2 (4 ounce) filet mignon steaks
½ teaspoon freshly ground black pepper to taste
salt to taste
¼ cup balsamic vinegar
¼ cup dry red wine

Steps:

  • Sprinkle freshly ground pepper over both sides of each steak, and sprinkle with salt to taste.
  • Heat a nonstick skillet over medium-high heat. Place steaks in hot pan, and cook for 1 minute on each side, or until browned. Reduce heat to medium-low, and add balsamic vinegar and red wine. Cover, and cook for 4 minutes on each side, basting with sauce when you turn the meat over.
  • Remove steaks to two warmed plates, spoon one tablespoon of glaze over each, and serve immediately.

2 tablespoons olive oil (I use this brand) Code Peaceloveandlowcarb for 15% off
(4) 8 ounce steaks, cut of your choice (I get my meat here)
sea salt and black pepper, to taste
1 small shallot, finely chopped
2 tablespoons butter or Butter Flavored Coconut Oil for paleo or Whole30
1/3 cup balsamic vinegar (I use this brand)
¼ cup beef broth
¼ cup spicy brown mustard or dijon mustard

Steps:

  • In a large skillet or grill pan, heat the olive oil over medium-high heat. Season the steaks on both sides with a little sea salt and black pepper. Sear the steaks for 3-4 minutes on each side or until they have reached desired level of doneness. Remove the steaks from the pan, and place on a plate covered with foil while you make the sauce. Alternately you can hold the steaks in the oven on low.
  • To the skillet, add the shallots and butter and sauté until the shallots are soft and translucent. Add the balsamic vinegar, beef broth, and mustard to pan. Use a rubber spatula to scrape any bits of steak from the bottom of the pan and mix into sauce. Bring to a boil over medium heat and then reduce heat to low and simmer 5 minutes.
  • Pour the sauce over top of the steaks before serving.

DH and I made this recipe for lunch today and thought it was good for a fast and easy to prepare meal. It is from my Williams-Sonoma "Steak and Chops" cookbook. Instead of cooking the steak in a pan as posted, we grilled ours. DH usually adds a small bit of steak fat to the pan he's cooking the sauce in to give it flavor. We used white truffle oil, as the recipe does not specify white or black.

4 filet mignon steaks, 1 1/2 inches thick
salt, to taste
fresh ground black pepper, to taste
1 tablespoon olive oil
1/4 cup balsamic vinegar
2 tablespoons unsalted butter
truffle oil, for drizzling

Steps:

  • Sprinkle steaks generously with salt and pepper.
  • Coat the bottom of a large, heavy frying pan with olive oil and heat over medium-high heat. Add the steaks and cook to the desired doneness, 3-5 minutes on each side.
  • Transfer to a platter and let rest, tented loosely with aluminum foil, while you make the sauce.
  • In the same pan over medium-high heat, add the vinegar and deglaze by scraping up any browned bits from the bottom. Cook until slightly reduced and thickened, about 3 minutes.
  • Remove from the heat. Whisk in the butter to form a smooth sauce.
  • To serve, transfer the steaks to individual plates, top with the sauce, and drizzle with a small amount of truffle oil.

A tender rib-eye or porterhouse steak is pan-cooked and served with a sauce made with shallots, beef stock, butter, and balsamic vinegar.

Number Of Ingredients 7

1 large (18-20 ounce size) rib-eye or porterhouse steak
salt & pepper (to taste)
extra virgin olive oil
1 teaspoon butter
2 medium shallots, finely diced
1/4 cup balsamic vinegar (or to taste)
1/2 cup beef stock

Steps:

  • Heat a heavy pan over medium-high heat. Season the steak on both sides with salt and pepper. Add enough oil to the hot pan to coat the bottom. When the oil starts to smoke, add the steak. Do not move it once you place it in the pan. Turn the steak over after 4 minutes for medium-rare (actual time will depend on the thickness of the steak so adjust accordingly). Cook for 4-5 more minutes or until done. When the steak is done, remove it from the pan and set it aside to rest. Return the pan to the heat and add the butter. When the butter has melted, add the shallots and stir while cooking. Once they begin to brown, add the vinegar and scrape the bottom of the pan to remove any stuck on bits. Be careful of the vinegar fumes as they are potent. When the pan has been deglazed and the vinegar mixture has reduced and thickened, add the beef stock and stir. Let the sauce simmer for 2-3 minutes. Serve the sauce with the steak.

