BRAZILIAN CHEESE BREAD (PAO DE QUEIJO)



Brazilian Cheese Bread (Pao de Queijo) image

These yummy gluten/wheat free breads are good for those with Celiac disease or gluten intolerance. These are good either served plain, or with marinara sauce. For more variety, try adding a variety of herb seasonings, such as Italian seasoning or try substituting other cheeses for the Parmesan.

½ cup olive oil or butter
⅓ cup water
⅓ cup milk or soy milk
1 teaspoon salt
2 cups tapioca flour
2 teaspoons minced garlic
⅔ cup freshly grated Parmesan cheese
2 beaten eggs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Pour olive oil, water, milk, and salt into a large saucepan, and place over high heat. When the mixture comes to a boil, remove from heat immediately, and stir in tapioca flour and garlic until smooth. Set aside to rest for 10 to 15 minutes.
  • Stir the cheese and egg into the tapioca mixture until well combined, the mixture will be chunky like cottage cheese. Drop rounded, 1/4 cup-sized balls of the mixture onto an ungreased baking sheet.
  • Bake in preheated oven until the tops are lightly browned, 15 to 20 minutes.

These delicious cheese rolls from Brazil are made with cassava (tapioca) flour, giving distinctive taste and texture. They're also gluten free.

2 cups whole milk
Salt (to taste)
1/2 cup vegetable oil
8 tablespoons butter (melted)
4 1/4 cups tapioca flour
4 eggs
2 cups grated farmer's cheese (or any firm, fresh cow's milk cheese)
Optional: 1/4 cup cheddar cheese (grated)

Steps:

  • Gather the ingredients.
  • Mix milk, salt, vegetable oil, and butter in a pot, and bring to a boil. As soon as it boils, remove from heat.
  • Stir tapioca flour into the milk and butter mixture.
  • Stir in the eggs and the cheese, and mix well.
  • Let mixture cool for 15 to 30 minutes so that it will be easier to handle. (You can chill it in the refrigerator for 15 minutes or so). Preheat oven to 350 F.
  • With floured (tapioca flour) hands, shape the dough into golf-ball-size balls and place them on a baking sheet.
  • Bake rolls in the pre heated oven for 20 to 25 minutes, until they are puffed up and golden. They will rise slowly and puff up mostly in the last 5 or 10 minutes. Serve warm.

These are very easy, very tasty Brazilian cheese rolls, much like you might find at a churrascaria.

2 cups tapioca starch
1 teaspoon salt
½ cup vegetable oil
⅓ cup water
⅓ cup milk
2 eggs
6 ounces shredded Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet
  • Place tapioca starch and salt in a large bowl.
  • Bring vegetable oil, water, and milk to a boil over medium heat until a white foam appears. Pour milk mixture over tapioca starch and stir until well mixed; allow dough to rest for 15 minutes. Mix eggs and Parmesan cheese into dough. Shape dough into 1 1/2-inch balls and place on prepared baking sheet.
  • Bake in preheated oven until rolls are browned, 15 to 20 minutes.

My husband spent some time in Brazil as an English teacher and this was one of his favorite breads! It is simply delicious and we love serving it with other traditional Brazilian foods (rice, beans, etc). These are best when they are served warm.

½ cup water
½ cup milk
¼ cup oil
½ teaspoon salt
1 ½ cups tapioca starch
1 egg
1 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
  • Bring water, milk, oil, and salt to boil in a large saucepan. Remove from heat; add tapioca starch and mix well. Let cool, 10 to 15 minutes.
  • Transfer tapioca mixture to a large bowl. Add egg and mix well to combine. Fold in Parmesan cheese and knead until dough is smooth but still sticky.
  • Scoop out 1 tablespoon of the dough and roll into a small ball; place on baking sheet. Repeat with remaining dough.
  • Bake in the preheated oven until golden brown, about 20 minutes.
