A simple chicken and bean soup with a little kick. This soup is great on a cold evening after a busy day. This recipe was shared with me by a friend I truly miss.

2 tablespoons olive oil
1 onion, chopped
2 teaspoons chopped garlic
4 skinless, boneless chicken breast, chopped
2 (14.5 ounce) cans great Northern beans
20 ounces chicken broth
1 (4 ounce) can chopped green chiles (such as Old El Paso®)
12 sprigs cilantro, chopped
2 teaspoons salt
½ teaspoon cayenne pepper

Steps:

  • Heat olive oil in a large pot over medium-high heat. Saute onion and garlic in hot oil until softened, about 5 minutes. Remove onion and garlic to a small bowl.
  • Stir chicken into any remaining oil in the pot; cook and stir until completely browned, 5 to 7 minutes. Return onion mixture to the pot; add beans, broth, chiles, cilantro, salt, and cayenne pepper.
  • Bring the soup to a boil, reduce heat to medium-low, and cook until the beans are very tender and the chicken cooked through, about 20 minutes.

1½ tablespoon extra virgin olive oil
1 shallot (thinly sliced)
1 garlic clove (thinly sliced or minced)
¼ teaspoon chili flakes
1 head of broccoli (450 grams- 1 pound) (cut into florets)
1 can cannellini beans (400 grams - 14 ounces) (drained and rinsed)
3½ cups (840 ml) vegetable stock (low sodium)
salt and freshly ground black pepper (to taste)
sunflower seeds
chili flakes
fresh oregano
freshly ground black pepper

Steps:

  • Heat the oil in a large pan over medium heat, and sauté the shallot until soft.
  • Add the garlic and sauté for 1 minute or until fragrant.
  • Add the broccoli, beans and vegetable stock. Cover and simmer until the broccoli are tender. This will take about 5 minutes. Season with salt and pepper.
  • Using an immersion blender, a blender, or a food processor, blend the soup until completely smooth.
  • Serve this creamy broccoli white bean soup in bowls garnished with sunflower seeds, chili flakes, fresh oregano, and freshly ground black pepper.Enjoy!

This delicious soup was "tweaked" by our friend Dick and delivered to us one night when I was recovering from a hospital stay along with some cornbread and a salad.

3 boneless skinless chicken breasts
1 medium onion, diced
2 teaspoons garlic, minced
2 (15 1/2 ounce) cans great northern beans, with liquid
1 (15 1/2 ounce) can black beans, with liquid
1 (4 ounce) can mild green chilies, without liquid (or jalapeno)
16 ounces frozen broccoli
2 tablespoons garlic oil
1 ounce butter
1/2 teaspoon cajun seasoning (or creole)
1 teaspoon salt
1 teaspoon oregano
1 teaspoon dried thyme
1/2 teaspoon black pepper
1 teaspoon basil
1 tablespoon Worcestershire sauce
12 ounces chicken broth
1 cup sour cream
1/2 cup fat-free half-and-half
1/2 cup Chardonnay wine (or other dry white wine)

Steps:

  • Season the chicken with Cajun seasoning.
  • Put oil and butter in a large skillet over medium heat.
  • Add the chicken and sauté 7 minutes per side.
  • Remove the chicken and cut into 1-inch cubes.
  • To the pan, add the diced onion and chopped garlic.
  • Sauté them until the onion is translucent and not browned.
  • Place the chicken in a large pot.
  • Add the white and black beans, chili, onions, garlic, seasoning, the chicken broth, Worcestershire sauce, and wine.
  • Stir well.
  • Cover and cook for 15 minutes (over medium heat) stirring occasionally.
  • Add the broccoli.
  • Bring back to a boil; then reduce heat and simmer 7-9 minutes, or until broccoli is tender crisp.
  • Remove from heat, stir in the sour cream and half and half.
  • Good with corn bread.

