FRIED WHOLE RED SNAPPER WITH SPICY CHILE SAUCE



Fried Whole Red Snapper with Spicy Chile Sauce image

3 ounces fish sauce
6 ounces water
1 tablespoons chile garlic sauce
2 limes, juiced
2 ounces sugar
1 tablespoons cornstarch mixed with 2 tablespoons of water
2 tablespoons chopped scallion
2 cups vegetable oil
1 whole red snapper (about 1 1/2 pounds), scaled, eviscerated, and fins removed
Salt and pepper
Flour
Serving suggestion: Steamed rice

Steps:

  • Mix the fish sauce, water, chile garlic sauce, the lime juice, and sugar together in a small pan and bring to a boil.
  • Fill a large heavy saute pan with 1-inch of oil and heat for 5 minutes until hot, but not smoking.
  • Make 2 diagonal cuts on each side of the fish for ease of cooking. Salt, pepper, and flour both sides of the fish. Fish should be dry, as to not splatter oil when frying. Lower fish into oil, the oil should bubble vigorously. Cook 4 minutes on each side until golden brown. Check cuts on fish for doneness.
  • When fish is almost cooked, heat up sauce and stir in cornstarch mixture while sauce is boiling. Sauce should be slightly thick, but not lumpy. Remove fish from oil and slightly dry with paper towels. Add scallions to the sauce and pour over fish to cover. Serve with steamed rice.

1 cup mayonnaise
1 teaspoon finely chopped garlic
1 poblano pepper, roasted, peeled, seeded and diced
2 tablespoons fresh lime juice
Salt and freshly ground pepper
4 large eggs, lightly beaten
Salt and freshly ground pepper
2 cups seasoned all-purpose flour
2 cups seasoned blue cornmeal
4 red snapper fillets (about 6 ounces each)
1/2 cup vegetable oil
2 pounds kale, center stalks removed
4 tablespoons unsalted butter
1 cup heavy cream
1/8 teaspoon ground nutmeg
Salt and freshly ground pepper

Steps:

  • Green Chile Aioli: Combine all ingredients in a blender and blend until smooth.
  • Red Snapper: Season the eggs lightly with salt and pepper. Place the eggs, flour, and cornmeal in 3 separate bowls. Season the snapper fillets lightly on both sides with salt and pepper. In a large saute pan over medium-high heat, heat the oil. Dredge each fillet in the flour and shake off any excess. Dip into the beaten egg and let the excess drip off. Dredge both sides lightly in the cornmeal and shake off any excess. Saute for 3 minutes on each side and drizzle with the red pepper sauce. Serve immediately, garnished with green chile aioli.
  • Creamed Kale: Blanch the kale in lightly salted water until tender, rinse in ice water, drain and cut into 1/2-inch ribbons. In a large saute pan over medium heat, melt the butter and add the kale, cream and nutmeg. Reduce the heat to low and cook for 5 minutes, or until the cream has reduced and thickened. Season with salt and pepper to taste.

4 salmon fillets, (6 to 8 ounces each)
Essence, recipe follows
3 tablespoons olive oil
4 red snapper fillets, (6 to 8 ounces each)
1/2 cup flour
1/2 cup vegetable oil
4 cups julienne assorted vegetables, such as zucchini, yellow squash, red cabbage, red onions, carrots, or shiitakes
Salt
Finely ground white pepper
1 cup Lemon Butter Sauce, recipe follows
Garnish: chopped parsley
1 dash Worcestershire sauce
1 cup dry white wine
1 dash hot pepper sauce
1/2 cup heavy cream
3 lemons, peeled and quartered
1/2 pound (2 sticks) unsalted butter, cut up, at room temperature
2 tablespoons minced garlic
1 tablespoon finely chopped fresh parsley
1 tablespoon minced shallots
1 teaspoon salt
3 turns freshly ground black pepper
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Either season the salmon with Essence. Or, season both the snapper and flour with Essence. Dredge the snapper in the seasoned flour, coating completely.
  • In one large stainless saute pan, heat 2 tablespoons of the olive oil. In another large stainless saute pan, heat the vegetable oil.
  • Add the salmon to the first saute pan, searing for 3 to 4 minutes on each side.
  • Add the snapper to the second saute pan, pan-frying for 3 to 4 minutes on each side. In a large nonstick pan, over medium heat, heat the remaining tablespoon of olive oil. Add the vegetables. Season with salt and pepper. Saute for 3 to 4 minutes.
  • To serve, spoon the 1/4 cup of sauce in the center of each plate. Spoon the vegetables in the center of the sauce. Lay the fillets on top of the vegetables. Garnish with parsley.
  • Heat a large nonreactive skillet over high heat. When the skillet is hot, add the wine, lemons, garlic, and shallots. Cook for 3 minutes, breaking up and mashing the lemons with a wire whisk. Stir in the salt, pepper, Worcestershire, and hot sauce and cook until the mixture is somewhat syrupy, for about 3 minutes. Stir in the cream and cook for 1 minute.
  • Over low heat, whisk in the butter a few pats at a time. When all of the butter has been added, remove from the heat, but continue whisking until all of the butter is incorporated into the sauce.
  • Strain the sauce, pressing all of the liquid into a bowl. Stir in the parsley. Serve immediately, or keep warm for a few minutes until ready to use.
  • Combine all ingredients thoroughly.

