Simple 15 minute Pan Seared Salmon is flaky, juicy, and absolutely delicious! It is extremely easy to make. Just lightly dust each fillet in seasoned flour, and then pan-fry it to crispy perfection. With only 5 ingredients, this healthy fish recipe is perfect for a no-fuss weeknight meal, or on the weekend when you're in a hurry but still want to eat well!

4 6-ounce salmon fillets
1/2 teaspoon kosher salt
freshly ground black pepper
2 teaspoons all-purpose flour
1-2 Tablespoons olive oil

Steps:

  • Thaw salmon thoroughly, if using frozen. Pat dry on both sides with paper towels.
  • Heat the oil in a cast iron or other heavy duty skillet over medium-high heat. Season salmon on both sides with the salt and pepper. Sprinkle with half of the flour on one side. Lay the salmon floured side down in the pan, skin side up if your fillets have skin on them, then sprinkle remaining flour on top.
  • Cook for 4 minutes on each side without moving. Once seared, the salmon should easily release from the pan to be flipped.

This 15-minute crispy pan seared salmon will quickly become a go-to dinner! Prepared Mediterranean-style and served with a simple arugula salad. Be sure to read all the tips in the post above.

1 lb boneless salmon fillet (4 fillets about 4 oz each, skin on)
Kosher salt and pepper
1 ½ tbsp dry oregano
1 tbsp garlic powder
¾ tsp paprika
Extra virgin olive oil
Zest of 1 lemon + Juice of 1 ½ lemon
5 oz baby arugula to serve along

Steps:

  • Pat salmon dry on both sides and sprinkle with kosher salt and black pepper.
  • Make seasoning mix & season salmon. In small bowl, mix together the dry oregano, garlic powder and paprika. Season the flesh side of the fish with this spice mixture.
  • Sear the Salmon. In a large cast iron skillet, heat 2 tbsp extra virgin olive oil over medium-high heat until shimmering but not smoking. Reduce the heat to medium-low and add one salmon fillet, skin-side down, and press the top with the back of a fish spatula for about 10 seconds (this prevents the skin from curling up.) Add the remaining salmon fillets, one at a time, pressing each with the spatula for 10 seconds. Cook for about 4 minutes. If skin resists lifting (or if it's sticking to the pan), allow the fish to cook for a little bit longer until you are able to lift up easily (no more than 6 minutes in total). Using the spatula and a fork to assist in flipping, flip the fish to the flesh side to cook for about 15 seconds or so. ( Salmon is ready when it registers 110°F (43°C) in the very center for rare, 120°F (49°C) for medium-rare, or 130°F (54°C) for medium, 5 to 7 minutes total.)
  • Remove salmon from heat and immediately add lemon juice and lemon zest.
  • Make arugula salad. In a bowl, add the baby arugula. Season with salt and add juice of ½ lemon and extra virgin olive oil. Toss to combine.
  • Serve salmon with arugula salad (or any of the sides or salads suggested in the post). Enjoy!

2 tablespoons garlic-flavored olive oil
4 (4-ounces each) skin-on salmon fillets
salt and fresh ground black pepper (to taste)
1 tablespoon butter
3 cloves garlic (minced)
2 cups halved cherry tomatoes
1 bag (6 ounces) baby spinach
1/2 cup low fat evaporated milk ((you can also use half & half or heavy cream))
1/4 cup grated parmesan cheese
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh parsley

Steps:

  • Heat olive oil in a large skillet over medium-high heat.
  • Season salmon fillets with salt and pepper and transfer to the skillet, skin-side up.
  • Cook for about 7 to 8 minutes, or until browned and cooked about three quarters of the way through.
  • Flip over and cook for 2 more minutes more; remove from skillet and set aside.
  • Add butter to skillet and melt over medium heat.
  • Stir in garlic and cook for 1 minute.
  • Add cherry tomatoes and season with salt and pepper.
  • Continue to cook for 1 to 2 minutes, or until tomatoes begin to soften.
  • Stir in spinach and cook for 1 minute, or until spinach is beginning to wilt.
  • Stir in evaporated milk, parmesan cheese, basil, and parsley; bring to a simmer.
  • Reduce heat to low and cook for 2 minutes.
  • Add salmon back to skillet and continue to cook for 3 minutes, or until salmon is heated through.
  • Remove from heat.
  • Spoon sauce over each fillet and serve.

