- Follow the directions on the package of pasta to cook al dente.
- Meanwhile, melt the butter in a large saucepan over low heat. Whisk in the flour and cook for about 1 minute, whisking constantly.
- Gradually whisk in the milk; cook over medium heat, whisking until mixture thickens and bubbles. Remove from heat.
- Add cheeses, mustard, salt, and hot sauce, stirring until cheese melts and cheese sauce is smooth.
- Stir in the cooked pasta and cook over medium heat for 1 minute (or until thoroughly heated). Serve immediately.

PANERA MAC & CHEESE
I have been looking for this yummy, very filling recipe and finally found it on a People magazine website. I think it tastes exactly like Panera, especially when reheated. Don't forget to add milk when reheating. I am writing this recipe as published, adding my little notes. Please read my edits before attempting to make this...I copied the recipe as written but I do not put anyour hot sauce in mine. 12/13/11 - I am changing the hot sauce to optional...The second time I made this, my DH put a little more than the 1/4 tsp (probably 1 extra drop) and all you could taste was hot sauce. I started making it without the hot sauce and it's fine. 3/21/16...I looked up this recipe for the milk measurement and the only word I saw was GROSS...lol...anyway...I DO NOT use hot sauce when I make mine...put too much in once and it was gross...when I put the dijon mustard in...I put half the amount in and taste it and go from there...Do not use yellow mustard because it will be tangy.

- Prepare pasta according to package directions.
- Melt butter in a Dutch oven over low heat. (I just used a regular pan) Whisk in flour and cook 1 minute, whisking constantly.
- Gradually whisk in milk, cook over medium heat, whisking until mixture thickens and is bubbly. Remove from heat.
- Add cheeses, mustard, salt, and hot sauce, stirring until cheese melts and sauce is smooth.

- In a large stockpot, cook the pasta in salted water according to the package directions. Drain well and set aside.
- Meanwhile, in a large pot, melt the butter over medium heat until it's bubbly and melted, about 2 minutes.
- Add the flour and cook, stirring constantly, until the roux is frothy and smells nutty, about 3 to 5 minutes.
- Slowly whisk in the milk and heavy cream. Add the Dijon mustard and bring the mixture to a simmer over medium heat. Cook for 10 minutes, until the liquid has thickened.
- Remove the pot from the heat and add the white cheddar cheese one handful at a time, stirring until it's melted before adding the next handful of cheese. When all the cheese is added and incorporated, stir in the salt and pepper.
- Add the cooked pasta to the cheese sauce and stir to combine. If the pasta cooled down while you were waiting for the cheese sauce to cook, simmer the mixture over medium-low heat until it's warmed through.
- If the cheese sauce is too thick, add a splash of milk to thin it out. Alternatively, if the sauce is too thin, simmer it gently with the pasta until it reaches the desired level of thickness.
- Serve immediately. If there are leftovers, add 1/2 cup milk when reheating the leftovers to loosen up the sauce.

INSTANT POT PANERA MAC AND CHEESE RECIPE
This Instant Pot Panera mac and cheese recipe is even better than the copycat Panera version, and it's super easy to make in the Instant Pot.

- Place the pasta, 4 cups water, salt, and butter in the Instant Pot. Give it a quick stir. Secure the top and seal the valve. Use the pressure setting and set the clock to 4 minutes. The Pot will take about ten minutes to pressurize before the clock starts counting down. When the 4 minutes is up, use the quick release valve to release the steam. Protect your hands with a potholder or silicone gloves and turn the valve. If the pasta water starts to spurt, close the valve, wait about 15 seconds, and continue to turn the valve in brief intervals until the spurting stops. Let all of the steam release until the float valve descends and it is safe to remove the lid. If there is a significant amount of water in the pot, drain the water by gently pouring the water off into the sink. You needn't drain every last drop. Keep a colander in the sink just in case any pasta falls from the pot. Stir in the cheeses and milk. Stir in the mustard. If you drained the pasta, you may also add another tablespoon of butter and a pinch of salt, to taste. Add pepper and hot sauce if you like. You may put the Instant Pot in warming mode to help melt the cheese.

PANERA BROCCOLI CHEDDAR MAC & CHEESE
Steps:
- Cook pasta according to package directions in a large pot with well salted water.
- In a large skillet over medium high heat, melt butter. Add in onions, carrots and broccoli. Cook to soften about 5 minutes (may be more or less depending on the size vegetables you cut). if mixture gets dry add 1-2 tbsp olive oil. Remove veggies from pan and set aside in bowl
- At this point - get all of your liquids out in measuring cups and cheeses grated.
- In veggie pan, melt butter over medium heat. When melted, whisk in flour and cook for 2-3 minutes, whisking constantly to cook out the raw flour.
- Begin splashing in milk, cream and broth, alternating and whisking well. Continue pouring milk and cream in small amounts, constantly whisking to ensure smoothness, until the mixture is no longer a paste-like consistency but more like a soupy liquid.
- Turn heat to medium-low, whisking consistently and getting into the corners (to ensure nothing sticks to the bottom or the corners and burns), until the mixture becomes thick, about 5 minutes.
- Remove from heat and whisk in salt, pepper, mustard powder, garlic powder and onion powder.
- Place back on heat on low and add cheeses and stir until melted and smooth.
- Add in broccoli mixture and noodles, stir.

While it's not identical to what she's used to eating at PB, she said this is pretty close and tastes great. She devoured her plate in minutes. I've tried many homemade mac 'n cheese recipes and all of them have been snubbed by her. However, this one has her APPROVAL to go into the recipe book. Super creamy. Will need to add a bit more milk when reheating to thin out the sauce. The recipe I found calls for hot sauce, but I forgot to add it.