This is a recipe that I came up with one night after finding some red snapper in the freezer. It can also be done with catfish, flounder, perch, or pretty much any white fish. Remember that the thinner the fillet, the shorter the cook time.

1 tablespoon sweet paprika
1 tablespoon salt
1 tablespoon ground black pepper
1 tablespoon onion powder
2 teaspoons garlic powder
2 teaspoons lemon pepper
1 pinch cayenne pepper, or more to taste
¼ cup olive oil
2 tablespoons butter
4 (4 ounce) fillets red snapper, patted dry

Steps:

  • Mix paprika, salt, black pepper, onion powder, garlic powder, lemon pepper, and cayenne pepper together in a small bowl.
  • Combine olive oil and butter in a small, microwave-safe bowl; heat in microwave until butter is melted, about 1 minute. Stir to blend butter into the oil.
  • Brush some of the olive oil and butter mixture over both sides of each red snapper fillet. Sprinkle paprika mixture over both sides of each fillet.
  • Heat leftover oil and butter mixture in a skillet over medium-high heat. Fry red snapper until flesh flakes easily with a fork, 4 to 5 minutes per side.

1 1/2 pounds red snapper fillets or walleye or sea bass fillets
1 teaspoon salt
1 teaspoon finely chopped ginger root
1/4 teaspoon white pepper
1 teaspoon cornstarch
2 tablespoons salted black beans
4 green onions, (with tops)
2 hot green chilies
1 tablespoon cornstarch
1 tablespoon water
1 teaspoon sugar
3 tablespoons vegetable oil
2 tablespoons vegetable oil
2 teaspoons finely chopped garlic
1 cup chicken broth (see Soups: Chicken Broth)
1 teaspoon dry white wine
1 teaspoon roasted sesame oil

Steps:

  • Pat fish dry with paper towels. Mix salt, gingerroot, white pepper and 1 teaspoon cornstarch. Coat both sides of fish with gingerroot mixture. Cover and refrigerate 30 minutes. Place beans in bowl cover with warm water. Stir beans about 2 minutes to remove excess salt. Remove beans from water drain well.Cut 3 green onions diagonally into 1-inch pieces. Cut remaining green onion into thin slices. Remove seeds and membranes from chilies. Cut chilies into very thin slices. Mix 1 tablespoon cornstarch, the water and sugar.Heat wok until very hot reduce heat to medium. Add 3 tablespoons vegetable oil tilt wok to coat side. Add fish fry until golden brown, turning once. Reduce heat to low.Cover and cook 10 miutes, turning after 3 minutes. Remove fish from wok.Heat wok until very hot. Add 2 tablespoons vegetable oil tilt wok to coat side. Add beans, green onion pieces, chilies and garlic stir-fry 1 minute. Add broth heat to boiling. Stir in cornstarch mixture cook and stir until thickened. 3 tablespoons chopped red onion
2 tablespoons olive oil, divided
1 teaspoon red wine vinegar
1 teaspoon Dijon mustard
1 small garlic clove, minced
1/4 teaspoon salt, divided
1/8 teaspoon pepper, divided
1 to 2 drops hot pepper sauce
3 tablespoons all-purpose flour
2 red snapper or grouper fillets (8 ounces each)
1-1/2 teaspoons butter
1 tablespoon minced fresh cilantro

Steps:

  • In a large saucepan, combine the beans, onion, 1 tablespoon oil, vinegar, mustard, garlic, 1/8 teaspoon salt, dash pepper and pepper sauce. Cook, uncovered, over low heat for 10 minutes, stirring occasionally. , Meanwhile, in a shallow bowl, combine the flour and remaining salt and pepper. Dip fillets in flour mixture. , In a large skillet, heat butter and remaining oil over medium heat. Cook fillets for 5-6 minutes on each side or until fish flakes easily with a fork. 1 whole red snapper (about 2 pounds) cleaned, scaled, with head on
2 tablespoons minced Oriental black beans
1 clove garlic, minced
2 scallions, minced
1 tablespoon ginger, finely chopped
2 tablespoons peanut oil
Coarse salt and freshly ground pepper to taste
2 tablespoons chopped coriander leaves
1 lemon, cut into quarters

Steps:

  • Score the fish twice on each side vertically. Combine the Oriental black beans, garlic, scallions, ginger, peanut oil, salt and pepper. Spread the mixture over the fish and inside the cavity. Let the fish marinate for at least 30 minutes.
  • Preheat grill or broiler. Broil the fish for six to seven minutes on each side, or until done. To serve, sprinkle with coriander and garnish with lemon.

1/2 stick (1/4 cup) unsalted butter, softened
1/2 to 1 tablespoon finely chopped canned chipotle chiles in adobo plus 2 teaspoons adobo sauce (from can)
1/2 teaspoon salt
4 red snapper fillets with skin (1 1/2 lb total)
1/3 cup all-purpose flour
3 tablespoons vegetable oil
Accompaniment: lime wedges

Steps:

  • Mash together butter, chipotles to taste, adobo sauce, and salt with a fork until blended.
  • Pat fish dry and cut each fillet in half crosswise, then season with salt and pepper. Spread flour on a plate and dredge fish, knocking off excess.
  • Heat 1 1/2 tablespoons oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then panfry fish, skin sides up first, in batches, turning over once, until browned and just cooked through, 4 to 6 minutes. Transfer as cooked with a slotted spatula to plates and add more oil to skillet as needed. Top fish with dollops of chipotle butter.
