Homemade Peanut Butter Cups image

A secret ingredient (saltines!) helps mimic the texture of the peanut butter filling in the store-bought version of this candy favorite.

18 ounces milk chocolate, chopped (about 2 1/2 cups)
1 cup smooth peanut butter
1/2 cup confectioners' sugar
1/4 cup saltine crackers, finely crushed (about 8)
2 tablespoons unsalted butter, softened
Pinch salt

Steps:

  • Melt the chocolate in the top of a double boiler. Keep the chocolate warm over low heat until you are ready to start assembling the peanut butter cups.
  • Combine the peanut butter, confectioners' sugar, saltines, butter and salt in a bowl and blend with an electric mixer until well combined
  • Prepare a muffin pan with 18 paper muffin liners. Add 1 teaspoon melted chocolate to the bottom of a muffin liner. Using the teaspoon, spread the chocolate in a thin, even layer on the bottom and a third of the way up the side. Repeat with the remaining liners. Place the muffin pan in the freezer until the chocolate is set and hardened, about 5 minutes.
  • Spread 2 heaping teaspoons of the peanut butter filling in the bottom of a chocolate-coated muffin liner (it should come to below the chocolate line). Top the peanut butter filling with 2 more teaspoons of melted chocolate, spreading it over the top so no filling is visible. Repeat with the remaining liners. Freeze for 10 minutes.
  • Serve chilled or at room temperature.

1 cup peanut butter
1/4 teaspoon salt
1/2 cup powdered sugar
1 (12-ounce) package Hershey's milk chocolate chips

Steps:

  • In a small bowl, mix the peanut butter, salt and powdered sugar until firm. Slowly melt the chocolate chips in a double boiler over hot, not boiling, water. You may also melt them in a microwave oven set on high for 2 minutes, stirring halfway through the heating time. Grease the muffin tin cups and spoon some chocolate into each cup, filling halfway. With a spoon, draw the chocolate up the edges of each cup until all sides are coated. Cool in the refrigerator until firm. Spread some of the peanut butter onto the chocolate in each cup, leaving room for the final chocolate layer. Cool the cups again to firm up the peanut butter. Pour some chocolate onto the top of each candy and spread it to the edges. Let sit at room temperature, or covered in the refrigerator. Turn out of the pan when firm.

1 cup creamy peanut butter, divided
1/2 cup confectioners' sugar
4-1/2 teaspoons butter, softened
1/2 teaspoon salt
2 cups semisweet chocolate chips
4 milk chocolate candy bars (1.55 ounces each), coarsely chopped
Colored sprinkles, optional

Steps:

  • Combine 1/2 cup peanut butter, confectioners' sugar, butter and salt until smooth. , In a microwave, melt chocolate chips, candy bars and remaining peanut butter; stir until smooth., Drop teaspoons of chocolate mixture into paper-lined mini muffin cups. Drop a scant teaspoon of peanut butter mixture into each cup; top with another teaspoon of chocolate mixture. If desired, decorate with sprinkles. Refrigerate until set. Store in an airtight container.

Steps:

  • In a small bowl, place half of the chocolate chips.
  • Melt in the microwave in 30 second intervals, stirring in between, until fully melted.
  • Pour melted chocolate into a 10-inch (25 cm) tart pan making sure to coat the entire pan, including all sides.
  • Refrigerate until set.
  • In a large bowl, place the peanut butter, powdered sugar, and softened butter and mix until smooth.
  • Pour the peanut butter into the tart pan and smooth the surface.
  • Melt remaining chocolate and pour over the peanut butter.
  • Smooth out the chocolate making sure it covers the entire surface.
  • Refrigerate until set, about 1 hour.
  • Slice and serve.

5 ounces unsweetened chocolate
1/4 cup heavy cream
3/4 cup erythritol (powdered)
1 cup sugar substitute (concentrated liquid Splenda preferred)
1/4 teaspoon salt
1 teaspoon vanilla
1/2 cup peanut butter
1 cup almond meal
1 cup sugar substitute (concentrated liquid Splenda preferred)
1 dash salt

Steps:

  • Heat cream and the rest of ingredients. Turn off heat and add chocolate. If you're melting it in the cream, let stand until chocolate is melted - stir once in awhile. When it is all melted, the mixture will be fairly thick. Adjust sweetener to taste.
  • While the cream is heating and chocolate melting, mix up the filling. If it's too sticky, put a little more almond flour or erythritol into it. You want to be able to form it easily without getting it all over your hands. Adjust sweetness (and possibly salt level) to taste.
  • Put heaping tablespoons or globs of the chocolate the size of a walnut into the mini muffin tin. If it is thick enough you can sort of push out a place in the center and make the chocolate even around the sides. If it isn't yet thick enough for this, don't worry, the peanut butter will push it up the sides.
  • Form the peanut butter into smaller globs/balls. Push them into the chocolate, including pushing the top so it's flat.
  • Chill the whole thing in the refrigerator for half an hour or so.
  • Remove from fridge and run hot water over the bottom of the pan for just a few seconds.
  • Take a thin knife (I use plastic) and insert it at the edge of a cup. You should be able to turn the whole thing a bit - then you know you can easily pop it out. If it doesn't work right away, give it a few seconds so that the heat can penetrate, or it may need another shot of heat.

2 cups graham cracker crumbs

2 cups confectioners' sugar

  • Melt margarine and place in a large bowl.
  • Blend in peanut butter.
  • Blend in crumbs and stir until it is evenly mixed.
  • Add the sugar and blend well.
  • Pat down into buttered 9x13 inches pan.
  • Melt the chocolate chips and spread over peanut butter mixture.
  • Chill in the refrigerator for about an hour before cutting into squares.

1 cup crunchy peanut butter (No Sugar Added)
1/4 cup graham cracker crumbs (Crumbled fine like a powder)
1/4 cup saltine crumbs (Crumbled fine like a powder)
1/4 cup powdered sugar
1/4 teaspoon salt
1/2 cup chocolate wafer crumbs
1 tablespoon butter
1/4 cup chocolate chips

Steps:

  • Filling:.
  • Mix all filling ingredients together with an electric mixer until combined and it resembles a cookie dough. Set aside.
  • Crust:.
  • Put all crust ingredients together in a microwave safe bowl. Microwave just until chocolate chips and butter has melted. After the chocolate and butter has melted, mix it all together until combined. If the mixture seems too wet, add some more cookie crumbs.
  • Final Product:.
  • In a muffin pan lined with muffin cups, spoon rounded teaspoons of the crust mixture into the cups. Spread the crust mixture in the cups around so it cover the bottom completely and goes up the side a bit so it makes a well for your filling. Now add rounded tablespoons of the peanut butter mixture to your cups and spread it around to the edges. Place the pan into the refrigerator or freezer and allow to cool so that the chocolate crust can harden.
  • Eat it.