1 yellow onion (finely chopped)
3 celery (stalks, sliced)
3 carrots (peeled, quartered and sliced)
1 Can garlic & herb tomatoes (14 oz, do not drain)
4 cups chicken broth
4 cups chicken (cooked, shredded)
1 Can red kidney beans (14 oz)
1 Can white beans (any variety. 14 oz)
salt and pepper to taste
2 zucchini (quartered and sliced)
2 tbsp parsley (chopped, optional)

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the onion, celery and carrots and season with salt and pepper to taste. Cook, stirring occasionally, until vegetables are just tender, 5-6 minutes.
  • Add the tomatoes and chicken broth to the pot, and bring to a simmer.
  • Stir in the chicken, beans, and zucchini and cook for 5-7 minutes more, until zucchini is tender.
  • Add more salt and pepper as desired.
  • Sprinkle with chopped parsley and serve.

Any low sodium white bean will work in this recipe.....For each can of low sodium broth, I substitute 2 cups water, 1 tablespoon VegiZest (from drfuhrman.com) and 1/8 teaspoon salt (optional).

4 cups low sodium vegetable broth
1 lb broccoli, chopped

Steps:

  • Place all ingredients in large saucepan (3 quarts or more).

6 boneless skinless chicken thighs
1 package (20 ounces) frozen corn
2 cans (15 ounces each) cannellini beans, rinsed and drained
2 cans (15 ounces each) black beans, rinsed and drained
2 cans (10 ounces each) diced tomatoes and green chiles
1 can (4 ounces) chopped green chiles
1 cup reduced-sodium chicken broth
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon onion powder
1 teaspoon minced garlic
1 envelope (1 ounce) ranch salad dressing mix
12 ounces cream cheese
2 cups shredded cheddar cheese

Steps:

  • Select saute or browning setting on a 6-qt. electric pressure cooker; adjust for medium heat. Cook bacon until crisp, 5-6 minutes; remove bacon and reserve. Brown chicken in bacon drippings in batches until lightly browned, 5-6 minutes. Return bacon to pan; top with corn and next 11 ingredients in the order listed. , Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 15 minutes. 1.5 lb chicken breasts (, thinly sliced)
1 onion (, chopped)

15 oz pinto beans (, undrained, from the can)
15 oz chickpeas ((garbanzo beans), from the can)

Steps:

  • Heat the oil in a large soup pot over medium heat. Add the sliced chicken breasts, chopped onion, minced garlic, 1/2 teaspoon cumin and salt to taste, and saute on medium heat for about 5 minutes, constantly stirring, until onion is soft and meat is no longer pink.
  • Cut up the cooked chicken into even thinner slices so that it looks like it's shredded.
  • Add chicken broth, green chili peppers, remaining cumin (1/2 teaspoon), 1 tablespoon chili powder, pinto beans, garbanzo beans, corn, and refried pinto beans.
  • Stir everything well, making sure refried pinto beans are evenly incorporated in the chili, making it thick.
  • If you don't have a can of refried beans, use an extra 1 can (15 oz) of pinto beans (or any white bean), pureed. The idea of adding refried beans or pureed beans is to thicken the chili. Add more chili powder if needed.
  • Bring to boil, make sure to stir all ingredients well together to combine flavors and spices. Reduce to simmer and cook for 15 minutes on simmer, constantly stirring, until the chili thickens.
  • Serve in soup bowls, garnished with shredded Cheddar or Mexican cheese, sour creams, and chopped green onion.

3 c cooked, cubed chicken
1 medium chopped white onion
1 can(s) 4.25 oz can chopped green chilies
4 c chicken broth
3 can(s) 15 oz canned great northern beans, drained and rinsed
1 Tbsp dried oregano
1 Tbsp cumin
1 Tbsp red pepper flakes
1+ c heavy whipping cream
2 Tbsp olive oil for saute
1-2 pinch salt and pepper to taste

Steps:

  • 1. Prep: Finally chop 1 medium white onion and cut cooked chicken into bite size cubes (a prepared rotiseri chicken works great as well). Open, drain and rinse the canned beans.
  • 2. In a dutch oven or deep pot over medium-high add the olive oil and saute the onion, chilies, oregano, cumin and red pepper flakes 5 minutes until softened and incorporated. Reduce heat and add the broth, beans, cream and heavy whipping cream. Simmer for 20 minutes and serve hot with crusty bread.
