PALEO SMOKY HAM CHOWDER

I was trying to use up a ham shank and honor my New Year's resolution to eat low-carb. The result is a yummy and hearty winter soup, chock-full of rich, smoky flavor and chunks of veggies and ham. You won't even miss the carbs!

1 tablespoon olive oil
¾ cup diced yellow onion
½ cup chopped celery
3 cloves garlic, minced
4 cups chicken broth
1 (1 1/2) pound meaty ham shank
3 cups diced sweet potato, or more to taste, divided
1 head cauliflower, chopped, divided
1 bay leaf
1 tablespoon liquid smoke
1 teaspoon salt
½ teaspoon ground black pepper
¼ cup chopped fresh parsley, or to taste

Steps:

  • Heat olive oil over medium heat in a large soup pot. Add onion and celery; saute until onion begins to soften, 3 to 4 minutes. Add garlic and saute until fragrant, about 1 minute. Transfer onion mixture to a bowl.
  • Add broth and ham shank to the same pot and bring to a boil. Reduce heat to low, cover, and simmer until ham is tender and falling off the bone, about 1 hour. Transfer ham and bone to a plate. Chop ham when cool enough to handle. Discard bone.
  • Add onion mixture to the broth, along with 1/2 of the sweet potato, 1/2 of the cauliflower, and bay leaf. Bring to a boil, then reduce heat to medium and cook until vegetables are tender, about 10 minutes. Remove from heat, discard bay leaf, and use emulsion blender to blend until smooth.
  • Add remaining potatoes and cauliflower and bring to a simmer. Cook until vegetables are tender, 10 to 15 minutes. Add ham, liquid smoke, salt, and pepper. Ladle into bowls and garnish with parsley.

Couldn't find an after Christmas ham chowder recipe that started with slow cooking the ham bone leftovers. Ended up taking ideas from multiple recipes to create something that worked out pretty well.

1 meaty ham bone, fat trimmed
1 (32 fluid ounce) container chicken stock
1 onion, chopped
2 tablespoons chopped garlic
6 red potatoes, cubed
4 large carrots, chopped
1 tablespoon chopped fresh parsley
2 teaspoons ground cumin
1 cup frozen corn
1 cup milk
salt and ground black pepper to taste

Steps:

  • Place ham bone in a slow cooker; top with chicken stock, onion, and garlic.
  • Cook on Low for 6 to 8 hours.
  • Remove ham bone from slow cooker; pull meat of bone and shred. Return meat to slow cooker and discard ham bone. Add potatoes, carrots, parsley, and cumin to soup.
  • Cook on High until potatoes are tender, about 45 minutes. Add frozen corn and stir.
  • Remove 1 cup soup and pour into a blender. Add milk to blender. Cover and hold lid down; pulse a few times before leaving on to blend. Return blended soup to slow cooker and stir. Season with salt and pepper.

1 fully cooked boneless ham steak (1-1/2 pounds), cubed
2 large baking potatoes, peeled and cubed
2 cups 2% milk
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (14-3/4 ounces) cream-style corn
1 medium onion, finely chopped
1-1/2 cups shredded smoked cheddar cheese

Steps:

  • In a Dutch oven, cook and stir ham over medium-high heat until browned. Add potatoes, milk, corn and onion. Bring to a boil. Reduce heat; simmer, uncovered, 20-25 minutes or until potatoes are tender., Remove from heat; stir in cheese until melted.

1/2 cup chopped sweet red pepper
2 tablespoons butter
1/4 cup all-purpose flour
1 envelope ranch salad dressing mix
4-1/4 cups whole milk
2 cups frozen cubed hash brown potatoes, thawed
2 cups frozen corn, thawed
2 cups cubed fully cooked ham
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/2 cup shredded smoked Gouda cheese

Steps:

  • In a large saucepan, saute the onion, celery and red pepper in butter until crisp-tender. Stir in flour and dressing mix until blended; gradually stir in milk. Bring to a boil; cook and stir until thickened, about 2 minutes. , Add the potatoes, corn, ham and thyme. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes to allow flavors to blend. Stir in cheese until blended.

4 ears corn, kernels cut off and cobs reserved
1 tablespoon vegetable oil
1 onion, cut into 1/4-inch dice
1 one half lb. piece ham, cut into 1/4-inch dice (rind removed and reserved)
2 cups heavy cream
1 lb baking potato, peeled and cut into 1/2-inch dice
kosher salt
fresh ground black pepper

Steps:

  • Using back of a kinife and working over a medium bowl, scrape the corn cobs to release any pulp and juices; reserve the cobs.
  • In an medium soup pot, heat the oil. Add the onion and cook over moderate heat until softened, about 6 minutes. Add 3 cups of water, the ham rind and the corn cobs, pulp and juices and bring to a simmer. Cook over moderately low heat for 5 minutes; discard the cobs and ham rind. Add the cream and potatoes, bring to a simmer and cook until the potatoes are almost tender, about 5 minutes. Add the corn kernels and ham and simmer untiil the corn and potatoes are tender, about 5 minutes longer. Season with salt and pepper, ladle into bowls and serve.
  • Can be refrigerated over night.
