One of the most famous and beloved of all Hungarian dishes, this authentic Chicken Paprikash features chicken in an unforgettably rich, flavorful and creamy paprika-infused sauce! It's pure heaven!

2 tablespoons pork lard (, or butter (lard is traditionally used and we strongly recommend it for the best flavor))
3 pounds chicken pieces, bone-in and skin-on
2 medium yellow onions, very finely chopped
2 cloves garlic, finely minced
2 Roma tomatoes, seeds removed and very finely diced
1 Hungarian bell pepper, diced ((optional) )
3-4 tablespoons quality, genuine imported sweet Hungarian paprika
2 cups Aneto 100% All-Natural Chicken Broth ((our most favorite chicken broth))
or Aneto low sodium chicken broth
1 1/2 teaspoons sea salt
1/2 teaspoon freshly ground black pepper
3 tablespoons all-purpose flour
3/4 cup full fat sour cream (, room temperature (important to avoid lumps; be sure also to use full fat))
1/4 cup heavy whipping cream

Steps:

  • Heat the lard in a heavy pot and brown the chicken on all sides. Transfer the chicken to a plate. In the same oil, add the onions and fry until golden brown. Add the garlic and tomatoes (and pepper if using) and fry another 2-3 minutes. Remove the pot from the heat and stir in the paprika, salt and pepper (paprika becomes bitter if scorched).
  • Return the chicken to the pot and place it back over the heat. Pour in the chicken broth. The chicken should be mostly covered. Bring it to a boil. Cover, reduce the heat to medium-low and simmer for 40 minutes. Remove the chicken and transfer to a plate.
  • In a small bowl, stir the flour into the sour cream/cream mixture to form a smooth paste. Stir the cream mixture into the sauce, whisking constantly to prevent lumps. Bring it to a simmer for a couple of minutes until the sauce is thickened. Add salt and pepper to taste. Return the chicken to the sauce and simmer to heat through.
  • Serve the chicken paprikash with Hungarian nokedli, which is like German Spaetzle only they're very short and stubby. You can make nokedli with a spätzle scraper and using this recipe for the dough.

My family enjoys this pasta dish as a change from the typical tomato sauce. It is a great way to use up left over chicken (or turkey) and the use of short pasta is easy for smaller kids to manage. You can add a quarter cup of sour cream or yogurt when you add the cooked pasta to the sauce if you want to add a little zip.

1 tablespoon olive oil
1 tablespoon unsalted butter
1 onion, diced
2 red bell peppers, seeded and ribs removed, diced
8 ounces button mushrooms, quartered
1 jalapeno, seeded and ribs removed, minced
2 tablespoons tomato paste
1/4 teaspoon cayenne (or less to taste)
2 tablespoons smoked paprika
1 tablespoon cumin
4 garlic cloves, minced
1 (14 ounce) can tomato sauce
1 (14 ounce) can diced tomatoes, with their juices
3 cups cooked chicken, diced
1 tablespoon dried parsley
1 tablespoon dried chives
1 lb pasta, cooked al dente (short pasta such as bowties, wheels, elbows, etc.)
salt and pepper

Steps:

  • Add olive oil and butter to a 12-inch skillet and heat on medium-high until butter is melted and combined. Add in the onion, red peppers, mushrooms, and jalapeno, and cook until the vegetables are softened, 8 to 10 minutes.
  • Add the tomato paste, cayenne, paprika, and cumin and cook for 3 or 4 minutes until it is heated through and fragrant. Add in the garlic and cook for a minute.
  • Pour in the tomato sauce and diced tomatoes. Bring to a boil.
  • Add in the chicken, parsley, and chives. Turn the heat down to low and allow to simmer while the pasta cooks. Salt and pepper to taste.
  • Bring water to boil in a large pot. Salt the water just before dropping the pasta. Cook as directed on pasta container. Drain.
  • Add the cooked pasta into the skillet with the sauce and combine.

