- Prepare rice as label directs.
- Meanwhile, sprinkle chicken with jerk seasoning. In 12-inch skillet over medium-high heat, in hot oil, cook chicken pieces until browned on all sides, about 5 minutes. With slotted spoon, remove chicken to plate.
- In drippings remaining in skillet over medium heat, cook onion, about 5 minutes. Add chicken pieces, pineapple chunks, black beans, green chilies and jerk marinade. Over high heat, heat to boiling; reduce heat to low. Cover and simmer 8 to 10 minutes until chicken is tender, stirring occasionally.
- Serve jerk chicken mixture over rice.

- Heat oven to 180C/160C fan/gas 4. Cut the thighs in half lengthways down one side of the bone. Put them in a large roasting tin. Mix the jerk paste with the lime zest and juice and pour over the chicken. Tuck the pineapple pieces, sweet potatoes and peppers in and around the chicken. Season, cover with foil and roast for 30 mins.
- Increase the oven temperature to 220C/200C fan/gas 7, remove the foil, baste the chicken and stir the veg in the cooking juices. Return to the oven for 20-25 mins.
- Meanwhile, cook the rice according to pack instructions, then stir in the beans, coconut oil, thyme leaves and seasoning. Cook for 2-3 mins to warm the beans through and melt the coconut oil. Serve 3 pieces of chicken per person with the vegetables, and the lettuce and rice on the side.

- In a bowl or zip-top bag, combine the chicken with about 7/8 of the jerk seasoning and toss/shake to combine. Set aside to let the chicken marinate and come to room temperature. Meanwhile, we'll make the veg... In a large saute pan, heat a few tablespoons of fat over medium heat. Add in the onion and pineapple, plus the last little bit of the jerk seasoning you spared from the chicken. Occasionally stirring things around until the onions look soft and pineapple has started to develop a caramalized color. Add in the bell pepper strips and let them cook for a bit; not too long, as they'll get mushy. Once all the roughage is cooked, remove from the pan and place in your serving dish. Add a few more tablespoons of fat to the pan, and crank up the heat to medium-high. Plop in the chicken. Don't touch it or move it around, we want to develop a nice brown crust on the outside of the chicken. Once that's happened, then, you're allowed to flip it over to cook on the other side. Add the chicken to the onions, peppers and pineapple. Stir to combine.

- Mix together the jerk seasoning: garlic powder, onion powder, coconut sugar, paprika, cumin, thyme, allspice, cinnamon, cayenne pepper, sea salt, and black pepper. Generously rub on both sides of the chicken.
- Heat a cast iron skillet to medium high heat for three minutes. Once hot, add the oil and warm for 30 seconds.
- Place the chicken in the hot skillet. Sear for 2 minutes, then flip. If chicken is "stuck" wait another 30 seconds, and try again (it might not be ready to flip!). Now cover with a lid and reduce heat to medium low. Cook for 10-12 minutes, or until internal temperature reaches 165F. Remove chicken from the skillet and let rest on the cutting board for at least 5 minutes until slicing.
- Meanwhile, make the salsa. Toss together the pineapple, tomatoes, onion, cilantro, lime juice, jalapeno pepper (if using), and sea salt. Spoon on top of the chicken and serve!

- Place all of the ingredients, up to the chicken, in a small food processor (mine is 3 cups) and process until smooth and well combined, scraping the sides down as necessary.
- Add the mixture into a large bowl, along with the chicken cubes. Toss until the chicken is evenly coated, cover and refrigerate for at least 4 hours to overnight.
- Divide the chicken and pineapple chunks between 4 skewers (if you're using bamboo skewers, remember to soak them in water first!) and grill until charred and no longer pink inside, about 10 minutes, turning the skewers occasionally.
