FILIPINO-STYLE BANANA KETCHUP
Sweet floral bananas stand in for tomatoes in this spicy condiment that is unique to the Philippines, where a tomato shortage and concurrent banana surplus during World War II led to the invention of ketchup made with the tropical fruit. Use the ketchup like you would a chutney: as a dip for vegetables, as a spread on sandwiches, or as a sauce for grilled or roast chicken or pork.

Steps:
- Heat the oil in a small saucepan over medium heat. Add the onion and cook, stirring until softened, about 5 minutes. Stir in the ginger, turmeric, allspice, garlic and jalapeno and cook, stirring until fragrant, about 1 minute. Add the tomato paste and cook, stirring until lightly caramelized, about 1 minute. Add the mashed bananas, vinegar, brown sugar, soy sauce and rum, if using, and simmer, stirring occasionally, until slightly thickened, about 10 minutes. Scrape the sauce into a bowl, press a sheet of plastic wrap on the top and let cool. Refrigerate in an airtight container for up to 2 weeks.
PAPAYA KETCHUP
Another recipe from one of my favourite cookbooks - Marcus Samuelsson! This is one I haven't tried yet as I haven't seen any nice ripe papayas yet, but I think it sounds awesome! He says it goes good with grilled shrimp or chicken and with roti.

Steps:
- Heat the olive oil in a large saute pan over med hig hieat.
- Add the garlic and saute for 2 to 3 min, until softened.
- Add the tomatoes, chili, sugar, and vinegar, reduce the heat to med, and cook, stirring frequently, until the tomatoes are very soft, about 5 minutes. Remove from heat and let cool slightly.
- Transfer tomato mixture to a blender.
- Add the soy sauce, ginger, sesame oil, papaya, and lime juice and puree until smooth.
- Store in a tightly cover container in the fridge for up to 5 days.
PAPAYA GLAZED SHRIMP WITH RED PEPPER VINAIGRETTE
Steps:
- Pour pepper juice into a bowl. Add honey, red pepper flakes, and fish sauce. Cool in the refrigerator for 15 minutes.
- Meanwhile, in a food processor, combine papaya, ketchup, soy sauce, mango nectar, and hot pepper sauce. Puree.
- Grill shrimp, continuously basting with the papaya sauce.
- Saute garlic in olive oil. Add hearts of palm and char (to develop a deep brown color, do not move hearts of palm around). Add lime juice, cilantro and season with salt.
- Spoon red pepper vinaigrette into the bottom of bowl. Make a raft with the hearts of palm, and arrange shrimp on top.

- As a cleaning agent. The acidity of tomato sauce makes it an excellent cleaner for your copper ware and silver. It’s also affordable and all-natural. So instead of using nasty chemicals to shine your silverware, try using tomato sauce.
- Make a marinade. Both ketchup and tomato sauce are often seen as a base in a meat marinade. This is because the acidic nature of tomatoes tenderizes the meat, breaking down tough fibers and enabling the meat to hold more moisture – in other words, it makes the meat tender and juicy!
- Cook chicken. Use tomato ketchup for a no-fuss, flavorsome meal. The sweetness enhances caramelization, while the acidity breaks down meat fibers and makes it tender.
- Amp up flavor. Tomatoes naturally contain high amounts of glutamic acid, which provides the well-known umami – or ‘meaty’ taste to dishes. If you regularly make tomato-based dishes such as spaghetti bolognese or chilis, then try adding a bit of ketchup next time.
- Make your own sweet and sour sauce. Sweet and sour sauce is a popular condiment with Chinese food. You can either use it to coat chicken or as a dipping sauce for crispy spring rolls.
- Cast iron. Cast iron pots and pans have gained a notorious reputation of being hard to clean, and developing rust. But it shouldn’t be this way! To remove rust from your beloved cast iron cookware, simply cover it in ketchup, let it sit for about 15 minutes, and then scrub with a wire brush.
- Use as a skin scrub. Who knew tomato ketchup can be added to your beauty regime? Together with castor sugar, you can use it as a facial scrub. Castor sugar is finer than normal sugar, so it’s better suited for the sensitive skin on your face.
- As a hair fixer. It’s happened to many blondes before…you take a dip in the pool and end up with green hair. The green is caused by a reaction between the copper and chlorine in pool water, which then binds to the hair.
- Use the bottle. Once all your ketchup is finished, repurpose the squeeze bottle for something else. It makes a great dispenser for pancake batter, and you can create cool designs that will entertain the kids.
- Make paint. Okay, so perhaps you’re not using the ketchup itself, but you are repurposing the ketchup bottles! The plastic squeeze bottles make an ideal dispenser for children’s paint projects.