Not to be confused with the Hungarian dish of paprika-spiced stewed meat and vegetables, this American version of goulash, also referred to as "slumgullion," is made with ground beef and pasta. The beef is cooked down with plenty of aromatics and spices and combined with tomatoes, pasta, and cheese to create the perfect comfort meal. We added paprika to the dish in a nod to its Hungarian counterpart.

1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 pound ground beef
Kosher salt and freshly ground black pepper
1 teaspoon paprika
2 teaspoons Italian seasoning
1 tablespoon tomato paste
One 15-ounce can diced tomatoes
One 15-ounce can tomato sauce
1 teaspoon Worcestershire sauce
1 cup low-sodium beef broth
8 ounces cavatappi pasta
4 ounces sharp Cheddar, shredded on the large holes of a box grater (about 1 cup), plus more for serving
2 tablespoons chopped fresh parsley, plus more for serving

Steps:

  • Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
  • Add the beef and cook, stirring and breaking up the meat with a wooden spoon, until browned and no longer pink, about 8 minutes. Add 1 teaspoon salt, a few grinds of pepper, the paprika, and Italian seasoning to the beef and stir to combine. Cook, stirring, until the paprika begins to toast and become fragrant, about 1 minute. Stir the tomato paste into the beef mixture to coat, then cook until the paste thickens and deepens in color, about 2 minutes.
  • Add the diced tomatoes, tomato sauce, Worcestershire and beef broth to the beef mixture and stir, scraping up any browned bits from the bottom of the pot, to combine. Bring the mixture to a boil over medium heat. Reduce the heat to medium low and add the cavatappi. Cook, stirring occasionally, until the pasta is al dente, 8 to 10 minutes.
  • Remove the pot from the heat. Gently stir in the parsley and Cheddar until combined and the cheese starts to melt. Divide the goulash among 6 bowls and top with more shredded Cheddar and chopped parsley.

12 ounces boneless skinless chicken thighs, cut into 1-inch pieces
1/2 cup onion, chopped
1 garlic clove, minced
1 -2 tablespoon cooking oil
2 medium potatoes, peeled and diced
water
1 1/2 teaspoons paprika
1/2 teaspoon salt
1/4 teaspoon caraway seed
1/4 teaspoon dried marjoram, crushed
1/4 teaspoon fresh ground pepper
1 pinch dried thyme, crushed
2 tablespoons all-purpose flour
2 tablespoons water
hot cooked noodles or spaetzle noodles
sour cream (optional)

Steps:

  • In a large skillet cook chicken, onion, and garlic in 1 tablespoon hot oil for 3-4 minutes; or till chicken is tender and no pink remains.
  • Drain off fat. Add potatoes, tomatoes, 1/4 cup water, paprika, salt, caraway seed, marjoram, pepper and thyme. Bring to a boil; reduce heat. Cover and simmer for 10-12 minutes, or till potaotes are tender.
  • Stir together the flour and 2 tablespoons water; stir into chicken mixture. Cook and stir till thickened and bubbly. Cook and stir for one minute more. Serve over hot noodles or spaetzle. If desired serve with sour cream.

A spicy way to dress up stew beef. My mom made this when we were kids, and we loved it. It is spicy while not mouth-burning! Can be made with cheaper cuts of beef, and comes out very tender. If it gets too thick, add a little water while it's cooking. Garnish with sour cream.

3 onions, sliced
2 tablespoons Hungarian sweet paprika
2 teaspoons salt
½ teaspoon ground black pepper
3 pounds beef stew meat, cut into 1 1/2 inch cubes

1 ½ cups water
1 clove garlic, minced
1 teaspoon salt

Steps:

  • Heat oil in a large pot or Dutch oven over medium heat. Cook onions in oil until soft, stirring frequently. Remove onions and set aside.

