PAM'S FRIED GREEN TOMATOES
I know that everyone who makes these has their own recipe, but I wanted to document mine here. I add some extras that I like and that make them unique. Love those Fried Green Tomatoes.

Steps:
- 1. Wash and dry the tomatoes. Cut off the top 1/4 inch of the shoulders (including the stem portion) and bottom tip of the tomato and discard. Then slice into 1/4 inch slices. Put aside until needed. Line a cookie sheet or shallow baking pan with paper towels and put into oven on very low/keep warm.
- 2. Place 1/2 c flour on paper plate or in shallow dish for first coating step.
- 3. In a shallow bowl, mix the eggs, buttermilk, hot sauce and water. In another shallow container, mix the flour, cornmeal, panko, parmesan and seasonings. Set up your dipping/frying station close to the stove with plain flour first, then egg dip, then crumb coating.
- 4. In a large skillet, heat about 2 to 3 teaspoons of butter and enough oil to cover the bottom of the pan to medium or medium high. Dip several tomato slices in flour and shake off any exceess. Then dip in egg, then in crumb coating to cover. Press crumbs to surface to make them stick.
- 5. Place the dipped and coated slices in the pan and let cook until golden brown on the first side. If they get brown too quickly, lower the heat to medium and turn the slices over. Continue to cook until the tomato is slightly tender and the coating is browned. Remove from pan and place on paper towel lined baking pan in the oven to keep warm.
- 6. Repeat frying slices adding butter and oil as needed to fry each batch. Placing each batch on the pan in the oven as they are done.
- 7. Serve hot as a side dish or just by themselves.
- 8. Note: With 5 medium tomatoes, you should get approximately 4 to 5 slices per tomato or about 20-25 slices. Depending on how many each person will eat, adjust the amount to suit your needs. Also, the egg and crumb mixture should be more than enough for the amount listed. If you are frying a LOT of tomato slices, I would make 1 1/2 times or double the egg and crumb recipes.
FRIED GREEN TOMATOES

- Slice 2 green tomatoes 1/2 inch thick. Whisk 1/3 cup flour, 1/2 teaspoon kosher salt and 1/4 teaspoon each garlic powder and cayenne in a dish. Whisk 2 eggs and 1 tablespoon milk in another dish. Put 1 1/2 cups panko in a third dish. Dredge each tomato slice in the flour, then egg, then panko. Fry in 1/2 inch 350 degrees F vegetable oil, turning, until golden, 3 to 5 minutes. Serve with ranch dressing.
PAM'S FRIED GREEN TOMATO PARMESAN
We had a great crop of tomatoes this year so I was looking for things to do with green tomatoes. As I was looking at my eggplants growing and thinking of Eggplant Parmesan I thought why not Green Tomato Parmesan! - 1. Preheat oven to 350.
- 2. Slice tomatoes into 1/2 inch slices.
- 3. Spread out on paper towels and sprinkle with salt. Let sit for 5 minutes then blot them dry.
- 4. Whisk egg together with the cream or milk.
- 5. Mix the flour and corn meal together. Season lightly with salt and pepper.
- 6. Dip tomato slices in egg then flour mix. Let the egg run off as much as it will, you don't want a thick coating. Place them on a baking rack as you go. Do them all before you start frying and fry the first ones you did first.
- 7. Heat about 1/2 inch of oil in a skillet. Fry the tomatoes in batches until golden brown. Drain on paper towels.
- 8. Once all the tomatoes are browned pour off the oil. Add the garlic to the pan and saute quickly. Add the marinara and spices and heat through.
- 9. You want two layers of tomatoes, so pick a baking pan that will work with the amount of tomatoes you have. Oil the pan and add a spoonful of sauce.
- 10. Layer a single layer of tomatoes, then marinara, then half of the cheeses. Repeat. You should have marinara left over.
- 11. Bake at 350 for 30-40 minutes until cheese is melted.
- 12. While that's baking cook your pasta to serve with it. When ready to serve, toss the pasta with the left over marinara and serve along side the green tomato parmesan.
- 13. NOTE: I just eyeball how many tomatoes I want to use based on how many I want to serve. I allow one tomato per person unless they are small.
FRIED GREEN TOMATO PARM SANDWICHES

