- Preheat your oven to 375 F. Place the shredded potatoes at the bottom of a pie dish creating a crust, and season to taste. Cook in the oven 15 to 20 minutes. Melt some cooking fat in a skillet over medium-high heat. Add the onion and garlic, and cook until soft. Add the sausages and zucchini to the onion and cook 4 to 5 minutes. Stir in the spinach for the last minute, and season to taste. In a bowl, whisk together the eggs, milk, chives, basil, and season with salt and pepper to taste. Place the sausage and vegetable mixture on top of the sweet potatoes, then pour the egg mixture over those. Place in the oven and bake 30 to 35 minutes. Let the quiche rest for 4 to 5 minutes before slicing.

- Sauté chicken sausage until browned, set aside.
- Lightly sauté zucchini, mushrooms, spinach, and onion, set aside.
- Grease a 9x12 glass dish and pour in carton of egg whites. Beat 6 eggs and mix with salt, pepper, garlic and onion powder, rosemary, and pour into dish.
- Toss in sausage, tomatoes, and sauteed veggies.
- Bake at 400 degrees for 45 minutes.
- This can also be done in muffin cups if you would like it more portable.

- Preheat your oven to 425 degrees F. Peel your sweet potato and slice it into very thin rounds - these rounds will form the crust.
- Coat your hands in coconut oil and grease the potato slices, then arrange in a 9" pie dish, overlapping, along the bottom and up the sides. The smaller rounds near the ends of the potato work well for the side crust, or cut larger slices in half. Sprinkle lightly with sea salt.
- Place “crust” in the preheated oven for 20-25 mins or until cooked through, then remove from oven and lower the heat to 400 degrees.
