1.5 cups basmati rice (- 300 grams, rinsed & soaked for 30 minutes)
water (- as required for soaking)
½ to ¾ cup chopped cauliflower florets
½ to ¾ cup chopped potatoes
¼ cup chopped carrots
⅓ cup green peas (- fresh or frozen)
¼ cup chopped green peas ((french beans))
¼ cup chopped green bell pepper ((capsicum) - optional)
¼ cup sliced baby corn (- optional)
3 tablespoons Ghee (or oil)
1 cup thinly sliced onions (or 1 large onion, sliced)
½ cup chopped tomatoes (or 1 medium sized tomato, chopped)
1 to 1.5 inches ginger (- crushed to a paste in a mortar-pestle)
4 to 5 small to medium garlic cloves
1 to 2 green chillies ((chili pepper))
3 tablespoons chopped coriander leaves ((cilantro))
2 tablespoons chopped mint leaves (- optional)
¼ teaspoon lemon juice (- optional)
2.5 to 3 cups water (or veg stock * check notes below for details. I added 3 cups of water)
salt as required
1 teaspoon cumin seeds (or 1 teaspoon caraway seeds (shah jeera))
5 to 6 whole black pepper (- optional)
1 tej patta ((indian bay leaf))
4 cloves
3 to 4 green cardamoms
1 black cardamom (- optional)
1 small piece of mace (- optional)
1 small star anise (- optional)
1 inch cinnamon
1 small piece of stone flower ((dagad phool or patthar ke phool) - optional)
1 to 2 tablespoons chopped coriander leaves or mint leaves

Steps:

  • Rinse rice till the water runs clear of starch and become transparent while rinsing.
  • Soak the rice in enough water for 30 minutes. Drain all the water and keep the soaked rice aside.
  • Rinse, peel and chop the vegetables.
  • Crush chopped ginger, garlic and green chillies to a paste in a mortar-pestle or grind them in a small mixer or grinder with a bit of water.
  • In a deep thick bottomed pot or pan, heat ghee or oil and fry all the whole spices mentioned above, till the oil becomes fragrant and the spices splutter.
  • Add the onions and saute them till golden. Saute the onions on a low to medium-low flame and stir often for uniform browning.
  • Add the ginger-garlic-green chili paste and saute for some seconds till their raw aroma goes away.
  • Add the tomatoes and saute for 2 to 3 minutes on a low to medium-low flame.
  • Add all the chopped veggies and saute again for 1 to 2 minutes on a low to medium-low flame.
  • Add rice and saute gently for 1 to 2 minutes on a low or medium-low flame, so that the rice gets well coated with the oil.
  • Add water and lemon juice. Mix and stir.
  • Season with salt and stir again.
  • Cover tightly and let the rice cook on a low flame, till the water is absorbed and the rice is well cooked.
  • Check in between a few times to check if the water is enough. Depending on the quality of rice, you may need to add less or more water. With a fork too, you can gently stir the rice without breaking the rice grains.
  • Once the rice grains are cooked, fluff and let the rice stand for 5 minutes.
  • Serve pulao hot with some side salad, sliced onion & lemon wedges or raita. You can also garnish it with chopped coriander or mint leaves or fried cashews or fried onions.

3 tablespoons brown sugar
1 pound beef for stew, cut in 1 inch pieces
1 ½ cups water
1 ½ cups uncooked brown rice
1 cup coconut milk
2 cups fresh pigeon peas
1 cup chopped carrot
3 tablespoons coarsely chopped fresh parsley

Steps:

  • Cook sugar in a large saucepan over medium heat until it begins to caramelize. Stir in the beef, and cook until well browned. Bring the water, coconut milk, rice, pigeon peas, and carrot to a simmer; cover and cook until rice is done, about 25 minutes. Stir in parsley to garnish.

45ml (3 tbsp) vegetable oil
6 green cardamom pods, crushed
1 cinnamon stick, approximately 10cm (4in) long
1 onion, finely chopped
1 garlic clove, crushed
370g (2 cups) basmati rice
2g (1 tsp) ground cumin
2g (1 tsp) ground turmeric
2 whole cloves
2 bay leaves
750ml (3 cups) water

Steps:

  • Heat the oil in a large saucepan and gently fry the cardamom and cinnamon until the spices' aromas are released, which should take about 5 minutes.
  • Add the onion and gently fry for around 5 minutes, or until it has softened and has become translucent.
  • Add the garlic and stir fry for another 2 minutes.
  • Tip in the rice, cumin, turmeric, cloves and bay leaves.
  • Stir vigorously then pour in the water.
  • Turn up the heat, give it another stir then wait for a slow simmering point to be reached.
  • Once it slowly simmers, cover the saucepan with a tight-fitting lid and cook for about 15 minutes or until the rice is cooked.
  • Fluff up the rice with a fork and serve immediately with your favourite curry. Enjoy!