Mouth-watering Hungarian goulash brimming over with chicken, onions and mushrooms. Paprika gives color and adds a spicy bite to the dish. Goulash originated in Hungary, and one of its most important ingredients is paprika which, together with tomatoes, produces a rich, deep red sauce. The best paprika still comes from Hungary, where it is produced in varieties that range from mild to very hot. Caraway seeds are added for texture and to help give the sauce its characteristic flavour. Traditionally, goulash is made with veal or pork, but it is adaptable to most meats, particularly chicken. Serve with baked or mashed potatoes and steamed green vegetables, such as cabbage and green beans.

8 boneless chicken thighs
2 medium onions
1 tablespoon paprika
1 teaspoon caraway seed
115 g button mushrooms
14 ounces canned chopped tomatoes
1 1/4 cups chicken stock
freshly chopped parsley (to garnish)

Steps:

  • Remove the skins from the chicken thighs. Heat a little of the skin in a nonstick frying pan and add the chicken.
  • Cook over a medium heat for about 15 minutes, until well browned on all sides.
  • Meanwhile, peel and roughly chop the onions. Remove the chicken from the frying pan, discard the skin, and pour away all but 1 tablespoon of fat.
  • Cook the onions in the pan with the paprika and caraway seeds for about 3 minutes, then add the mushrooms and cook for about 2 minutes.
  • Add the tomatoes and the stock and bring to the boil. Reduce the heat to a simmer, then add the chicken. Cover the pan and simmer for about 30-35 minutes, until the chicken is tender.
  • Remove the lid and reduce the liquid to a sauce consistency by fast boiling for 5 - 10 minutes, stirring frequently.
  • Then sprinkle with the freshly chopped parsley and serve immediately.

1 onion (large or 2 medium sliced)
1 cup mushroom (sliced)
3 tablespoons oil
1 roasted red pepper (skinned thinly sliced can also use a small jar store bought)
2 tablespoons paprika (sweet)
1/2 teaspoon chili powder or 1/2 teaspoon hot paprika
1 1/2 cups beef broth
1 cup sour cream
1 tablespoon flour

Steps:

  • Cut chicken breast into thin strips.
  • Peel and slice onions.
  • Wipe mushrooms clean and slice.
  • Heat oil in a large pan.
  • Add chicken and lightly brown.
  • Add onion and mushroom.
  • Season with paprika, chili powder and salt and saute for 5 minutes.
  • Remove pan from heat add the broth stirring to deglaze the pan.
  • Put pan back on heat bring to boil then reduce heat and simmer for 12-15 minutes.
  • Stir flour into the sour cream.
  • Taste the goulash to make sure it has enough spice if not then add to your taste.
  • Add roasted peppers to and sour cream to pan and stir to mix well.
  • Bring back to boil for about a minute.
  • Can be served over rice or broad egg noodles.
  • Enjoy.

3/4 lb boneless skinless chicken breast
1/2 white onion
2 garlic cloves
2 bell peppers
1 teaspoon olive oil
15 baby carrots
2 plum tomatoes
1 1/2 cups beef stock
1/2 cup tomato sauce
1 teaspoon paprika
salt
pepper
1 tablespoon cornstarch
2 tablespoons water
cooking spray

Steps:

  • Cut onion into strips. Mice the garlic. Over medium flame, heat oil in a large pot and add the onion and garlic. Cook stirring until onions are translucent. Be careful not to brown them. Next cut peppers into strips, carrots into slices and add to the onions. Add about a cup of the stock and bring to a boil. Reduce heat all the way to low, cover the pot and let everything simmer for about an hour or until very soft. Cut chicken into cubes and season to preference. In a separate pot cook chicken on cooking spray. Add to the vegetable stew and add the rest of the stock if it seems dry. Cut up tomatoes into cubes, add along with the tomato sauce into the chicken/vegetable mixture. Season with paprika. Add salt and pepper to taste. Let everything simmer for another 30 minutes or so. Mix cornstarch with water and add to the mixture. Let it come to a boil. Serve!