4 (1-inch) Delmonico steaks, 8 to 10 ounces each
2 teaspoons extra- virgin olive oil
Steak seasoning blend, such as Montreal Steak Seasoning, or coarse salt and pepper
1 tablespoon extra-virgin olive oil, 1 turn of the pan
2 large yellow skinned onions, thinly sliced
1/4 cup balsamic vinegar, eyeball it
1 1/2 teaspoons extra-virgin olive oil, half a turn of the pan
2 cloves garlic, chopped
1 small white boiling onion, chopped
1/4 cup dry cooking sherry, eyeball it
1 cup canned tomato sauce, 8 ounces
1 tablespoon Worcestershire sauce, eyeball it
Black pepper

Steps:

  • Heat a heavy grill pan or griddle pan over high heat. Wipe hot grill or griddle with extra-virgin olive oil. Cook steaks 6 minutes on each side for medium doneness, 8 minutes for medium well. Season steaks with steak seasoning or salt and pepper and remove to a warm platter to allow the meat to rest.
  • Heat a medium nonstick skillet over medium high heat. Add oil and onions and cook, stirring occasionally, 10 to 12 minutes, until onions are soft and sweet. Add balsamic vinegar to the pan and turn onions in vinegar until vinegar cooks away and glazes onions a deep brown color, 3 to 5 minutes.
  • Heat a small saucepan over medium heat. Add oil, garlic and onions and saute 5 minutes until onion bits are tender. Add sherry to the pan and combine with onions. Stir in tomato sauce and Worcestershire and season with black pepper.
  • To serve, top steaks with onions and drizzle a little steak sauce down over the top, reserving half of the sauce to pass at table.

A very fast and easy recipe for a delicious steak indoors with a superb sauce--my family loves this! Rib-eye steak can be substituted for the chuck steak.

4 (8 ounce) beef chuck steaks, well trimmed
salt and pepper to taste
2 cloves garlic, crushed
½ cup Marsala wine
½ cup chicken broth
3 tablespoons butter
¼ teaspoon dried rosemary, crushed

Steps:

  • Heat a large, heavy skillet over high heat for 2 minutes, or until very hot. Season steaks with salt and pepper to taste.
  • Place steaks in hot skillet and immediately turn down the heat to medium high. Cook for 4 minutes. Turn steaks and cook for an additional 4 to 6 minutes, depending on your tastes. Remove steaks from skillet to a platter and cover with aluminum foil to keep warm.
  • Remove skillet from heat. Quickly saute the garlic for 1 to 2 minutes in the skillet using residual heat. Return skillet to medium low heat and add Marsala and chicken broth. Bring to a boil and reduce for 3 minutes.
  • Remove pan from heat and whisk in butter and rosemary. Serve sauce over steaks.

4 filet of beef, about 1 1/2 inch thick (or small steaks of your choice)
coarse salt (Kosher)
1/4 cup red onion, finely chopped
1/2 cup balsamic vinegar
fresh coarse ground black pepper
3 tablespoons butter

Steps:

  • Put coarse (Kosher) salt in iron skillet.
  • Heat skillet over high heat.
  • When salt begins to sizzle or jump, place steaks in pan.
  • Sear until crusty for about 3 minutes.
  • Turn steaks over and sear again for about 3-4 minutes (for rare).
  • Add another minute or two to desired doneness.
  • Remove steaks to platter; keep warm.
  • Add chopped onion to pan; stir for about 30 seconds.
  • Add balsamic vinegar; boil until reduced to about 2 tablespoons.
  • Add 3 Tbsps butter; swirl to melt.
  • Add black pepper.
  • Pour glaze over warm steaks and serve immediately.

