PALEO-FRIENDLY AND GLUTEN-FREE GLAZED MAPLE & BACON DONUTS
You can easily bake your own maple-flavored glazed donuts with bacon inside and sprinkled on top -- this one's amazing!

Steps:
- Preheat oven to 350º F
- Grease donut pan
- In a medium bowl mix dry ingredients. almond flour, coconut flour, baking soda, cinnamon, and salt
- In another bowl, mix all the wet ingredients: eggs, maple syrup, coconut oil and vanilla
- Pour the wet ingredients into the bowl with the dry ingredients, and stir thoroughly to combine
- Gently stir in bacon bits
- Get a large Ziplock bag and pour the batter into it. Release the air and seal the bag.
- Cut off a corner and pipe the donut batter into the donut pan. Fill each mold about 2/3 full
- Tap the pan on the counter to make sure the top is even
- Bake for about 20 min or until a toothpick comes out clean (oven cooking times vary)
- Allow to cool, then remove donuts and place on wire rack until you're ready to glaze
- In a bullet or a good blender combine all the glaze ingredients
- It should be the consistency of a thick glaze - like you'd normally find on a donut
- Make sure the donuts have completely cooled before glazing
- Dip one side of the donuts in the glaze and return to the wire rack.
- Sprinkle with bacon crumbles
- Makes somewhere between 6-8 glazed maple-bacon donuts

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving bacon drippings in the skillet. Chop bacon.
- Whisk cassava flour, baking powder, and salt together in a bowl.
- Beat butter and coconut sugar together in a bowl using an electric mixer until fluffy. Add 3/4 cup coconut milk, 1/4 cup maple syrup, and egg; beat until well combined. Mix flour mixture into butter mixture until batter is smooth. Add bacon drippings, 1 tablespoon at a time, if batter is too thick. Mix chopped bacon into batter.
- Preheat donut maker according to manufacturer's instructions.
- Transfer batter to a clear plastic bag and snip off a corner; fill donut maker with batter according to manufacturer's instructions. Cook for 4 to 5 minutes. Transfer donuts to a wire rack to cool, about 15 minutes.
- Mix almond butter, 3 tablespoons maple syrup, and 2 tablespoons coconut milk together in a bowl until very smooth. Dip cooled donuts into almond butter topping.

- Lay out bacon on a baking sheet. Stir together brown sugar and maple syrup and top bacon strips with sugar mixture. Place the bacon in a cold oven and heat oven to 350°F. Let bake for 20 minutes until bacon is very crispy. Remove bacon and chop roughly.
- Working with one biscuit at a time, roll it out into a flat round and sprinkle a small handful of crispy bacon on top, being sure to reserve some bacon bits to garnish the iced donuts at the end.
- Fold the biscuit over and reshape it into a round. Use a small cutter to cut a round hole out of the center of the donut. Repeat, shaping all the donuts. If the dough gets really sticky, flour the donuts lightly.
- Preheat the vegetable oil to 325°F in a cast iron skillet or other large pan. Once oil is hot, add donuts in batches and fry for 2-3 minutes per side until they are golden brown. Remove donuts and let them drain on a paper towel.
