This is VERY close to Pancho's "green" dressing they serve with guacamole salad. It's very good on tacos too.

- 1. Place everything in a jar with a lid and shake very well to mix. The jar is my favorite way to mix salad dressings. The mustard in this recipe will emulsify the dressing and keep it from separating if mixed thoroughly.
PONCHOS
Resembles a Cheeseburger Pizza in my book. Always a quick and easy no fail recipe that the whole family loves! It's been in my family for years. Biggest debate among family members is whether to use ketchup or tomato sauce. I'm a ketchup fan myself.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Combine ground beef and onion in a large skillet over medium-high heat. Cook and stir until meat is well browned and onion is soft. Drain grease.
- Cut each French roll into quarters. Spread the processed cheese sauce on cut sides of each piece; place on a baking sheet. Evenly spoon the cooked beef onto the cheese topped rolls. Top each roll with a dab of ketchup.
- Bake in preheated oven until rolls are crisp and filling is hot, about 20 minutes.

Steps:
- Cut corn tortillas in triangles (as you would cut a pie), fry tortilla chips in cooking oil until crispy.
- Remove from oil and set on paper towels to drain. Lay out tortilla chips on a cookie sheet.
- Heat refried beans in skillet for about 6-8 minutes, stirring so they do not stick to skillet.
- Remove skin and seed from Avacado and mash well, adding salt to taste.
- Then take 1 cheese quarter, and place on each tortilla chip. Place cookie sheet in 350 degree oven about 1-2 minutes until cheese has slightly melted but not completely.
- Remove chips from cookie sheet and place on a platter.
- Then take 1/2 teaspoon of refried beans and 1/2 teaspoon of mashed avacado, top each one with 1 slice of jalapeno.
- Enjoy!

Actually kinda nasty. The food wasn't much better. The cheese dip was great. When our order was brought to the table all of our food was warm at best. The Pancho's dressing was very good. Due to the lukewarm food and dirty surroundings, I don't think I'll be back anytime soon.
