Dive into a bowl of these savoury, bouncy noodles, overflowing with savoury, charred beef mince... no soggy, greyness in sight, guaranteed! My secret trick will get you winning results, every time.

2 tbsp vegetable oil
500g (1 lb) beef mince
1 onion, sliced
2 garlic cloves, finely chopped
2 cups shredded Chinese cabbage (also known Napa or wombok cabbage)
1 cup shredded carrot
250g (9 oz) fresh Chinese egg noodles
2 tbsp oyster sauce
2 tbsp hoisin sauce
1 tsp dark sweet soy sauce
2 tsp white vinegar
¼ cup finely sliced spring onion (scallions)
sesame seeds, to serve

Steps:

  • Step 1.Heat the vegetable oil in a wok or large frying pan over high heat. Add the beef mince and spread it out in pan. Leave the beef to sear and cook for at least 5-6 minutes or until the meat juices evaporate and the beef starts to char. Now use a spatula to lift the charred beef from the pan and toss it around.
  • Step 2.Now add the onion and stir-fry for another minute. Add the garlic and stir-fry for another 20 seconds. Then add the cabbage and stir-fry for another 20 seconds. Then toss through the carrot until it's just wilted. Turn the heat off and set aside.
  • Step 3.Cook the noodles in boiling water for a minute or until just al dente. Drain and add to the pan with the beef. Turn the heat back to high and add the oyster sauce, hoisin sauce, dark sweet soy sauce and vinegar. Toss until well combined. Scatter over the spring onion and sesame seeds before serving.

4 ounces zucchini, julienne
2 ounces carrots, julienne
4 ounces squash, julienne (banana, acorn, etc.)
4 ounces shiitake mushrooms, sliced
8 ounces chow mein noodles
1 tablespoon sugar
1 pinch salt, to taste
1 pinch black pepper, to taste
3 tablespoons water
5 tablespoons cooking oil, divided
8 ounces tri-tip steak, thinly sliced
2 tablespoons oyster sauce
2 tablespoons hoisin sauce

Steps:

  • Cook the chow mein noodles according to package directions.
  • Heat 3 tablespoons of oil in a non-stick skillet and fry the noodles until they are brown and crisp. Remove to serving platter.
  • Stir-fry beef slices in remaining oil for 2 minutes.
  • Add vegetables, Oyster sauce, hoisin sauce and sugar. Stir-fry for 2 minutes.
  • Add water and stir-fry until heated through.
  • Pour over noodles and serve.

This was out of one of my old cookbooks that was put together by the employees at a company I use to work for back in the 80's...it's out of business but I still enjoy the recipe...it makes a great side dish when you can't think of something else quick and easy to prepare...

12 ounces extra wide egg noodles
1 -2 tablespoon butter
1 small onion, diced
1 garlic clove, minced
salt
pepper
1/2 green pepper, diced (optional)

Steps:

  • Cook the egg noodles according to package directions.
  • Drain and set aside.
  • Melt butter in 10 inch skillet, over medium high heat, add diced onion and minced garlic, saute lightly until the onion is tender. (if using green pepper add it here).
  • Add noodles and stir to mix in onions.
  • Salt and pepper to taste.
  • Cook on medium heat, stirring occasionally until noodles are crispy around the edges and light brown.

  • In a small bowl, mix together the honey, hoisin, soy sauce, sesame oil, salt, shaoxing wine (if using), and white pepper. Set aside. Bring a pot of water to a boil and add the noodles. Fresh noodles should be boiled for about 1 minute. For dried noodles, boil for 2-3 minutes. Rinse the noodles in cool water and drain thoroughly.
  • The next step is very similar to our Cantonese Soy Sauce Pan Fried Noodles recipe, so if you have tried that recipe, this should be a snap! Heat the wok over high heat and add a tablespoon of oil. Spread the noodles across the surface of the wok in a thin, even layer, and swirl the wok to distribute the oil. Cook over medium to medium high heat until the noodles are crisp, about 5 minutes.
  • Flip the noodles over and add another tablespoon of oil around the perimeter of the wok to let the other side crisp up. Don’t stress if you can’t turn the noodles over in one shot. The goal here is just to get the noodles to crisp evenly. You want them to be pretty dry, so that the sauce caramelizes when you add it.
  • Keep the heat at medium and add that last tablespoon of oil to the wok, along with the sauce. Toss the noodles around for another 3 minutes, until they're all coated and the sauce is caramelized. Garnish with scallions and sesame seeds.
