside of bread with remaining oil. Wrap in heavy-duty foil. , Bake for 45-50 minutes or until cheese is melted. Serve with toasted baguette, grapes and reserved bread cubes.

- In a large Dutch oven or heavy pot, heat the oil over medium. Add onion quarters and halved garlic, and cook, flat-side down, until the onion and garlic are lightly brown, about 3 minutes. Add Parmesan rinds, parsley, thyme, peppercorns, bay leaves and 12 cups water; bring to a boil.
- Once the water comes to a boil, reduce to a simmer. Partly cover and cook, stirring occasionally to prevent the cheese from sticking to the bottom of the pot, until broth is cloudy and tastes strongly like Parmesan, 2 1/2 hours.
- Strain the broth through a fine-mesh sieve, pressing the vegetables and cheese rinds to extract as much liquid as possible. Let cool, then store the broth in the refrigerator up to 1 week or the freezer up to 3 months.