4 6-ounce Salmon fillets ((skin on, about 1 inch thick))
1 tsp Sea salt
1/4 tsp Black pepper
1 tbsp Olive oil
6 tbsp Salted butter ((softened))
1 1/2 tbsp Lemon juice
4 cloves Garlic ((minced))
1 tbsp Fresh dill ((chopped))
1 tbsp Fresh parsley ((chopped))

Steps:

  • If your salmon fillets are not descaled, use a knife to gently scrape off the scales.
  • In a small bowl, mash together the butter, lemon juice, garlic, dill, and parsley. Set aside.
  • Use paper towels to pat the salmon fillets completely dry - this will ensure even browning.
  • Heat the olive oil in a large, heavy bottomed nonstick skillet over medium-high heat for 2 minutes, until shimmering and hot. (You can test that it's hot enough by adding a drop of water to the pan; if it sizzles, the pan is ready.)
  • Once the pan is hot, right before you are ready to sear the salmon, season both sides with sea salt and black pepper.
  • Add the fish fillets to the pan in a single layer, skin side down. Use a fish spatula to press down on top of each fillet for the first 10 seconds immediately after adding it to the pan, to prevent curling. Sear, without moving, for 5-6 minutes, until the salmon is 80-90% opaque; only the top will be not quite done.
  • Use the fish spatula to flip the salmon fillets. Working quickly, immediately add the herb butter mixture to the pan near (but not on top of) the salmon. Cook the salmon for about 1 minute, stirring the butter around the salmon as it melts, but without moving the salmon, until the seared salmon internal temperature reaches your desired doneness: 125 degrees F (51 degrees C) for medium rare, 130 degrees F (54 degrees C) for medium, or 140 degrees F (60 degrees C) for well done.
  • Flip salmon over and spoon the lemon butter sauce over it. Remove from the pan immediately to avoid overcooking.

750 g (1½lb) Salmon fillets
1 tsp Salt
2 tsp olive oil
1 Shallot (finely chopped)
3 Garlic cloves (crushed)
750 g (1½lb) baby peas
2 tsp fresh dill (finely chopped (or 1 tsp dried dill) )
1 cup Cream
2 tbsp Sour cream
2 tsp Lemon juice
salt and pepper (to taste )

Steps:

  • Pat salmon fillets dry with paper towels. If you're using frozen salmon, allow to thaw in the fridge overnight.
  • Drizzle with a few teaspoons of olive oil and season with salt.
  • Place a large skillet or frying pan over medium-high heat and allow to preheat for a minute or two.
  • Place the salmon into the pan, skin-side down, and allow to sear for 2-3 minutes until the skin is crisp and golden.
  • Carefully flip over and allow to sear for another 2-3 minutes or until cooked to your preference.
  • The salmon is cooked when the flesh easily flakes apart. Remove the salmon from the pan and set aside.
  • In the same pan, add another tablespoon of oil then add the finely chopped shallot and garlic.
  • Sauté for a minute or two then add the peas and dill. Pour in the cream and add the sour cream.
  • Season with salt and pepper then bring to a simmer.
  • Cook for 5 minutes or until the peas are cooked. Add a squeeze of lemon juice and stir into the sauce.
  • Place the salmon back into the pan and allow to reheat.
  • Serve the salmon and peas with lemon wedges.

3 tablespoons unsalted butter
3 medium leeks, white and light-green parts only, washed well and sliced into 1/2-inch rounds (about 1 1/2 cups)
1/3 cup dry white wine
1/3 cup heavy cream
3 tablespoons finely chopped fresh chives
Coarse salt and freshly ground pepper
1/4 cup Homemade Chicken Stock
1 tablespoon extra-virgin olive oil
4 six-ounce salmon fillets
Arugula, washed well and dried, for garnish
Lemon wedges, for garnish

Steps:

  • Melt butter in a medium skillet set over medium-low heat. Add leeks; simmer, stirring occasionally, 5 minutes. Add wine, and simmer until leeks are very tender, about 4 minutes. Add cream and 2 tablespoons chives; return to a simmer. Season with salt and pepper. Reserve half; transfer remaining mixture to jar of blender. Add chicken broth, and puree until leek sauce is smooth.
  • Meanwhile, heat oil in a large saute pan over medium heat. Season fillets with salt and pepper; place in pan skin side down. Cook until skin side is well browned, about 5 minutes. Turn over, and saute just until fish is cooked through, 3 to 6 minutes more; it should still be slightly pink in the center. Transfer to a platter.
  • Serve salmon with leek sauce. Garnish with reserved leek mixture, remaining chives, arugula, and lemon wedges.