OSH / PLOV - UZBEK / CENTRAL-ASIAN RICE

I first had osh in Uzbekistan, then later in various forms called plov in Kazakhstan. It's a belly-warming mixture of rice with spices, lamb, onion, and carrots lovingly fried, stirred. The Uzbek osh is my favourite with it's stronger spices.

2 cups rice
600 g lamb shoulder
6 tablespoons vegetable oil
3 medium onions
4 carrots
4 garlic cloves
1 teaspoon crushed red pepper flakes
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon pepper
1 teaspoon salt

Steps:

  • Wash the rice. Allow to soak in salted water for 30 minute You can use Thai or basmati rice.
  • Cut the lamb shoulder into cubes. It should have some fat. Bones are optional.
  • Slice the onions thinly and cut the carrots into strips. You should approximately equal amounts of carrots, onions, and lamb.
  • Heat a large cast-iron or metal wok with the oil. Don't use olive oil. Sunflower oil works well. Animal fat tastes richer but is even worse for you and too heavy for many taste buds. While you can get away with any kind of pot, it does taste better if you have an appropriate seasoned instrument.
  • Fry the onions until golden brown.
  • Add chopped garlic and lightly brown. You can alternatively put the whole cloves into the rice when you cook the rice.
  • Add lamb and fry until cubes are lightly browned.
  • Add carrots, salt, pepper, all spices (adjust to your taste), and 2 cups of water. Turn down the fire, mix well, and cover for 5 min to allow carrots to soften.
  • This completes the first step called "zirvak". You are now ready to cook the rice in the second step. Drain your rice which should have been soaking for 30 minute.
  • Push the ingredients to the outer parts of your cooking wok/pot creating a large hole in the centre which will be filled with liquid.
  • Carefully add your rice to the centre of the pot. Do not mix it with the rest of the ingredients. Try to fit most of it in the centre "hole".
  • Add another 1.5 cups of water, cover the pot and allow to simmer until the rice is cooked and water has been dried up. This will take approximately 30 minute.
  • Stir the entire mixture well and serve on a hearty plate or bowl. Top with spring onions. It goes well with a side-serving of salad, tomatoes, and bread. Naan or other type of flat bread would be best.

1 1/2 tablespoon vegetable oil
3 carrots, julienned
1/2 teaspoon white sugar
1/4 cup raisins
2 cups uncooked basmati rice
1/4 cup vegetable oil
1/2 tablespoon white sugar
1/2 cup water
1/2 pinch saffron
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon black pepper
1/2 teaspoon ground cumin

Steps:

  • - Preheat oven to 325F. Place rice in a large bowl, rinse, and then soak in cold water for 30 minutes. - In a large skillet, heat oil over medium heat. Add carrots and 1/2 teaspoon sugar; cook, stirring frequently, until tender. Stir in raisins, and continue cooking until the raisins are soft and plump. Remove from heat, and set aside to cool. - Bring a large pot of water to a boil. Strain rice, and then add to boiling water. Cook for about 5 minutes, then strain with a mesh strainer. - In a small saucepan, heat 1/2 cup water and 1/2 tablespoon sugar. Add 1/4 cup oil and bring to a boil. - Return the rice to pan. Stir in carrots and raisins, and then mix in oil and sugar syrup. Season with saffron, cinnamon, cardamom, black pepper, and cumin. Poke some holes with a spoon all over the rice. Cover, and cook rice has dried and sauteed a little bit. - Bake in preheated oven for 20 minutes. Remove from oven, and toss rice with a fork.

SAFFRON STEAMED BASMATI RICE (PERSIAN POLOW)

2 1/2 cups long grain basmati rice
4 tablespoons grapeseed oil, divided
2 tablespoons salt, divided
1/2 teaspoon saffron thread

Steps:

  • Dissolve the saffron threads in 4 tablespoons hot water and set aside to soak.
  • Wash the basmati rice twice and soak in salted warm water for 2-3 hours.
  • Drain the water.
  • Pour enough water into a large pan until pan is half-full. Bring to the boil.
  • Add the drained rice and 1 tablespoon salt. Continue boiling until rice is slightly softened, about 10 minutes.
  • Drain rice and wash it slightly with warm water.
  • Pour 3 tablespoons of grapeseed oil into the pan and add the rice.
  • Mix the remaining grapeseed oil with the saffron water and pour *half* this mixture over the rice.
  • Cover pan and cook over medium heat for about 10 minutes. A golden crust (tadiq) will form on the bottom.
  • Sprinkle the remaining saffron water and oil mixture over the rice.
  • Reduce heat to low and cover the top of the pan with two layers of paper towels ( I used a double layer of muslin cloth).
  • Cover pan firmly with the cover and cook 45 minutes WITHOUT removing lid.
  • Remove pot from heat and let rest 5 minutes.
  • Turn the rice out on a large serving platter with the golden crust on top.
