Time 1h

Yield 1 cup, 6 serving(s)

Number Of Ingredients 14

1/2 lb andouille sausage
1 small onion, chopped
2 green bell peppers, chopped
2 garlic cloves, chopped
1 teaspoon paprika
1 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon thyme
1/8 teaspoon cayenne pepper
1 (28 ounce) can diced tomatoes
1 cup chicken broth
1 head cauliflower (I use Trader Joes riced cauliflower)
1 lb shrimp, shells and tails off
4 scallions, finely chopped

Steps:

  • Cook sausage in a large, deep pot.
  • As it browns, add a little more oil to the pan and then saute onion and bell peppers until onion is soft.
  • Add garlic and spices.
  • Add tomatoes and chicken broth.
  • Bring to a simmer with the lid on for 10 minutes.
  • While it simmers, cut the cauliflower into small florets and grate in a food processor so the texture resembles rice.
  • Add the cauliflower to the pot and simmer another 10 minutes.
  • Add the shrimp and simmer until cooked through and pink, about 10 minutes.
  • Garnish with scallions.