- Preheat the oven to 400 degrees F.
- Season both sides of the green tomato slices with salt and set aside; this will draw out some of the moisture.
- Toss the whole canned tomatoes with the vinegar, brown sugar, oil and a large pinch of salt. Place the whole tomatoes on a parchment-lined baking sheet. Bake until slightly caramelized and dried out a bit, about 20 minutes. Set aside.
- Set up a standard breading station with three shallow bowls, one with the flour, one with eggs and one with panko. Season the green tomato slices with black pepper. Dredge each tomato slice in the flour, shake off the excess, dip in the egg, let excess drip back into the bowl, and then coat in panko. Set aside on wire rack and repeat with the remaining slices.
- Heat 1/2 inch of oil in each of 2 large straight-sided saute pans over medium heat. Working in batches, fry a few of the tomato slices at a time, turning them once, until golden brown, 4 to 5 minutes a side. Using tongs, transfer to a paper towel-lined baking sheet. Repeat with the remaining tomato slices. Lower the oven temperature to 175 degrees F. Transfer the tomatoes to a wire rack set over a sheet pan. Place in the oven to keep warm.
- Butter the insides of the buns and toast until golden and crispy. Lay the Burrata on the bottom of the buns, then top with hot green tomatoes, 4 to 5 roasted tomatoes, a spoon of hot giardiniera and some basil. Close buns, cut each in half and serve with applause.
FRIED GREEN TOMATOES

- For the fried green tomatoes: Pour the vegetable oil into a Dutch oven or heavy-bottomed pot and attach a deep-frying thermometer. Heat the oil over medium heat to 350 degrees F. Line a baking sheet with paper towels and top with a cooling rack.
- Set up 3 low-sided dishes to make a breading station: To the first dish, add the flour, salt and black pepper and stir to combine. In the second dish, beat the buttermilk with the eggs. In the third dish, stir together the cornmeal and panko.
- Using one hand, dredge both sides of the tomato slices in the seasoned flour, shaking each piece to remove any excess. Next, using the other hand, dip the tomato slices into the egg mixture, allowing it to drip before moving onto the third dish. Using your first hand, coat the tomato slices in the breadcrumb mixture evenly on both sides.
- Working in batches, carefully place the breaded tomatoes into the hot oil. Fry until golden brown and crispy, about 30 seconds per side. Transfer to the cooling rack and sprinkle each slice generously with more salt.
- For the dipping sauce: Put the mayonnaise in a bowl, add the hot peppers and pepper juice, paprika, sugar and salt and stir to combine. Serve the fried tomatoes immediately with the dipping sauce on the side.
FRIED GREEN TOMATOES

- In a deep-fryer, preheat oil to 350 degrees F.
- Season tomatoes, on both sides, with salt and pepper. Place flour and garlic powder in a shallow dish. In another shallow dish, beat eggs with the milk. In another dish, mix bread crumbs with cayenne and paprika. Dredge tomatoes through the flour, then the eggs, and then through the bread crumbs. Add only a few pieces to the fryer at a time, so they can cook evenly, about 2 to 3 minutes. Drain on paper towels and serve with Buttermilk Dipping Sauce:
- In a small saucepan over medium heat, combine the apple cider and brown sugar. Allow to reduce until thick and syrupy. Remove from heat and allow to cool.
- In a medium bowl, add buttermilk, mayonnaise, BBQ sauce and lime juice and whisk well. Add in the scallions and the apple cider mixture. Cover and refrigerate until ready to serve with Fried Green Tomatoes.
BEST FRIED GREEN TOMATOES
You can also fry up red tomatoes with this recipe but make sure they are not over ripe or they will be mushy. Serve these tomatoes outside with a glass of iced tea one summer night and enjoy the sunset with someone you love.

- Slice tomatoes 1/2 inch thick. Discard the ends.
- Whisk eggs and milk together in a medium-size bowl. Scoop flour onto a plate. Mix cornmeal, bread crumbs and salt and pepper on another plate. Dip tomatoes into flour to coat. Then dip the tomatoes into milk and egg mixture. Dredge in breadcrumbs to completely coat.

- In a large bowl, combine the cornmeal, flour, garlic powder, and cayenne together. Pour the buttermilk into a separate bowl and season with salt and pepper. Dip the tomatoes in the buttermilk and then dredge them in the cornmeal mixture, coating both sides well.
- Place a large cast iron skillet over medium heat and coat with the oil. - Sprinkle the flour over a plate. Place polenta into a medium bowl, season and mix well. Place eggs in a small bowl and beat. Lightly coat a green tomato slice first in the flour, dusting off any excess, dip in the egg, then coat in polenta. Repeat with remaining slices.