3 tablespoons vegetable oil
2 large red onions, large, peeled & cut into 1/2 slices, rings separated
1/2 teaspoon salt
3 (8 -10 ounce) boneless strip steaks
3 garlic cloves, minced
1/2 cup balsamic vinegar, plus
1 tablespoon balsamic vinegar
1 teaspoon fresh rosemary, minced
1 tablespoon light brown sugar
salt
pepper

Steps:

  • Heat 2 tablespoons of the oil in a large heavy skillet over medium heat.
  • Add onions & salt and cook, stirring often, until lightly browned, about 10 minutes. Transfer to a bowl. Wipe out skillet with paper towels.
  • Add remaining oil to skillet & adjust flame to medium high.
  • Pat steaks dry & add to oil. Leave them alone for for 4-5 minutes then flip & cook other side 3-4 minutes. Remove & wrap tightly in foil.
  • Discard any remaining fat in skillet, return onions to pan & reduce temp to medium. Add garlic & cook 30 seconds.
  • Add 1/2 cup vinegar, rosemary and brown sugar and cook, scraping up browned bits, until thick & syrupy, about 2 minutes.
  • Unwrap steak & pour any accumulated juices in skillet along with remaining vinegar. Salt & pepper to taste.
  • Slice steaks crosswise in 1/4 slices & serve topped with onions & sauce.

2 strip steaks (each about 1 inch thick), room temperature
Kosher salt and freshly ground pepper
1 teaspoon unsalted butter
Simple Steak Sauce, optional

Steps:

  • Heat a large heavy-bottomed skillet (preferably cast iron) over high 5 minutes. Generously season steaks with salt and pepper. Add 1/2 teaspoon butter to pan, then immediately top with one steak. Repeat with remaining 1/2 teaspoon butter and steak. Cook without moving steaks until a golden brown crust forms, 3 to 4 minutes. Turn and cook 2 minutes more for rare, or 3 to 4 minutes more for medium-rare. Transfer to a cutting board and let rest 5 minutes. Slice steaks against the grain; serve with sauce, if desired.
  • Heat a 10- or 12-inch cast-iron skillet over high heat. Season the steaks liberally with salt and pepper. Seconds before adding a steak, drop 1/2 teaspoon of the butter into the pan and immediately top with the steak. Repeat with the remaining steak. Sear for 3 minutes without moving the steak (to form a crust). Turn and cook for 2 minutes for rare or 3 to 4 for medium rare. Remove the steaks from the pan and let them rest on a board or platter for a few minutes before serving.

1/4 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
1 lb sirloin steak
1 tablespoon butter
1/2 teaspoon garlic, minced
1 medium sweet onion, finely chopped
3 cups small brown button mushrooms, sliced
1/2 teaspoon thyme, dried
2 tablespoons flour
1 cup beef stock
1 cup milk
1 tablespoon prepared horseradish (or dijon mustard)
1/8 cup parsley, fresh chopped

Steps:

  • Rub salt and pepper on both sides of steak.
  • In large pan melt butter and brown steak well on both sides.
  • (2-3 minutes per side-- do not cut down on browning time as this really contributes to the overall flavour of the dish) Remove steak and set aside.
  • Reduce heat to med-high add remaining butter, garlic, onion, mushrooms and thyme, (stir for 10 minutes) until mushrooms start to brown.
  • Add flour and cook for 1 minute.
  • Add in beef stock, milk and horseradish.
  • Reduce heat and simmer, stir for 5 minutes until sauce thickness.
  • Add steak and juice, simmer for 5 minutes.
  • Let steak rest for 5 minutes while you season the sauce with additional salt and pepper to taste.
  • Slice steak thinly across the grain, drizzle with sauce and sprinkle parsley on top.

Steps:

  • Coarsely grind peppercorns with a mortar and pestle. Pat steaks dry and coat both sides with peppercorns, pressing to adhere. Season with salt.
  • Heat oil with 1 tablespoon butter in a 12-inch heavy skillet over moderately high heat until hot but not smoking. Reduce heat to moderate and cook steaks, 2 at a time, about 4 minutes on each side for medium-rare.
